5 minute Cocoa Dusted Almonds image

In a nutshell (sorry, I couldn't resist) there are so many reasons to love almonds and this recipe for these 5 minute Cocoa Dusted Almonds is a great one!

2 tablespoons cocoa powder
¼ teaspoon ground cinnamon
pinch Himalayan sea salt
2 cups whole raw unsalted almonds
1 teaspoon honey
1/2 teaspoon vanilla extract

Steps:

  • Sift together cocoa powder, cinnamon, and salt in a medium bowl. Set aside.
  • Measure the almonds and place in a medium bowl. Set aside.
  • In a small saucepan, heat honey and vanilla extract over low heat. Alternately, use microwave to liquefy the honey, about 10 seconds.
  • Once the honey mixture is "runny", pour over the almonds. Quickly stir together and combine.
  • Quickly combine the honey coated almonds with the cocoa powder mixture and toss gently together until the almonds are dusted with cocoa.
  • Can be stored in an airtight jar or container.

Spicy Cocoa Almonds image

This protein-packed snack is great for healthy eating on the go. The cayenne pepper gives these cocoa almonds a metabolism-boosting kick. Store in an airtight container.

4 cups raw unsalted almonds
2 tablespoons unsweetened cocoa powder
1 teaspoon granular sucralose sweetener (such as Splenda®)
1 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the almonds in a single layer on a rimmed baking tray.
  • Bake in the preheated oven for 5 minutes. Stir and continue baking until fragrant and toasty, about 5 minutes more. Let cool on tray for 2 minutes; pour into a bowl.
  • Add cocoa powder, sucralose, and cayenne pepper. Stir with a spatula until well coated. Pour almonds back onto the baking tray to cool completely.

2 cups almonds
1 Tbsp canola oil
1/3 cup sweetened cocoa powder (Ghirardelli)
1 tsp unsweetened cocoa powder
2 pinches salt

Steps:

  • Preheat oven to 300 degrees Put almonds in large bowl, drizzle with oil, toss to coat all nuts with a spatula. Sprinkle cocoas and salt over nuts and toss to coat. Pour on two parchment covered baking sheets leaving excess cocoas in the bowl. Bake 15-20 minutes. After almonds cool, sprinkle excess cocoas from bowl over almonds and toss again; adding more sweetened cocoa powder if needed.
