Steps:
- Cream butter and sugar.
- Beat in eggs, one at a time.
- Mix in mashed banana.
- Sift dry ingredients together; stir into banana mixture, add nuts.
- Pour into greased 9x5x3 loaf pan.
- bake at 350 for 1 hour, or until a toothpick inserted into loaf comes out clean.
- While cake is warm, pour melted butter over top and sprinkle with cinnamon sugar mixture.

Steps:
- For the banana bread:.
- Preheat oven to 180ºC and line a loaf tin with baking parchment and pour the mixture inches.
- Whisk dry ingredients, then stir in all the wet ingredients using only ½ tbs maple syrup and mix until smooth. Alternatively throw everything into a food processor and blend until smooth.
- Decorate the top with slices of excess banana and drizzle over the other ½ tablespoon of maple syrup to make a gloss.
- Bake at 180ºC for 50 minutes.
- Cool on a rack completely before turning out of the tin, slicing and eating.
- *Tip - You could also top this with walnuts, goji berries, pumpkin seeds - or anything else that takes your fancy!*.
- For the berry chia jam:.
- Mash the berries or blend them in a food processor.
- Mix in the chia seeds,1 tbsp warm water and 1 teaspoon of the honey (and the vanilla extract and lemon juice, if using). Stir well to stop clumps forming or make it straight in the jar and shake to mix.
- Keep the chia jam sealed in a jar in the fridge to set for at least an hour or until needed.
- Taste and stir in a little more honey, if needed.

CINNAMON SUGAR BANANA BREAD
Another banana bread recipe. This one is so good I just had to post it! I got the original recipe from my Grandma but I've changed it up a bit for my family's tastes.

Steps:
- Preheat oven to 350°F.
- Mix 1/4 cup sugar and 1 t cinnamon together.
- Grease a loaf pan.
- Dust greased pan with cinnamon sugar mixture. Save extra mixture for top of batter.
- Cream together 1 cup sugar and butter. Add eggs, one at a time, until combined.
- Add bananas, vanilla and buttermilk until combined.
- In a seperate bowl sift dry ingredients together.
- Add dry ingredients into banana mixture.
- Stir just to combine. Don't overmix.
- Fold in pecans and chocolate chips if using.
- Pour batter into prepared pan.
- Sprinkle with 1-2 tablespoons of remaining cinnamon sugar mixture.
- Bake for 50-60 minutes.
- Let cool in pan 5 minutes.
- Remove to a wire rack to cool.
- Enjoy!

This banana bread comes out moist and not too dense! The mayonnaise instead of oil/butter makes for a lighter tasting banana bread. Not only that, but it does not leave the fingers greasy! Enjoy :)

- Whisk eggs, mayonnaise and bananas until blended. Add vanilla and stir.
- Sift flour, baking soda, baking powder, cinnamon, nutmeg and salt in separate bowl.
- Stir brown sugar into dry ingredients until blended.
- Combine dry ingredients into banana mixture and stir until just moistened (important to not overstir!).
- Fold in walnuts.
- Bake 1 hr - 1hr 15 minutes Or until toothpick inserted in centre comes out clean.

Steps:
- Mix bananas, walnuts, lemon juice and powdered pectin in large kettle. Stir while bringing to a full rolling boil.
- All at once add sugars. Stirring continuously, heat until full rolling boil. Continue to heat 1 minute.
- Fill jars to 1/4 inch of top; seal with two-part lid and ring.
- Boiling water bath for at least 10 minutes.
- Makes about 3 pints.

- Heat oven to 350 degrees.
- In a large mixing bowl cream together the butter and sugar. Set aside.
- Add in eggs, bananas, and vanilla. Mix until combined.
- In a separate bowl mix the flour, baking soda, salt, and cinnamon.
- Add the flour mixture along with the buttermilk to the brown sugar mixture and stir until blended. Do not over mix.
- Place half of the batter into the 2 pans. So each pan has about the same amount.
- In another small bowl combine the cinnamon and sugar.
- Sprinkle the loaf pans with the cinnamon and sugar mixture. Swirl the mixture in with a knife.
- The place the other half of the batter over the top of the cinnamon/sugar mixture.
- Prepare the streusel topping by mixing the ingredients together.
- Sprinkle the crumble topping over the batter.
- Bake for about 43-45 minutes or until done in middle.

- Grease loaf pan and set aside. Mash bananas in a small mixing bowl with a fork. Set aside. Stir together flour, baking soda, baking powder, salt, cinnamon, and chia seeds in a large mixing bowl.
