EASY CHERRY BREAD RECIPE



Easy Cherry Bread Recipe image

A simple quick bread with maraschino cherries in every bite. Don't forget the almond cherry glaze on top!

3/4 cup granulated sugar (150 grams)
1/2 cup 2% milk
1/2 cup canola oil ((or vegetable or melted coconut oil))
1 large egg
1 teaspoon almond extract* ((or vanilla extract))
2 cups all-purpose flour (260 grams)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 jars maraschino cherries** ((10 ounces each))
1 cup powdered sugar
1 tablespoon melted butter
2 1/2 tablespoons maraschino cherry juice
1/2 teaspoon almond extract

Steps:

  • Preheat the oven to 350ºF. Spray a 9"x5" loaf pan with cooking spray, or grease with shortening, then dust with flour.
  • In a medium bowl, stir together the sugar, milk, oil, egg and almond extract.
  • In a separate bowl, combine the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
  • Drain the maraschino cherries, reserving the juice for the glaze. Coarsely chop the cherries in a food processor or with a knife. Gently fold the cherries into the batter.
  • Pour the bread batter into the prepared pan. Bake for 50-55 minutes***. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
  • To make the glaze, combine the powdered sugar, melted butter, cherry juice and almond extract in a small bowl. Whisk until it is smooth.
  • Once the bread is cool, spread the glaze on top of the bread. If you spread the glaze on while the bread is still warm, it will melt and run off.
  • Slice and serve. Store any leftovers at room temperature in an airtight container. The bread freezes well, too.

A recipe for gluten free Cherry Quick Bread or traditional cherry quick bread can be made in a loaf pan or in muffins tins. Baking with frozen cherries makes this an easy recipe for any time of year.

1/2 cup (8 tablespoons, 4 ounces) butter, softened
1/2 granulated sugar
2 large eggs, beaten
1 tablespoon vanilla extract
1 cup milk
2 cups 1 to 1 Gluten Free Baking Flour plus 1 tablespoon, separated.
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
1 cup (1/2 pound) fresh (**Or 10 ounces frozen) cherries

Steps:

  • Preheat the oven to 350 degrees F. Prepare a 9 inch loaf pan with parchment and baking spray.
  • If using frozen cherries, let them thaw in a strainer for ten minutes. Toss with one tablespoon of gluten free flour. Set aside.
  • Mix the dry ingredients of gluten free flour, salt, baking powder and nutmeg. Set aside.
  • Beat the sugar and the butter until fluffy. Add the eggs one at a time. Add the vanilla and the milk.
  • Gently fold the wet and dry ingredients together. Fold the cherries into the batter. Do not overmix.

2 cups butter, softened
3 cups sugar
5 eggs, separated
1 teaspoon vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 jars (10 ounces each) maraschino cherries, drained and chopped
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture alternately with buttermilk just until blended (batter will be thick). , In a small bowl, beat egg whites until stiff peaks form. Fold into batter. Fold in cherries and pecans., Transfer to four greased and floured 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean and loaves are golden brown. Cool for 10 minutes before removing from pans to wire racks.

2/3 cup granulated sugar
2 tablespoons cornstarch
1 can (15 oz) pitted dark sweet cherries, drained, 3 tablespoons juice reserved
1 teaspoon grated orange peel
1/2 cup orange juice
1 tablespoon unsalted butter
1 vanilla bean
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg
1 tablespoon whipping cream
2 tablespoons coarse sugar or sanding sugar

Steps:

  • In 2-quart saucepan, mix granulated sugar and cornstarch with whisk. Stir in cherries, reserved juice, the orange peel, orange juice and butter. Cut slit down center of vanilla bean; scrape out seeds. Add seeds and bean to cherry mixture. Heat to boiling; boil 1 minute, stirring constantly. Pour into shallow container. Remove and discard vanilla bean. Refrigerate until ready to assemble.
  • Meanwhile, on lightly floured surface, roll 1 pie crust to 1/8-inch thickness. With 5 1/2-inch heart-shaped cookie cutter, cut out 6 hearts. Place on ungreased cookie sheet. Repeat with second pie crust. With 1 1/2-inch heart-shaped cookie cutter, cut out small heart from center of second batch of hearts. Spread 2 tablespoons filling on each plain heart. Cover with cutout hearts so filling shows. Press edges together with fork. Refrigerate 1 hour or until firm.
  • Heat oven to 400°F. In small bowl, beat egg and whipping cream. Brush over hearts. Sprinkle with coarse sugar.
  • Bake 25 to 30 minutes or until lightly golden. Remove from cookie sheet to cooling rack; cool at least 30 minutes before serving.

½ cup vegetable shortening
½ cup milk
¼ cup cherry juice
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking powder
1 pinch salt
1 cup maraschino cherries

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Whisk together the eggs, shortening, milk, cherry juice, and vanilla extract in a bowl until evenly blended; set aside. Stir together the flour, sugar, baking powder, and salt in a separate large bowl; make a well in the center of the flour mixture. Pour the cherry juice mixture into the well and stir just until combined. Fold in the cherries. Pour the batter into a loaf pan.
  • Bake in the preheated oven until golden and the top springs back when lightly pressed, about 1 hour. Allow to cool completely on a wire rack before cutting to serve.

3/4 cup maraschino cherry, chopped
1/2 cup maraschino cherry juice
2 tablespoons cornstarch
1 tablespoon reduced fat margarine
1/2 cup walnuts, chopped
1/2 teaspoon almond extract
16 ounces hot roll mix
1 tablespoon granulated sugar
1 cup hot water, 110-120 degrees
2 tablespoons reduced fat margarine, softened
1 whole egg
1 cup powdered sugar
3 tablespoons skim milk

Steps:

  • To prepare filling, combine cherries, cherry juice, cornstarch, 1 tablespoon margarine, walnuts, and almond extract in a saucepan. Cook over medium heat until very thick and clear, stirring constantly. Remove from heat and set aside.
  • Prepare a baking sheet with cooking spray; set aside. Prepare a six ounce custard cup with cooking spray; set aside.
  • To prepare bread, combine hot roll mix, foil packet, granulated sugar, hot water, remaining margarine, and egg in a mixing bowl. Mix well.
  • Onto a lightly floured surface, shape dough into a ball. Knead five minutes, or until smooth.
  • Cover and let rest five minutes.
  • On a lightly floured surface, roll dough into a 18 x 12" rectangle. Spread filling over dough within half inch of edges.
  • Starting with 18 inch side, roll up tightly, pressing edges to seal.
  • Place seam side down on prepared baking sheet. Join ends to form ring, placing prepared custard cup bottom side up in center of ring.
  • Pinch ends of dough to seal.
  • WIth scissors or sharp knife, cut from outside edge of ring to within half inch of inside of ring, making fourteen cuts 1 1/4 to 1 1/2 inches apart. Turn two cut sections on their sides in opposite directions to form heart shape. Repeat to make seven hearts.
  • Cover and let rise 30 minutes on wire rack set over large pan to which hot water has been added.
  • Preheat oven to 375. Bake for 35 minutes, or until golden brown.
  • Carefully remove custard cup. Cool completely.
  • To prepare glaze, combine powdered sugar and milk. Mix until drizzling consistency. Drizzle over bread, outlining hearts.
