RICH VANILLA CUSTARD SAUCE

Rich Vanilla Custard Sauce image

This rich vanilla sauce is a creamy, custard-like sauce made with an egg and milk or cream. Add cinnamon, nutmeg, or a little rum to the sauce.

Provided by Diana Rattray

Categories     Dessert     Sauce

Time 15m

Number Of Ingredients 8

1/2 cup granulated sugar or light brown sugar (packed)
1 tablespoon all-purpose flour
Pinch ground nutmeg or cinnamon
1 large egg
2 tablespoons butter
1 1/2 cups milk or half-and-half
Dash salt
2 teaspoons vanilla extract

Steps:

  • Gather the ingredients.
  • In a medium saucepan, combine the brown sugar, flour, nutmeg or cinnamon, the egg, melted butter, milk, and salt. Whisk until well blended and then place the pan over medium heat.
  • Cook, whisking constantly until the mixture has thickened and coats the back of the spoon. To test, dip a spoon in the thickened mixture and turn it over. Run a finger down the back of a spoon. If the mixture does not run into the path your finger made, the sauce is done.
  • Place a mesh sieve over a bowl and strain the sauce through it. Stir the vanilla extract into the sauce and refrigerate, covered, until serving time.
  • Serve and enjoy.

Categories     Milk/Cream     Dessert     Bake     Christmas     Thanksgiving     Cranberry     Pear     Fall     Winter     Christmas Eve     Gourmet

Yield Makes 6 to 8 servings

Number Of Ingredients 18

Filling:
2 pounds firm Bartlett pears, peeled and cut into 1/2-inch wedges
1 2/3 cups fresh cranberries (6 ounces)
1 cup sugar
2 (1- by 3-inch) strips orange zest, finely chopped
1/4 cup brandy
1/4 teaspoon ground allspice
2 tablespoons unsalted butter, cut into bits
Biscuit topping:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
rounded 1/4 teaspoon salt
1 cup heavy cream, divided
1 teaspoon sugar
Accompaniment:
Citrus-Infused Custard Sauce
Special Equipment
2- to 2 1/2-quart shallow baking dish (1 1/2 - to 2-inches deep); 2-inch round cookie cutter

Steps:

  • Make filling:
  • Preheat oven to 425°F with rack in lower third. Butter baking dish.
  • Stir together pears, cranberries, sugar, orange zest, brandy and allspice in a large bowl. Transfer filling to baking dish and dot with butter.
  • Cover dish tightly with foil and bake 20 minutes.
  • Remove foil and continue to bake until cranberries burst and pears are just tender, 15 to 20 minutes more.
  • While filling is cooking, make biscuits:
  • Stir together flour, baking powder, and salt in a bowl, then add 3/4 cup plus 3 tablespoons cream and stir just until a dough forms. Gather dough into a ball and transfer to a lightly floured surface (dough will feel dense and heavy; don't worry.)
  • Gently knead dough 6 times, then pat out into an 8-inch round (about 1/3-inch thick).
  • Cut out as many rounds as possible with lightly floured cutter, transferring to a sheet of wax paper. Gather scraps and pat out once more, then cut out more rounds. (You will have about 16).
  • Carefully but quickly, top hot fruit with biscuits, arranging in 1 layer. Brush biscuits with remaining tablespoon cream and sprinkle with sugar.
  • Continue to bake cobbler until biscuits are puffed and golden, 15 to 20 minutes. Cool 15 minutes before serving and top with Citrus-Infused Custard Sauce.

LEMON CUP CUSTARD

Lemon Cup Custard image

I got this new cookbook yesterday "Baking, From My House to Yours" by Dorrie Greenspan. It's chock full of lovely recipes. I made this last night and it's wonderfully rich with just a hint of lemon flavour. My husband really enjoyed it and so did I!

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 5

2 1/4 cups whole milk
1 grated lemon, zest of
4 large eggs
1/2 cup sugar
pure lemon extract (optional) or extract (optional)

Steps:

  • Put the milk and the lemon zest in a saucepan and bring just to the boil. Remove from heat, cover and set aside. Let sit for 30 minutes in order for the lemon flavour from the zest to infuse the milk.
  • Whisk the eggs together with the sugar. Strain the infused milk through a fine sieve into a large measuring cup. (Reserve the strainer with the lemon zest for a bit later)Whisking the whole time add the infused milk to the beaten eggs a little at a time in order to keep the eggs from cooking. Strain the mixture through the reserved lemon zest in the strainer back into the pan. Stir in lemon oil if using.
