Steps:
- In a bowl, mix 1 1/2 cups flour, 3/4 cup light-brown sugar, 1/3 cup granulated sugar, and 1/4 teaspoon each salt and cinnamon.
- Cut 1 1/2 sticks chilled unsalted butter into pieces. With your hands, work in butter pieces, until large clumps form. Divide mixture in half; freeze in plastic storage bags.
CINNAMON STREUSEL TOPPING
This cinnamon streusel topping is deliciously buttery and sweet, and is the perfect topping for your favorite pies, muffins, and cakes.

- In a large bowl, whisk together the flour, brown sugar, granulated sugar, ground cinnamon, and salt.
- Pour the melted and cooled butter into the dry ingredients and gently stir together with a fork to make some nice, big crumbles. You should end up with a bowl of what looks like wet sand with some pea-sized chunks. Be careful not to over-mix! You want to leave some of those buttery chunks intact.
- Use on top of your favorite muffins, cakes, and pies!!

CINNAMON BUTTER CRUMB FILLING

Steps:
- This is hard to mix by hand, so I recommend using a mixer. Using the paddle attachment, cream the butter and sugar together on medium-high speed until the butter disappears into the sugar. Add the cinnamon, flour, and salt and mix on low speed until all of the ingredients are evenly distributed.
- If you want richer, softer Danish dough, when making the détrempe, replace 6 tablespoons (3 oz / 85 g) of the water with 2 eggs (3.5 oz / 99 g).
CINNAMON SUGAR CRUMB TOPPING
Steps:
- In a large bowl, mix together the flour, brown sugar, cinnamon, and salt. Using a pastry blender, incorporate the butter by "cutting it in" to the flour until the butter forms small, pea-size pieces.
- Pair this topping with a traditional pastry pie shell and the filling of your choice. Once the filling has been placed in the pie shell, sprinkle the cinnamon sugar crumb topping evenly over the filling until it is completely covered. Bake as directed.
