Categories     Food & Cooking     Dinner Recipes

Number Of Ingredients 13

1 whole turkey (about 14 pounds), patted dry
2 tablespoons coarse salt
1 teaspoon black pepper
1 orange, halved
1 lemon, halved
1 small yellow onion, peeled and quartered
1 head garlic, halved
6 sprigs thyme
2 sprigs sage
1 tablespoon olive oil
3 cups chicken stock, warm
1/2 cup milk
2 tablespoons flour

Steps:

  • Preheat oven to 425 with rack in lower third position.
  • Season cavity of turkey with 1 tablespoon salt and 1/2 teaspoon pepper. Stuff cavity with orange, lemon, onion, garlic, and herbs. Tie legs with twine and transfer turkey to a rack set inside a roasting pan.
  • Rub skin with olive oil and season with remaining salt and pepper.
  • Pour 2 cups chicken stock into roasting pan and transfer to oven. Roast turkey for 2 1/2 hours or until meat thermometer inserted into thickest part of breast registers 165 degrees. After first hour of roasting, baste turkey every 30 minutes, and tent with foil if skin becomes deep golden brown before turkey is cooked.
  • Remove turkey from oven and transfer to a carving board. Let stand at least 15 minutes.
  • Place roasting pan on stovetop over medium-high heat and bring pan drippings and remaining 1 cup chicken stock to a simmer. Combine milk and flour in a mason jar and shake vigorously to combine. Whisk milk mixture into gravy and simmer, whisking constantly, until gravy thickens slightly, about 2 minutes.
  • Carve turkey and serve with gravy.

TURKEY ROULADE WITH CRANBERRY-CITRUS STUFFING AND CREAM GRAVY

Turkey Roulade with Cranberry-Citrus Stuffing and Cream Gravy image

Provided by Valerie Bertinelli

Categories     main-dish

Time 3h40m

Yield 8 servings

Number Of Ingredients 27

16 cups cubed crusty white bread (1/2-inch cubes), from 2 large round loaves
1 1/2 cups dried cranberries
2 tablespoons brown sugar
Zest and juice of 2 large oranges
Zest of 4 lemons
Zest of 2 medium grapefruit
12 tablespoons (1 1/2 sticks) unsalted butter
2 1/2 tablespoons chopped fresh sage
2 tablespoons chopped fresh thyme
2 medium onions, finely chopped
5 stalks celery, finely chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 1/2 cups chicken or turkey stock
1/4 cup chopped fresh parsley
2 large eggs
One 5- to 6-pound boneless whole turkey breast, skin on, butterflied
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, at room temperature, plus more for the baking dish
2 tablespoons unsalted butter
1/4 cup all-purpose flour
1/2 cup white wine
2 cups chicken or turkey stock
1 teaspoon finely chopped fresh sage
1 teaspoon finely chopped fresh thyme
1/4 cup heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • For the stuffing: Preheat the oven to 300 degrees F. Lay the bread out on two rimmed baking sheets. Bake until slightly dried out, about 25 minutes. Transfer to a large bowl.
  • Meanwhile, soak the dried cranberries in a bowl with the brown sugar, orange juice and all the citrus zests.
  • Melt the butter in a large skillet over medium heat. Add the sage and thyme and cook, stirring, for 1 minute. Add the onions, celery, garlic, 1 1/4 teaspoons salt and a few grinds of pepper. Cook, stirring, until softened, 12 minutes. Transfer to the bowl with the bread, pour in the stock, and add the cranberry mixture; toss to coat. Let cool completely. Add the parsley, eggs, 1/2 teaspoon salt and some pepper and mix thoroughly.
  • For the roulade: Raise the oven temperature to 350 degrees F. Lay the butterflied turkey breast skin-side-down on a plastic-wrap-lined work surface. Pound with a meat mallet to an even 1/2- to 3/4-inch thickness. Sprinkle lightly with salt and pepper.
  • Spread about 5 cups of the stuffing in a 1/2-inch layer over the breast, leaving a 1-inch border on all sides. Starting on a long side, tightly roll up the breast to enclose the stuffing. Tie and secure the roulade every 1 1/2 inches with kitchen twine.
  • Butter a 3-quart baking dish and fill it with the remaining stuffing.
  • Gently rub the softened butter all over the roulade; sprinkle generously with salt and pepper. Transfer to a rack set over a rimmed baking sheet. Roast until an instant-read thermometer inserted into the center registers 150 degrees F, about 1 hour 20 minutes. Thirty minutes before the roulade is done, add the stuffing to the oven.
  • When the roulade is at temperature and the stuffing is hot, increase the oven temperature to 475 degrees F and cook for another 5 minutes, until both are golden brown. Transfer the roulade to a cutting board, cover loosely with foil and let stand 10 minutes.
  • For the gravy: Melt the butter in the roasting pan over medium heat. Add the flour and whisk to form a paste. Cook for 1 to 2 minutes. Add the white wine and bring to a boil for 2 minutes. Add the stock, sage and thyme; reduce the heat to a simmer and cook until thickened, about 5 minutes. Stir in the cream. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Remove the twine and cut the roulade into slices. Serve with the extra stuffing and the gravy on the side.

CITRUS STUFFED SMOKED TURKEY ON THE GRILL

Citrus Stuffed Smoked Turkey on the Grill image

This is one of the main Entrees that was on the menu for the July 04th Holiday. It is a simple recipe, but you won't believe how much flavor the citrus fruits with the onion & garlic adds to the turkey. It is moist, tender, flavorful, juicy, & just pull apart goodness throughout. It cooked to a nice golden brown, & cooked in...

Provided by Rose Mary Mogan

Categories     Turkey

Time 3h10m

Number Of Ingredients 12

2 medium limes quartered
2 medium lemons quartered
1 large orange quartered
1 medium apple quartered
1 large onion, cut into eights
6-8 clove garlic chopped coarsely
2 Tbsp granulated garlic powder
1 1/2 Tbsp granulated onion powder
2 tsp coarse black pepper
1 Tbsp each seasoned salt, paprika & chopped dried chive or use fresh if available
1 medium hen turkey (about 10 to 14 pounds) mine was 13 pounds
1 stick butter, softened (1/2 cup) can also use oil if desired

Steps:

  • 1. I have this basic recipe posted but only showing the finished product. This version gives you a few pictures to see what it should look like as you progress in the recipe. Hopefully it will make it easier, and you will get the same results that I get every time, I make it. You will be overjoyed with the outcome and results of this recipe. The cooked grill time will depend on the type of grill you have, and how often you open the lid. This was done in about 2 1/2 hours.
  • 2. Blend the butter with the spices in a medium size bowl, PAT TURKEY DRY WITH PAPER TOWEL and rub BUTTER MIXTURE OVER THE OUTER SURFACE OF THE TURKEY.SPRINKLE additional garlic and onion powder inside the cavity of turkey if desired.
  • 3. Quarter all the fruits and veggies, and then fill the neck cavity with some of the mixture, and secure it in by overlapping the skin of the turkey neck to hold in the fruit & veggies and securing with 2 long skewers.
  • 4. Now with the remaining fruit mixture fill in the larger cavity of the turkey, and tuck legs & tail, securing with additional skewers if needed. I did not need them, I used the excess skin to hold the legs in place. Fold the wings back so that they fit inside the pan.
  • 5. Place the pan on the preheated grill, close the lid, then check after the first hour, brushing with additional remaining butter mixture using a BBQ brush.
  • 6. Using a Baster squeeze any accumulated juices back over the turkey. Close lid and continue to cook till juices run clear when pierced with a fork or the temperature of the breast reaches 165 degrees F. and the thigh is about `175 degrees F.
  • 7. Remove from Grill when done, allow turkey to rest at least 10 to 15 minutes before carving.
  • 8. Sorry I didn't get a picture of the carved bird, I was in such a hurry trying to get everything out to serve, that I forgot to take the picture. I promise I will take one soon. I promise.

PERFECT CITRUS TURKEY AND GRAVY

Perfect Citrus Turkey and Gravy image

Provided by Danny Boome

Categories     main-dish

Time 30m

Yield 8 to 12 servings

Number Of Ingredients 12

1 (12-pound) turkey, with giblets (see cooking notes at bottom of recipe)
1/2 cup unsalted butter (1 stick), softened, plus 1 tablespoon
2 lemons, zested
1/2 cup chopped chives
2 tablespoons coarse salt
Freshly ground black pepper
1 small orange, halved
1 small grapefruit, halved
1 cup white wine
2 cups chicken stock
1 tablespoon Dijon mustard
2 tablespoons cornstarch

Steps:

  • Take the turkey out of the refrigerator and leave it to come to room temperature, about 30 minutes prior to preparing and cooking. Preheat the oven to 450 degrees F.
  • In a mixing bowl, add the 1/2 cup softened butter, lemon zest and chopped chives. Halve the lemons and squeeze the juice of 1 lemon half into the butter. Stir to combine. Season with salt and pepper.
  • Prepare the turkey: Remove the inner packet of giblets from the cavity and set aside.
  • Run your fingers underneath the skin of the breast to make a little pocket between the skin and the flesh. Using your fingers, scoop up some of the lemon-chive butter and push the butter under the skin, filling up the pockets. Do the same thing on the legs. Once each pocket has been filled, take the rest of the butter and rub it all over the outside of the bird. Sprinkle about a tablespoon and a half of coarse salt on top.
  • Insert the halved lemons, orange and grapefruit into the cavity of the turkey. Insert as much of the citrus as you can. Give each piece a little squeeze as you insert them to get the juices distributed. (You may have to leave some out depending on the size of the cavity. Use any extra citrus for garnish later.)
  • Remove the giblets from the packet, rinse and pat dry. Place the giblets on the bottom of a large roasting pan. Place the turkey on top of the giblets. Tuck the wings under the turkey.
  • Place the turkey in a preheated oven and cook for 30 minutes. Then, turn down the heat to 350 degrees F and roast for about another 2 hours, until a meat thermometer inserted into the thickest part of the thigh registers 175 to 180 degrees F. (The general rule is to cook a turkey about 15 minutes per pound.)
  • Remove the bird from the pan onto a carving board or platter and cover with foil to keep warm. Allow it to rest for 15 minutes before carving.
  • Place the roasting pan over low heat on the stovetop. Add white wine and deglaze the pan, scraping up the browned bits from the bottom of the pan. Pour in the chicken stock. Whisk the cornstarch into it. Add the remaining tablespoon of butter and the Dijon mustard. Whisk well to combine. Strain the gravy into a small saucepan and simmer over low heat until thick and smooth, about 8 minutes.
  • Bring your turkey to room temperature to ensure that the bird will cook evenly.
  • Stuffing a turkey with fruit keep the bird moist and acts as a secondary cooking agent. As the juice of the fruit steams inside the cavity, it helps cook the bird from the inside. The juices also help to flavor the pan juices used for making the gravy.
  • Stuffing butter between the skin and the flesh, keep the meat moist and flavorful. The butter and salt on the outside help create a tasty, crispy skin.
  • I like to use the giblets as a platform for the bird. It stops the bottom of the bird from burning and adds flavor to the pan juices.
  • A good rule for roasting times is to plan on roasting a turkey for about 15 minutes per pound.
  • A meat thermometer is the best tool for figuring out if your turkey is fully cooked.

TURKEY WITH HERBES DE PROVENCE AND CITRUS

Turkey with Herbes de Provence and Citrus image

Provided by Giada De Laurentiis Bio & Top Recipes

Categories     main-dish

Time 4h15m

Yield 8 to 10 servings

Number Of Ingredients 14

1 (14 to 15-pound) turkey, neck and giblets reserved
1 orange, cut into wedges
1 lemon, cut into wedges
1 onion, cut into wedges
6 fresh rosemary sprigs
6 fresh sage sprigs
6 fresh oregano sprigs
7 tablespoons unsalted butter
2 tablespoons herbes de Provence
1 tablespoon olive oil
1 1/2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
6 cups canned low-salt chicken broth (approximate amount)
1/3 cup all-purpose flour

Steps:

  • To make the turkey: Position the rack in the lowest third of the oven and preheat to 400 degrees F.
  • Rinse the turkey and pat it dry with paper towels. Place the turkey on a rack set inside a large roasting pan. Place the orange and lemon wedges, onion, and 2 sprigs of each fresh herb in the main turkey cavity. Tie the legs together to hold the shape of the turkey. Stir 2 tablespoons of butter, the herbes de Provence, oil, and 1 1/2 teaspoons of each the salt and pepper in a small saucepan over medium heat just until the butter melts. Rub the butter mixture all over the turkey and between the turkey breast meat and skin. Place the turkey neck and giblets in roasting pan. (Recipe can be prepared up to this point 1 day ahead. Cover and refrigerate. Let stand at room temperature 30 minutes before roasting.)
  • Cover the turkey breast with foil. Roast for 20 minutes. Pour 3 cups of broth into the pan and stir to scrape up any brown bits on the bottom of the pan. Add the remaining sprigs of fresh herbs to the pan. Roast the turkey for 40 minutes. Reduce the oven temperature to 350 degrees F. Remove the foil from the turkey; pour 1 more cup of broth into the pan. Continue roasting the turkey until a meat thermometer inserted into the thickest part of the thigh registers 165 degrees F to 175 degrees F or until the juices run clear when the thickest part of the thigh is pierced with a skewer, basting occasionally with pan juices, about 1 hour and 30 minutes longer. Transfer the turkey to a platter and tent with foil. Let stand 30 minutes while preparing the gravy.
  • To make the gravy: Strain the turkey pan juices from the roasting pan through a sieve and into a 4-cup glass measuring cup; discard the solids. Spoon off the fat from atop the pan juices. Add enough chicken broth, about 1 to 2 cups, to the pan juices to measure 4 cups total. Melt the remaining butter in a heavy large saucepan over medium-high heat. Add the flour and whisk for 1 minute. Gradually whisk in the broth. Simmer until the gravy thickens slightly, whisking often, about 10 minutes. Season with salt and pepper. Serve the turkey with the gravy.
