Delicious, fruity and slightly sweet muffins perfect for a Monday morning! Makes jumbo muffins - for regular size, bake 25 minutes at 375F.

1 egg
1/2 cup low-fat sour cream
1/2 cup buttermilk
1 orange, juice and zest of
1 lemon, zest of
1/4 cup canola oil
1/4 cup molasses
1 tablespoon grated fresh ginger
1 teaspoon vanilla
1/2 teaspoon stevia powder
1 cup all-bran cereal, twigs
3/4 cup multigrain hot cereal
1/4 cup wheat germ
1 cup whole wheat flour
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup dried kiwi, slices chopped

Steps:

  • Heat oven to 350°F Grease and/or like 6 jumbo muffin cups.
  • In a large bowl, beat together egg, sour cream, buttermilk, orange juice and zest, lemon zest, oil, molasses, ginger, vanilla, stevia, bran twigs and 12-grain hot cereal. Let stand 10 minutes.
  • Stir in wheat germ, flour, baking powder, baking soda, cinnamon and salt until just combined, then fold in the dried kiwi.
  • Portion into the muffin tin and bake 42 minutes.
  • Cool in the tin 5 minutes, then remove to a wire rack and cool completely.

"I received this recipe while living in New Zealand with a friend," recalls Tim Fink from Steamboat Springs, Colorado. "His wife prepared a batch of these moist muffins for him. I 'sampled' so many that the next time, she doubled the recipe so there were plenty for both of us."

Number Of Ingredients 11

1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Dash salt
1 large egg
1/2 cup whole milk
2 tablespoons butter, melted
2 kiwifruit, peeled and chopped
1/2 cup raisins

Steps:

  • In a large bowl, combine the dry ingredients. In a small bowl, whisk the egg, milk and butter. Stir into dry ingredients just until moistened. Fold in kiwi and raisins. , Fill paper-lined muffin cups three-fourths full. Bake at 425° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1/2 cup sugar (use 3/4 cup if your bananas are not ripe enough and kiwis are tart)
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup low-fat plain yogurt (plain or vanilla)
6 tablespoons skim milk (or buttermilk)
3 tablespoons canola oil
1 egg
1 teaspoon vanilla extract
2 large ripe bananas, mashed
3 ripe kiwi, chopped into small cubes

Steps:

  • Combine the first 6 ingredients (DRY) in a large mixing bowl; set aside.
  • Mix yogurt, milk, oil, egg, vanilla and mashed bananas together in a smaller bowl until well-combined (WET).
  • Add WET mixture to the DRY mixture, mix until just combined (DO NOT OVERMIX) - lumps are ok.
  • Now stir in chopped kiwi gently; you may also add chopped nuts if you like.
  • Bake in a pre-heated oven at 375°F or 180°C for 25-30mins (mini muffins take about 20mins).
  • Cool in pan for 10mins, then remove and cool thoroughly on wire rack.

My girfriend gave me a loaf of this delicious bread along with the treasured recipe. Here it is for you. Makes a wonderful tea bread and does it smell good while baking!

2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter (soften) or 1/2 cup margarine (soften)
2/3 cup sugar
2 eggs
1 cup peeled mashed kiwi fruit (ripe)

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 9 X 5 X 3 loaf pan.
  • Sift together flour, baking powder baking soda and salt and set aside.
  • In large bowl cream butter and sugar together until light and fluffy. Add eggs one at a time to creamed mixture beating well after each one. Stir in kiwis. Fold in dry ingredients gently, stirring only until batter is completely moistened. Spoon batter into pan and bake for 55-65 minutes or until toothpick inserted comes out clean. Cool for 10 minutes on wire rack. Remove from pan and continue cooling on rack.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

  • Preheat oven to 400 degrees.
