125 g butter
2 eggs
125 g caster sugar
3/4 cup cornflour
vanilla essence
3 -4 tablespoons milk
3/4 cup self-rising flour

Steps:

  • Cream the butter and sugar together in a bowl.
  • Add vanilla to taste. Beat in the eggs, then fold in the sifted flours alternately with the milk.
  • Place small teaspoonfuls of the mixture onto buttered trays.
  • Bake at 180C for 6-10 minutes.
  • When cold, join cockles together in pairs with raspberry jam and dust with icing sugar.

I started making these when my kids were tiny. They are quick, very, very easy and they taste great.

125 g self raising flour (1cup)
90 g caster sugar (1/3 cup)
30 g coconut (1/3 cup)
90 g butter (1/3 cup)
1 egg yolk, beaten

Steps:

  • Sift flour into bowl, add sugar and coconut.
  • Melt butter, add to dry ingredients with egg yolk and mix to make a firm dough.
  • Roll teaspoonsfull of mixture into balls, place on greased baking tray and flatten with fork.
  • Leave space between biscuits and bake 10-15mins at 180degC - 200degC (350degF - 400degF) or until brown.

8 ounces cockles in vinegar, drained
4 ounces button mushrooms, sliced
1 teaspoon herb mustard
4 teaspoons olive oil
2 tablespoons fresh chives, chopped
2 ripe avocados, peeled, stoned and sliced thinly
1 tablespoon lemon juice
hot garlic bread

Steps:

  • In a large bowl, mix together cockles and mushrooms.
  • Place mustard, olive oil and chives into a jar. Cover and shake well.
  • Stir dressing into cockle mixture. Cover and chill for 20 minutes.
  • Arrange sliced avocado in a plate and sprinkle with lemon juice.
  • Spoon over cockle salad and serve with bread.

ENGLISH LEMON BISCUITS/COOKIES

These are great to have with a cup of tea - maybe it's because I'm British? Anyway, they're very buttery & lemony. They're refreshing in the Spring/Summer & are great to use as a base of individual cheese cakes. I make a batch in no time & by the time they've cooled they've vanished! The mixture is also great to keep in the fridge for a couple of days & it also freezes well. You could also sprinkle the top of the biscuits with sugar as soon as you take out from the oven.

225 g butter
110 g caster sugar
275 g plain flour
1 un-waxed lemon, zest of

Steps:

  • Pre-heat oven to 170C/gas 3.
  • Cream the butter until soft & creamy.
  • Beat in the sugar, until pale & fluffy.
  • Add the zest of 1 un-waxed lemon.
  • Add the plain flour.
  • Bring together to form a firm dough.
  • Turn onto a floured surface & roll to around a cm thick.
  • Use a crinkle biscuit/scone cutter for a more professional look
  • Use a palette knife to transfer onto a baking sheet (no need to pre-grease).
  • bake in the oven for 10-15 minutes, or until they are light golden brown and slightly firm on top.
  • transfer the biscuits to a cooling rack.
  • Once cooled eat up & enjoy!
