COCONUT TARTS

Coconut Tarts image

My Grandma used to send these to the soldiers in the Second World War. I've modified their sugar content as they used to be quite sweet.

COCONUT TARRAGON CUSTARD WITH GRILLED PINEAPPLE

Coconut Tarragon Custard with Grilled Pineapple image

This combines tropical flavors of pineapple, coconut, and lime in a simple, cooling custard. The tarragon gives a twist of licorice flavor. Serving it with the pineapple hot off the grill gives a great temperature contrast between the hot fruit and the cold custard.

Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 13

3 1/4 cups milk
1/2 vanilla bean, split
3/4 cup coconut milk
2 tablespoons packed tarragon leaves
12 yolks
1 1/3 cups sugar
1/2 cup cornstarch
1/2 cup sweetened, shredded coconut
2 tablespoons butter
1 cup heavy cream, whipped
1/2 fresh pineapple, peeled and cut into spears
Confectioners' sugar, as needed
1 lime, cut in wedges

Steps:

  • In a stainless steel saucepan, heat the milk with the vanilla bean and tarragon to a simmer. Let sit 5 minutes to infuse.
  • In a separate bowl whisk together the egg yolks and sugar until light and fluffy. Whisk in the cornstarch; then drizzle in the milk mixture while whisking. Pass through a fine-meshed sieve back into the pot, to remove the tarragon and vanilla bean. Bring to a boil, whisking constantly. Remove from the heat, stir in the coconut and butter to melt it. Place in a container over an ice bath and fold it to cool.
  • Once it's cold, fold in the whipped cream and spoon into dessert cups or stemmed glassware and chill.
  • The custard keeps for up to 3 days, chilled and covered.
  • Preheat a grill or indoor grill pan. Sprinkle the pineapple with powdered sugar and grill, turning once, until well marked. Cool slightly.
  • To serve, place 1 grilled pineapple spear in the glass, sticking out, and a lime wedge to squeeze over the whole dessert.

COCONUT FRENCH TOAST WITH SPICED ROASTED PINEAPPLE

Coconut French toast with spiced roasted pineapple image

Enjoy a new take on French toast for brunch. The custard is made using coconut milk and the dish is topped with a delicious spiced roasted pineapple

Provided by Alice Johnston

Time 50m

Number Of Ingredients 10

2 eggs
150ml coconut milk
½ tsp vanilla extract
2 thick slices brioche
knob of butter (about 20g)
2 tbsp desiccated coconut
plain or coconut yogurt, to serve
½ small pineapple
1½ tbsp maple syrup
pinch of ground allspice

Steps:

  • Whisk the eggs, coconut milk and vanilla together in a wide, shallow bowl. Dunk the brioche slices into the mixture, letting each sit in the bowl for 1-2 mins on each side to soak up the liquid. The mixture should be completely absorbed by the brioche before cooking.
  • Heat the oven to 200C/180C fan/gas 6. To prepare the pineapple, cut away the skin, leaves and any eyes, then slice the flesh into long, chunky pieces (you'll need about three per person). Cut out the tough core and discard. Place the pineapple pieces in a small baking dish, drizzle over the maple syrup and sprinkle with allspice. Roast for 15 mins, turning halfway through and brushing with the sticky syrup in the dish.
  • Meanwhile, melt the butter in a frying pan over a low-medium heat until foaming. Scatter the desiccated coconut over a plate, and dip in each side of the soaked brioche slices to coat. (The bread will be very delicate, so do this carefully.) Cook the brioche slices for 3-4 mins on each side until golden and cooked through. Divide between two plates, then top each with a dollop of yogurt, three of the roasted pineapple pieces, then drizzle over any juices from the roasting tin.

  • In a large bowl, whisk the flour with the salt. Using a pastry cutter or two knives, cut in the butter until it resembles coarse meal. Sprinkle with the ice water and stir lightly to form a dough. Wrap the dough in plastic and refrigerate for about 1 hour, until thoroughly chilled.
  • In a medium saucepan, whisk the egg yolks with the flour and vanilla seeds until smooth. Gradually whisk in the milk. Cook over moderate heat, whisking constantly, until thickened, about 5 minutes. Scrape the custard into a medium bowl. Press a piece of plastic wrap directly onto the surface of the custard and let cool.
  • Transfer the dough to a lightly floured work surface and roll it out to a 15-inch round, about 1/8 inch thick. Transfer the dough to a 12-inch fluted tart pan with a removable bottom, gently pressing it into the bottom and up the sides. Cut off any excess dough. Freeze the tart shell for about 20 minutes, until firm.
  • Preheat the oven to 350°. Line the tart shell with foil and fill it with dried beans or pie weights. Bake the tart shell for about 20 minutes, until golden. Remove the foil and beans and bake for about 20 minutes longer, until the shell is golden brown and crisp. Transfer the tart shell to a rack and let cool completely.

  • In a stand mixer fitted with a paddle attachment, combine the sugar, flour, and salt and mix. Add the butter to the dry ingredients and mix on medium speed until crumbly. With the mixer on, add the egg yolks in one at a time, and then add in the water. Mix the dough until it is just combined. Turn the dough out onto a clean, lightly floured work surface. Pat the dough into a round, wrap in plastic wrap, and refrigerate for 30 minutes to an hour.
  • Combine the pineapple, sugar, vanilla extract, lemon juice, and water in a medium saucepan over low heat. Cook over low until the pineapple becomes translucent and the water has evaporated. Remove the pan from the heat. Spread the pineapple compote onto a sheet pan lined with plastic wrap to stop the cooking process.
  • Grease an 8-in tart ring with butter, then roll out the tart dough and place into ring. Cut off excess dough from the top of the ring. Cover tart parchment paper and fill with baking beans (or another item to weigh it down). Blind bake the tart dough for 5-10 minutes, or until fully cooked and light golden brown. Remove from oven and let cool.
