1 grapefruit, zest of, without the white part
1 orange, zest of, without the white part
1 1/2 cups buttermilk
3/4 cup sugar
1 teaspoon salt
1/2 cup butter, soften
3/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda

Steps:

  • In mixer or food processor, mix the peels of grapefruit and orange with the buttermilk until the peels are finely chopped. Add sugar, salt and butter and beat well.
  • In a bowl, mix flour, baking powder and baking soda. Add the mixture of buttermilk and mix until the mixture is wet, but do not mix too much.
  • Spread the mixture in 12 greased muffins tins. Cook in a preheated oven of 375 F 20 to 25 minutes or until a toothpick inserted in the muffins comes out clean. Let cool on a rack for about 5 minutes. Remove from the pan and let cool completely. (They will be good up to 3 days in the refrigerator and up to 1 month in the freezer).

1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/4 cup fresh citrus juice
2 tablespoons grated citrus rind
1/2 cup juice of Valencia orange
1/2 cup juice of navel orange
1/2 cup juice of tangerine
1/2 cup juice of tangelo
1/2 cup sugar
2 cups Cognac or brandy
Zest from 2 oranges, cut into strips
1 cinnamon stick
1 clove
Dash of freshly ground nutmeg

Steps:

  • Combine oil, sugar, and eggs. Mix well. Add remaining ingredients. Blend. Pour into muffin pan. Bake at 350 degrees F for 10 to 15 minutes.
  • Simmer orange juice with sugar until sugar is dissolved
  • Add Cognac or Brandy, zest and spices.
  • Place in a sterilized jar, seal tightly - store in a cool place - shaking occasionally for 1 month
  • Strain it through a fine sieve into a sterilized decorative bottle for another month before serving

2/3 cup milk
1/3 cup vegetable oil
1 egg
1 2/3 cups Gold Medal™ all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400° F. Line 12 muffin cups with paper baking cups. In small bowl, mix 3 tablespoons sugar and 1 teaspoon of the orange peel; set aside.
  • In medium bowl, beat milk, oil and egg with fork. Stir in flour, 3/4 cup sugar, the baking powder, salt and remaining 2 teaspoons orange peel just until moistened. Divide batter evenly among muffin cups. Sprinkle sugar-orange peel mixture evenly over batter.
  • Bake 15 to 18 minutes or until golden brown. Cool 5 minutes; remove from pan. Serve warm.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/3 cup buttermilk
1 teaspoon orange or lemon zest
1 teaspoon pure vanilla extract
1 large egg
1 cup roughly chopped fresh cranberries, or thawed frozen
1/2 cup sugar, plus 1 1/2 tablespoons
6 tablespoons unsalted butter, softened
1/2 cup confectioners' sugar
1 tablespoon orange or lemon juice

Steps:

  • Preheat the oven to 350 degrees F and adjust 2 oven racks to the top and bottom halves of the oven. Line 2 baking sheets with greased parchment paper.
  • Sift the flour, baking powder, salt and baking soda together in a medium bowl.
  • Whisk the buttermilk, orange zest, vanilla and egg together in a separate bowl. Toss the cranberries with 1 1/2 tablespoons of the sugar.
  • Beat the butter and remaining 1/2 cup sugar together in the bowl of a stand mixer fitted with a paddle on medium-high speed until light and fluffy, about 4 minutes (or in a large bowl if using a hand mixer), scraping down the sides of the bowl as needed.
  • Adjust the speed to low and add the dry and wet mixtures in alternating batches until just combined. Add the cranberries and fold in using a spatula.
  • Spray a 1/4 measuring cup lightly with pan spray. Scoop a level 1/4 cup of batter and scrape out with a rubber spatula onto the baking sheets. Repeat with the remaining batter, spacing the muffin tops about 2 inches apart. Pat the dough into rounded mounds using wet or greased hands. Chill 30 minutes.
  • Bake until the muffin tops are slightly golden and can be easily lifted from the baking sheets with a spatula, 18 to 20 minutes. Be sure to keep an eye on these and rotate the baking sheets top to bottom about every 5 minutes or as needed to ensure even baking.
  • Let cool in the pan 3 minutes and then transfer to a cooling rack until cool to the touch. Stir together the confectioners' sugar and orange juice and drizzle over the muffin tops.

  • Line 12 jumbo muffin cups with paper liners and fill with your favorite bread stuffing (we used Mushroom-Leek). Bake, uncovered, at 375 degrees F until golden, about 45 minutes.
  • Mushroom-Leek Stuffing: Make Classic Stuffing with 3 cups chopped leeks instead of onions. Cook 1 pound sliced cremini mushrooms with the leeks and celery.
  • Classic Stuffing: Melt 1 stick butter in a large skillet over medium heat. Add 2 cups each diced onions and celery and 1 tablespoon each minced sage and thyme; add salt and pepper and cook 5 minutes. Add 3 cups turkey or chicken broth and bring to a simmer. Beat 2 eggs with 1/4 cup chopped parsley in a large bowl; add 16 cups cubed stale white bread, then pour in the vegetable-broth mixture and toss. Transfer to a buttered baking dish and dot with butter. Cover and bake 30 minutes at 375 degrees F; uncover and bake until golden, 30 more minutes.

1/4 cup vegetable oil
1 medium mango, cut lengthwise in half, pitted and diced (1 cup)
1/2 cup powdered sugar
3 to 4 teaspoons lime juice

Steps:

  • Heat oven to 375°F. Grease bottoms only of 6 jumbo (3 1/2x1 3/4-inch) muffin cups or 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • In medium bowl, beat egg slightly. Stir in remaining muffin ingredients except mango just until moistened. Stir in mango. Divide batter evenly among muffin cups.
  • Bake 25 to 35 minutes or until golden brown.
  • Meanwhile, in small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Immediately remove muffins from pan to cooling rack. Drizzle glaze over muffins. Serve warm if desired.

3 - hawaiian bread rolls
1 - hard roll
1 tablespoon(s) unsalted butter
1/3 cup(s) chives
1 cup(s) milk
2 sprig(s) fresh thyme, chopped
5 - fresh basil leaves, chopped
2 - clementines
1 - lemon
1/4 teaspoon(s) cardamom
1 teaspoon(s) salt
1 1/2 teaspoon(s) cinnamon sugar mix
1/4 cup(s) graham cracker crumbs

Steps:

  • Roughly chop the breads and spread out on a cookie sheet. Place in dry oven for about 10-15 minutes.
  • Sautee onions in butter in a small pot.
  • Add milk. Bring to a simmer but don't boil.
  • Add basil and thyme, cardadmom, salt, zest of 1 clementine and 1/2 lemon.
  • Stir and let simmer for a minute.
  • Pour mixture over bread on cookie sheet. Grate on zest of 1 more clementine and other 1/2 of the lemon.
  • Sprinkle on cinnamon sugar (if you don't have a cinnamon sugar grater, then use 1 tsp sugar and 1/2 tsp cinnamon).
  • Mix it all together with fingers.
  • Spray muffin tin and stuff mixture in. Sprinkle tops with graham cracker crumbs and push crumbs in with fingers. Bake 20 minutes at 350*.

4 cups crumbled leftover stuffing
1 cup chopped cooked turkey
¾ cup frozen corn kernels, thawed
1 tablespoon chicken broth, or as needed
12 (1/2 inch) cubes Cheddar cheese
5 large eggs eggs
2 tablespoons chicken broth
salt and freshly ground black pepper to taste
½ cup cranberry sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray muffin tin cups with cooking spray.
  • Combine stuffing, turkey, and corn kernels in a large bowl, and stir gently. If mixture is particularly dry, add 1 tablespoon chicken broth, a little at a time, until mixture is moist, but not mushy. Loosely and equally portion stuffing mixture amongst the 12 muffin cups. Insert a Cheddar cheese cube into the center of each muffin cup.
  • Whisk eggs, 2 tablespoons chicken broth, salt, and pepper together in a cup. Divide egg mixture evenly among the cups. The egg mixture will not completely cover the stuffing, but it puffs up when baked.
  • Bake in the preheated oven until muffins are browned and slightly crisp on the top, 25 to 30 minutes.
  • Allow to cool for about 5 minutes before removing the muffins by running a knife around the edge of each cup. Serve warm with a dollop of cranberry sauce spooned on the top.

400g cubetti di pancetta , bacon lardons or chopped bacon
6 onions , chopped
2 x 15g packs flat-leaf parsley , chopped
2 tsp thyme leaves
600g breadcrumbs
zest 1 orange
zest 2 lemons
2 tsp ground mace
2 eggs
1 tbsp sunflower oil or olive oil

Steps:

  • Dry-fry the lardons until crisp in a non-stick frying pan, then lift out with a slotted spoon and tip in the onions. Gently cook for 15-20 mins until really soft. Tip into a bowl with the lardons, herbs, breadcrumbs, zests, mace, eggs and plenty of seasoning, then mix well.
  • Set aside about 450g of the stuffing for your turkey, then roll the rest to the size of golf balls. When the turkey comes out of the oven, roll the stuffing balls in the oil in a small roasting tin, then roast underneath the veg at 220C/200C fan/ gas 7, for 20 mins until golden and crisp.
