CINNAMON-SUGARED WALNUTS

2 cups walnut pieces
Canola oil, for coating the foil
2 tablespoons light corn syrup
2 tablespoons maple syrup
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil.
  • Spread the walnuts out on the prepared baking sheet and roast for 5 minutes. Let cool, then transfer to a bowl. Lightly coat the aluminum foil with canola oil.
  • In a second bowl, combine the corn syrup, maple syrup, brown sugar, cinnamon and salt. Stir to combine, breaking up any lumps of cinnamon. Add the walnuts and toss to coat thoroughly. Pour the walnuts onto the oiled baking sheet.
  • Bake, stirring occasionally, until the walnuts are golden brown, 12 to 15 minutes. Remove from the oven and let cool. Sprinkle over desserts, or serve with cheese or as a snack.

1 cup margarine, softened
1 cup sour cream
1 large egg yolk, room temperature
2-1/2 cups all-purpose flour
Dash salt
FILLING:
1 cup finely chopped walnuts
1 cup sugar
2-1/2 teaspoons ground cinnamon
Confectioners' sugar

Steps:

  • In a large bowl, beat margarine and sour cream until blended. Add egg yolk; mix well. Combine flour and salt; add to margarine mixture and mix well (dough will be sticky). Cover and refrigerate for 4 hours or overnight., Preheat oven to 350°. Divide dough into eighths. On a well-floured surface, roll each portion into a 10-in. circle. Cut each circle into 8 triangles. Combine the walnuts, sugar and cinnamon; sprinkle over each triangle. , Roll up triangles from the wide ends and place point side down 1 in. apart on parchment-lined baking sheets. Bake until lightly browned, 20-22 minutes. Remove to wire racks to cool. Dust with confectioners' sugar. Store in an airtight container.

Well, here it's the third week in July and it's raining and we're experiencing unseasonably cool temps. What's a Cookgirl to do stuck inside the house all day? A: Bake cookies! This recipe is from the Delicious Living magazine and elaborated by me to give the cookies a Middle Eastern flavor. Gluten-free, egg and dairy free-easy! The barberries, cardamom and orange blossom water were all my addition.

1 cup walnut halves, and pieces
5 dates, pitted and roughly chopped (I used medjool)
2 tablespoons barberries (Optional-but it gives the cookies a little bit of color and an interesting contrast of flavors)
1 tablespoon grapeseed oil (Increased from 1 teaspoon. The mixture required more in order to form into a ball.)
1 teaspoon vanilla extract (reduced from 1 1/2 teaspoons)
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/2 teaspoon orange blossom water
1 pinch sea salt

Steps:

  • Preheat oven to 350 degrees.
  • Place walnuts, dates (and barberries if using) in a small food processor and PULSE until coarsely ground.
  • PULSE in oil, vanilla, cinnamon, cardamom, orange blossom water and salt. Stop the machine from time to time and scrape down the sides of the bowl to help the mixture to blend well and form into a ball properly.
  • Continue to pulse until mixture begins to form a ball.
  • Line a baking sheet with parchment paper.
  • Scoop dough (I used a small, oiled cookie scoop), 1 tablespoon at a time, onto prepared baking sheet, forming into balls; flatten slightly.
  • Bake for 6-8 minutes, until firm.
  • Cool on baking sheet.

1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 1/2 teaspoons vanilla extract
2 eggs
1 1/2 cups chopped pecans or 1 1/2 cups walnuts
pecans (optional) or walnut halves (optional)

Steps:

  • Preheat the oven to 350°F
  • Sift together flour, soda, salt and cinnamon. In a large bowl, cream together butter, sugars and vanilla. Add eggs and beat well. Add flour mixture and beat well. Mix in nuts. Chill.
  • Drop by rounded tablespoons onto baking sheet. Press a pecan or walnut half into the center of each cookie if desired. Bake 9 to 11 minutes.
