QUICK CHOCOLATE BREAD (CHOCOLATE LOAF CAKE)
This quick Chocolate Bread recipe takes just 15 minutes to throw together and will fill your home with the most chocolatey aroma. Also known as chocolate loaf cake, it makes an easy and wonderful sweet treat for breakfast or anytime.

Steps:
- Preheat the oven to 180C / 350F / 160C fan forced. Grease and line a 6 cup capacity loaf tin (roughly 8x4 inch)
- In a large bowl sift the cocoa if it has lumps, then whisk in the flour, both sugars, baking powder, baking soda and salt.
- Reserve ¼ cup of chocolate chips and add the rest to the batter. Mix well then set aside.
- In a separate bowl whisk together the eggs, milk, slightly cooled melted butter and vanilla until well mixed.
- Make a well in the centre of the dry ingredients and add the wet ingredients. Fold with a spatula until just combined.
- Tip the batter into the prepared tin, level out the top and scatter over the remaining chocolate chips.
- Bake for 50-55 minutes until a toothpick inserted into the centre comes out with just a crumb or two (you'll have to try to miss the choc chips though).
- Cool in the tin for 10-15 minutes, then transfer to a wire rack too cool completely. Serve while still a little warm (for gooey chocolate chips) or at room temperature once the chocolate has set again..

- Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with cooking spray; dust with flour.
- Combine cake mix, sour cream, eggs, coffee-flavored liqueur, oil, pudding mix, orange zest, and cinnamon in a large bowl; beat with an electric mixer on medium speed until very smooth, about 4 minutes. Fold in chocolate chips. Pour batter into the prepared tube pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in the pan for 10 minutes. Invert onto a plate; let cool completely, about 30 minutes. Dust with confectioners' sugar.

COCOA KAHLUA LOAF
This loaf reminds me of a torte. If you don't have cocoa, I have also used nestle's quick and cut down on the amount of suger added.

Steps:
- The Day Before: In a large bowl with an electric mixer, beat cream, kahula, cocoa, salt and sugar until think and of spreading consistency.
- Spread one side of each graham cracker (one package) with 1/2" of whipped cream mixture.
- Place one cracker on top of another and place lengthwise on platter.
- Repeat this with the second package and place next to first stack on platter.
- Frost between the two rows and join together with remaining frosting covering the top and side of loaf.
- Shave the semisweet chocolate with carrot peeler or knife to form chocolate curls on top of loaf.
- This MUST be refrigerated over night to soften the crackers.
- To server, cut into 1/2"-3/4" slices starting at one end (to show cross section of crackers).

- Preheat oven to 350 °. Wrap a 9-inch springform pan with a double layer of heavy-duty aluminum foil. Set aside.
- Place all chocolate in large bowl. Melt sugar and butter together in the microwave. Whisk together till sugar starts to lose its graininess, zapping in the microwave again briefly if needed to help dissolve the sugar. Add to chocolate; whisk until smooth. Add Kahlua, then cool slightly. Whisk in eggs beaten eggs.
- Pour batter into prepared pan. Put cake pan in roasting pan. Pour enough hot water into roasting pan to come halfway up sides of springform pan. Bake for about an hour, until center of cake, is set. A few moist crumbs may remain on toothpick after inserting it into the center of the cake. Remove pan from water. Unwrap foil and let cool on a rack till reaches room temperature. Chill cake overnight.
- Run a straight knife around pan sides to loosen cake. Release from sides of spring-form pan and place on serving plate. If you'd like, you can use a large spatula to remove cake from bottom of springform pan.
