SWEET CITRUS ICED TEA

Steps:
- In a large saucepan, bring 4 cups of water just to a boil. Remove from the heat. Add tea bags; let stand for 10 minutes. Discard tea bags. , Pour tea into a large container. Stir in the sugar, lemon juice, orange juice concentrate and remaining water. Refrigerate until chilled. Serve over ice.

- Slice the yuja fruits thinly and quarter them. Leave the peel intact but remove the seeds.
- In a large bowl, dissolve the honey in the warm water, making a thick syrup.
- Add the yuja fruit slices to the honey mixture, mixing to combine to make the yuja chung (yuja marmalade).
- Keep in a closed container at room temperature for one day and then store in the refrigerator.
- To make tea, dissolve 1 spoonful of yuja chung into hot water.
- When you drink the tea, you also eat the bits and pieces of yuja fruit and rind that come your way.

- Place tea bags in a teapot; add boiling water. Cover and steep for 3 minutes; discard tea bags. Pour tea into a pitcher. Peel and section 2 oranges and 1 lemon; add to tea. Stir in the orange juice, lemon juice and honey. Cover and refrigerate for 6 hours or overnight. Cut remaining orange and lemon into slices; freeze., Just before serving, strain and discard fruit from tea. Stir in ginger ale. Serve with frozen fruit slices and ice.

GINGER CITRUS TEA
I already had a recipe for extremely spicy ginger tea, but I was craving something a bit milder this time. So, I constructed a tea out of dried ginger pieces, dried orange peel and dried lemon peel. I've seen tons of recipes similar to this that require fresh lemon/orange juice/ginger but this recipe would be perfect for someone who only keeps the dried stuff on hand (like me!). P.S. - I've listed things as teaspoons, but technically it's in a ratio such that you can make whatever quantity you want.

- Using vegetable peeler, peel rind (avoiding pith) from grapefruit, oranges and lemons. Place on rack and let dry at room temperature until brittle, about 24 hours. Break into 1/4-inch (5 mm) pieces.
- In bowl, combine grapefruit, orange and lemon rinds and tea leaves. Spoon into decorative bag or airtight jar. Makes about 35 servings.

- Thoroughly wash the lemons. Cut them in half, along the long side of the lemon. Use a spoon to scoop out the lemon flesh and transfer it into a medium-sized bowl to use later. If the lemon peel still has some pulp attached, don’t worry about it.
- Stack two pieces of lemon peel together and slice it into thin strips, as thinly as possible. You will get about 2 cups of sliced lemon peels.
- Squeeze out some juice from the lemon flesh. Remove the seeds but allow the pulp to stay. Transfer 1/4 cup of the juice to the bowl of lemon peels. Stir to mix thoroughly.
