CLAY POT CHICKEN RECIPE
Deliciously moist and tender chicken thighs with a few vegetables, all baked in a clay pot, make this a one pot meal that's super easy and quick.

Steps:
- Fully submerge both parts of your clay baking pot under water. Soak for 30 minutes.
- Prepare your vegetables.
- Place the carrots in the bottom of the baker.
- Add the potatoes.
- Add the onions.
- Add the garlic cloves.
- Arrange the chicken thighs on top of the vegetables.
- Sprinkle chicken with salt.
- Sprinkle with black pepper.
- Place the pats of butter on top of the chicken pieces.
- Place the top on the baker.
- Place the baker in a COLD oven.
- Set oven temperature to 425F degrees. Let chicken bake for 60 minutes.
- Remove lid from baker, let chicken bake for 10-15 more minutes to slightly brown.
- Internal temperature of the chicken should be 165F degrees to be done.
- Remove from oven when done. Let chicken rest for 15 minutes before serving.
- Enjoy!
ROAST CHICKEN IN A CLAY POT

Steps:
- Soak clay baker in warm water for 15 minutes.
- Remove baker from water. Place carrots, potatoes, onions, and garlic in the bottom of baker.
- Toss with half of the herbs, salt, and pepper.
- Add chicken on top of vegetables and add remaining herbs, salt, and pepper. Cover with top lid of baker.
- Place in a cold oven. Set oven temperature to 450 degrees and bake for 1 hour. Remove lid of the baker and cook for an additional 20 minutes, or until chicken is browned and the meat thermometer inserted in thigh area reads 165°F.
- Remove from oven and set baker on a cutting board or trivet to rest for 10 minutes.
ROMERTOPF CLAY POT ROAST CHICKEN
Romertopf Roast Chicken has the right seasonings to make it very moist. A Romertopf chicken baker makes one of the best clay pot chicken dishes.

- If using Romertopf clay pot soak for at least 20 minutes, I usually soak it longer, about 1 hour.
- Only if using a regular roaster pan Preheat oven to 400 degrees. (Remember always place a Romertopf roaster in a cold oven then bring to temperature.)
- Using a fork mix the butter with one minced garlic clove and 1 tablespoon of each of the herbs that you choose to use. ( I used all three) to make herb butter.
- Wash chicken and dry thoroughly.
- Gently ease up the breast skin of the chicken and spread the herb butter between the skin and the meat of the breast being careful not to pierce the skin. Also gently lift the skin of the drumsticks and spread butter under them.
- Place the lemon, celery, and onion in the chicken and any herbs that you choose.
- Season the outside of the chicken with salt and pepper.
- Tie legs together with kitchen twine
- Place chicken in roaster and pour the wine and chicken broth over the chicken. Cover with lid.
- (A) If using a clay pot Romertopf roaster place in a cold oven and set the oven temperature to 400° F . Bake for 2 hours covered until done.(B) If using regular Stoneware roaster bake for 65-70 minutes
- 11. Remove the lid and cook for 10-15 minutes longer until chicken is golden brown and thermometer registers 165° F and juices run clear.

ROAST CHICKEN
With an ingredient list just four items long (chicken, olive oil, salt, pepper), the genius of this bare-bones roast chicken is in its technique. To make it, thoroughly preheat a cast-iron skillet before sliding into it a seasoned bird, breast side up. In under an hour you'll get a stunner of a chicken, with moist, tender white meat, crisp, salty chicken skin, and juicy dark meat all done to a turn. If you don't already have a cast-iron skillet large enough to hold a whole chicken, this recipe is a good enough reason to invest in one.

- Put a cast-iron skillet on a low rack in the oven and heat the oven to 500 degrees. Rub the chicken all over with the oil and sprinkle it generously with salt and pepper.
- When the oven and skillet are hot, carefully put the chicken in the skillet, breast side up. Roast for 15 minutes, then turn the oven temperature down to 350 degrees. Continue to roast until the bird is golden brown and an instant-read thermometer inserted into the meaty part of the thigh reads 155 to 165 degrees.
- Tip the pan to let the juices flow from the chicken's cavity into the pan. Transfer the chicken to a platter and let it rest for at least 5 minutes. Carve and serve.

CLASSIC CLAY COOKER ROAST CHICKEN
2nd Recipe in the "working mother" category. We use a clay cooker to roast chickens - it keeps the oven cleaner, and keeps the chicken moist.

- 1. Soak the clay cooker in water for 10 minutes.
- 2. Meanwhile, Pick the herbs, rinse, and chop. Peel the garlic and leave the cloves whole. Remove the chickens from their wrappers, remove the "innards" and rinse.
- 3. Place the chickens in the cooker. Put the garlic cloves in their cavities, and cover with the minced herbs. Pour the olive oil over the chickens.
- 4. Place the covered clay cooker in a cold oven, and turn the temperature to 425 degrees. Roast for 2.5 hours. You will smell it when it is close to done, but check to see the leg joint is not pink.
- 5. Serve with Rice and a Green.
- 6. You can add fruit (peaches or oranges) or an acid (juice or a vinegar) to change the flavor. Once dinner is done, remove the remaining meat, and put the bones in a stock pot with the liquid left over from cooking. Simmer over night. The next day, drain the stock.
- 7. In a bowl place left over rice, left over chicken, and any other vegetables you have. Ladle broth over it. I usually run out and pick some spicy greens, rinse them and slice them, then put them in the bowl. In about a minute you will have a fantastic soup.
CLASSIC ROAST CHICKEN & GRAVY

- Heat oven to 190C/fan 170C/gas 5. Have a shelf ready in the middle of the oven without any shelves above it.
- Scatter 1 roughly chopped onion and 2 roughly chopped carrots over the base of a roasting tin that fits the whole 1 ½ kg chicken, but doesn't swamp it.
- Season the cavity of the chicken liberally with salt and pepper, then stuff with 2 lemon halves and a small bunch of thyme, if using.
- Sit the chicken on the vegetables, smother the breast and legs all over with 25g softened butter, then season the outside with salt and pepper.
- Place in the oven and leave, undisturbed, for 1 hr 20 mins - this will give you a perfectly roasted chicken. To check, pierce the thigh with a skewer and the juices should run clear.
- Carefully remove the tin from the oven and, using a pair of tongs, lift the chicken to a dish or board to rest for 15-20 mins. As you lift the dish, let any juices from the chicken pour out of the cavity into the roasting tin.
- While the chicken is resting, make the gravy. Place the roasting tin over a low flame, then stir in 1 tbsp flour and sizzle until you have a light brown, sandy paste.
- Gradually pour in 250ml chicken stock, stirring all the time, until you have a thickened sauce.
- Simmer for 2 mins, using a wooden spoon to stir, scraping any sticky bits from the tin.
- Strain the gravy into a small saucepan, then simmer and season to taste. When you carve the bird, add any extra juices to the gravy.

Don't see too many clay oven or clay pot recipes. This is a favorite of mine. It makes a chicken with a golden brown, very crisp skin.

- Soak clay oven in water to cover for 10 to 15 minutes.
- Place lemon in chicken cavity. Tuck wings under, and tie legs together with string, if desired. Place chicken in clay pot, breast side up, and sprinkle with tarragon. Cover with lid.
- Place in a COLD oven. Turn oven to 450 degrees Fahrenheit, and bake 1 hour. Uncover and bake 15 more minutes or until meat thermometer inserted into chicken thigh registers 180 degrees.

HERB AND LEMON CHICKEN IN A CLAY POT
This recipe utilizes a clay cooker, such as a Romertopf. (for alternative cooking method without a clay pot, see diner524's review) The chicken stays juicy but still gets a crispy skin on top. Remember the clay pot and lid need to be soaked in cold water for 15 minutes before using. Try to find an Herbes de Provence that includes lavender flowers. This is good with steamed rice, or roasted vegies. The juices from the clay pot are good over the rice or vegies.

Steps:
- Mash Herbes de Provence into the softened butter until well blended.
- Rinse chicken inside and out and pat dry with paper towels.
- Soak clay pot and lid in cold water for 15 minutes.
- Meanwhile, place 1/2 lemon in cavity of chicken and truss chicken with kitchen twine. Fold wings under. Rub butter mixture over chicken. Sprinkle with salt and pepper.
- Slice remaining 1/2 lemon into 3 or 4 slices.
- After soaking, line bottom of pot evenly with onion, celery, carrot, garlic and lemon slices. Place chicken, breast side up, on top of vegies.
- Pour broth over chicken and cover pot with soaked lid.
- Place in a COLD oven and set heat at 450°F.
- Cook for 1 hour and 15 minutes, or until the legs move easily and skin is browned.
- (Lid can be removed the last 10 minutes, for crisper skin.).
- Transfer to a platter and let rest 10 minutes before carving. Serve with the pan juices and vegies, if desired.
