1 cup butter, softened
1 cup confectioners' sugar
1/2 teaspoon salt
2 teaspoons maraschino cherry juice
1/2 teaspoon almond extract
6 drops red food coloring, optional
2-1/4 cups all-purpose flour
1/2 cup chopped maraschino cherries
54 milk chocolate kisses, unwrapped

Steps:

Preheat oven to 350°. In a large bowl, beat butter, confectioners' sugar and salt until blended. Beat in cherry juice, extract and, if desired, food coloring. Gradually beat in flour. Stir in cherries., Shape dough into 1-in. balls. Place 1 in. apart on greased baking sheets. , Bake 8-10 minutes or until bottoms are light brown. Immediately press a chocolate kiss into center of each cookie (cookie will crack around edges). Cool on pans 2 minutes. Remove to wire racks to cool.

1 cup butter-flavored shortening
½ cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups rolled oats
1 cup shredded coconut
¾ cup drained, dried, and chopped maraschino cherries
½ cup semisweet chocolate chips

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
Beat shortening, white sugar, and brown sugar together in a bowl with an electric mixer until creamy and fluffy. Add eggs and vanilla extract; stir until well incorporated.
Mix flour, baking powder, baking soda, and salt together in another bowl; add to sugar mixture, blending until an even dough forms. Add oats, coconut, cherries, and chocolate chips until just mixed in.
Scoop rounded tablespoons of dough onto the prepared baking sheets.
Bake in the preheated oven until the edges are brown, 8 to 10 minutes. Let rest for 5 minutes, then transfer to a wire rack to cool.

Ingredients

1/3 cup butter or 1/3 cup margarine, softened
1 (3 ounce) package cream cheese
2/3 cup sugar
1 egg yolk
1 teaspoon vanilla
1 1/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup maraschino cherry, chopped
14 ounces flaked coconut (5 cups)
54 Hershey chocolate kisses (9 oz package unwrapped)

Steps:

To make dough-In large mixer bowl cream butter with the cream cheese and sugar until light and fluffy.
Add egg yolk and vanilla. Beat well.
Combine flour,baking powder and salt.NOTE-A touch of almond extract intensifies cherry flavor.
Gradually add to creamed mixture.
Stir in cherries and 3 cups coconut. Cover tightly and chill for 1 hour ,or until firm.
To bake-Shape dough into 1 inch balls.
Roll in coconut.
Place on ungreased cookie sheet.
Bake 350°F for 10-12 minutes or until lightly browned.
Remove from oven. Immediately press 1 kiss in center of each cookie.
Cool 1 minute.
Carefully remove from cookie sheet. Cool completely on wire racks.
