1 cup water (plus 2 tablespoons)
1/4 cup butter (melte)
4 tablespoons sugar
1 large egg
1 teaspoon kosher salt
4 cups all purpose flour
2 teaspoons active dry yeast
1⁄4 cup butter (softened, not melted)
1⁄4 cup dark brown sugar (packed)
1⁄2 large egg ((beat 1 large egg and then measure out half. Use the rest in your scrambled eggs) )
2 teaspoons honey
1 tablespoon all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 cup raisins (if you like more add an addition 1/4 cup)
1 cup apple pie filling (Lucky Leaf brand recommended)
1/4 cup cinnamon baking chips (OR 1⁄2 teaspoon ground cinnamon)
1/4 teaspoon salt
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup butter (cool, should be softened)
2 teaspoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup powdered sugar
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1/8 teaspoon lemon extract
2 teaspoons milk

Steps:

  • Put the water, butter, sugar, egg, and salt in the bowl of your stand mixer. Stir briefly with a whisk. Add the flour, and then add the yeast on top. Mix on low speed with the dough hook until a shaggy dough forms, about 1 minute. Increase speed to medium and knead for 10 minutes. The dough will be soft, very shiny, and supple. It will also be very soft. Don't worry about that--we want a soft dough. Leave the dough in the mixer bowl, and scrape it into a ball, spray with pan spray, and cover with plastic wrap. Let rise in a warm spot until doubled in size, about 1 1⁄2 hours.
  • Using a whisk or a hand mixer, mix all the ingredients except the raisins together until smooth. Reserve the raisins for assembly.
  • Using a chef knife, or a mini-prep, chop or pulse the apples until the pieces are about the size of small peas. You don't want it completely smooth like applesauce. Think more like salsa. Stir in the salt and cinnamon chips, if using. If not using cinnamon chips, stir in the ground cinnamon and set aside.
  • Using 2 forks, a pastry blender, or your fingers, mix all the streusel ingredients together until sandy with little clumps of butter. Set aside.
  • Sprinkle a bit of flour on top of the dough and then punch it down to press out the gases. Turn the dough out onto a lightly floured surface, and flour the top of the dough lightly as well. Roll dough into a rough rectangle about 18" x 10". Spread the Cinnamon mixture evenly over the surface of the dough. Sprinkle on the raisins, if using. Starting from a long end, roll up the dough into a cylinder as if you were making cinnamon rolls. Pinch the seam to seal. Cut the dough into 9 equal pieces. Cut each of these pieces into 3 pieces for a total of 18 "cinnamon rolls."
  • Line 2 jumbo muffin tins with jumbo muffin liners (you will only need to line 3 cavities in the second pan since this recipe makes 9 muffins). For each muffin, you'll be using 3 of the "cinnamon rolls." Cut the first in 4-5 pieces and put them in a lined muffin cavity. Top with a spoonful of apple filling. Repeat twice more with the second and third "cinnamon rolls." When finished, you'll have a muffin with 3 layers of cinnamon roll and 2 of spiced apple. You will be filling the muffin cups almost to the tops.
  • Continue making muffins with the rest of your dough and apple filling. Evenly sprinkle on the streusel, dividing it evenly among the 9 muffins. Cover muffins and let rise in a warm place until puffy, about 45 minutes. While muffins are rising, place a rack in the center of your oven, and preheat to 350 F. Bake until golden brown and well risen. The internal temperature of the muffins should be about 195F, give or take 5 degrees. This will take about 30 minutes. If the muffins seem to be browning too quickly, loosely tent with foil. Let the muffins cool for 10 minutes and then remove muffins to a rack to cool completely. Once cool, use a fork to drizzle each muffin lightly with the glaze.
  • Whisk the ingredients together until smooth. You can wait until the muffins are cooling after baking to do this part.

Inspired by my love of Hot Cross Buns, this easy cinnamon raisin bread is the perfect recipe for Easter. Soft, fluffy and perfectly spiced.

3/4 cup warm water
3/4 cup warm milk
10 g (2tsp) instant yeast
2/3 cup sugar
3-4 cups flour ((any white flour can be used: Cake, all purpose or bread) )
1 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
½ tsp ground ginger
1/3 cup butter / oil ((room temperature butter) )
1 cup raisins
1 egg (beaten (for egg wash) (optional))

Steps:

  • Whisk water, milk, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, spiced and salt.
  • With the mixer running, add the yeast mixture and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth. Add the raisins.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic wrap or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Press any raisins that have fallen out of the dough into the center. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Cover again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush with beaten egg and place in the oven and allow to bake for 30-45 minutes until golden brown and risen. If the bread browns too quickly, loosely cover with a piece of foil and continue baking. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove from the oven, brush with melted butter (optional) and allow to cool before slicing.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
2 cups warm milk (110° to 115°)

5-3/4 to 6-1/4 cups all-purpose flour
2 cups raisins
1 tablespoon ground cinnamon

GLAZE:
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, 1/3 cup sugar, oil, salt and 2 cups flour. Beat until smooth. Add raisins and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. On a lightly floured surface, divide in half. Roll each into a 15x7-in. rectangle. 1 ½ cups milk
1 cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
3 eggs
½ cup white sugar
1 teaspoon salt
½ cup margarine, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
¾ cup white sugar
2 tablespoons ground cinnamon
2 tablespoons butter, melted

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
  • Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
  • Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick. Moisten dough with 2 tablespoons milk. Mix together 3/4 cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

STARTER:
1 c 95-105 degree water
2 tsp active yeast
1 c 4 7/8 ounces bread flour (or all purpose)
REMAINDER
3/4 c 95-105 degree water
4 tsp active yeast
3 Tbsp honey or agave nectar
1/4 c plus 1 teaspoon butter crisco
4 3/4 c 23 ounces bread flour (or all purpose)
4 tsp hodgson's vital wheat gluten
1 Tbsp salt (regular or kosher)
2-3 tsp ground cinnamon
1 1/4 c raisins, plumped & squeezed
5 oz cinnamon chips (half the bag)

Steps:

  • 1. For the starter: in a regular medium bowl, add the first three ingredients, whisk until only small lumps. Cover and let stand for 30 minutes. If desired, this part can be done the day before. Let sit on counter for an hour or two at most and then put in the refrigerator overnight to develop flavor.
  • 2. For the dough: In the stand mixer bowl, using the bread hook, add the remainder of the ingredients (except the cinnamon chips), add ALL of the starter. Mix until the dough has nearly cleaned the sides of the bowl.
  • 3. Add the cinnamon chips and mix again until dough is well formed.
  • 4. While dough is mixing, coat two med-large bowls with Pam or other cooking spray. Set aside. You can knead the dough by hand more if you choose but if you used a stand mixer, it's not necessary.
  • 5. Pinch dough into two fairly equal parts. Form into balls, creating smooth top and pinching the bottom seams a little. Place in bowls. Cover with a warm-hot damp towel and another dry one. Let rise 30 minutes.
  • 6. Preheat oven to 400 degrees. For the 2nd rise, coat two large loaf pans with Pam or other cooking spray. Turn the first bowl out into your hand. Gently fold under, keeping the smooth part on top and place seam side down in loaf pan. Do not punch down, just fold into an oval. Repeat with 2nd loaf. Refresh the damp hot towel and cover with that and the dry one again. Let rise 30 minutes.
  • 7. With a sharp knife, cut two diagonal slashes in the top. Spray with water and bake @ 400 degrees for 30 minutes. Remove from oven, brush on butter until top is shiny. Let cool about 10 minutes and remove to towel or baking rack, on it's side. If using a towel, flip sides (so bottom does not get soggy) every 10-15 minutes until cool.

Steps:

  • Preheat oven to 350*.
  • Brush a 2 quart casserole dish or 6 ramekins with melted butter or spray with cooking spray.
  • Combine raisins and orange juice in a bowl and allow to soak for 15 minute
  • Place raisin bread cubes in a large bowl. Add melted butter and toss to coat.
  • Spread buttered bread cubes on a cookie sheet and bake until golden brown. Allow to cool.
  • Evenly distribute cooled bread cubes in the casserole dish or ramekins.
  • Top bread cubes with soaked raisins so they are evenly distributed.
  • In a medium bowl, whisk milk, eggs, sugar, salt and vanilla, stirring until sugar is completely dissolved and mixture is smooth.
  • Pour mixture over bread cubes and refridgerate at least 15 minute
  • Place in oven. If using ramekins, place on cookie sheet first. Bake until center is set, approximately 45 min for casserole or 30 min for ramekins.
  • Remove from oven and cool 15 min before serving.

You can use any white bread recipe to make any swirl breads listed below. The cinnamon raisin version is a classic, inspired by a recipe from James Beard. The sherry gives an unusual complexity to the sweet raisins and brown sugar, and most of the alcohol is cooked off while the mixture simmers. Feel free to use apple cider instead. This recipe makes two loaves, one to eat right away, preferably warm from the oven, or toasted and buttered the next day. Freeze the other loaf and use it to make what is arguably the best French toast imaginable.

2 1/4 teaspoons/7 grams active dry yeast (1 package)
1 1/2 cups/355 grams lukewarm milk
1/3 cup/67 grams granulated sugar

Steps:

  • Press down dough with your hand to expel the air. Divide dough in half and roll one half into a 16-x-8-inch rectangle. Brush with some of the melted butter. Drain raisins and mix with sugar and cinnamon; scatter half of the mixture over the dough and, starting with the shorter side, roll up tightly into an 8-inch log, tucking the ends under. Place roll seam-side down in a loaf pan and brush top with melted butter; dust with cinnamon sugar if desired. Repeat with second dough half.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Meanwhile, heat oven to 400 degrees. This is the best Cinnamon Raisin Bread I've ever had! It really has a great consistency and smells WONDERFUL while baking. I made this for the first time about a year ago and since it makes 3 loaves, I gave one to my neighbor. Now she asks for it constantly and since it is so fun to make, I oblige her, plus I get to keep the other 2 loaves!

1 1/2 cups milk
1 cup warm water (must be between 110-115 degrees)
2 (1/4 ounce) packages active dry yeast
3 eggs
1/2 cup white sugar
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
1 cup white sugar
3 tablespoons ground cinnamon
2 tablespoons butter, melted (approx.)

Steps:

  • Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.
  • Remove from heat.
  • Let cool until lukewarm, about 120-125 degrees.
  • Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make a stiff dough.
  • Knead the dough on a lightly floured surface for a few minutes until smooth.
  • Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.
  • Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on. It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.
  • Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.
  • Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.

  • Remove from oven and let cool on rack.
  • Take melted butter and spread over tops of loaves.
  • After about 20 minutes, lay loaves on their sides and remove from pans.
  • Allow to cool before slicing.
