Both of our daughters received ribbons for this recipe at the 4-H fair. This bubble ring is perfect for serving a crowd at breakfast. -Lois Schlickau, Haven, Kansas

Yield 20 servings.

Number Of Ingredients 14

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1/2 cup warm whole milk (110° to 115°)
1/3 cup butter, melted
1/3 cup sugar
2 large eggs, room temperature
1 teaspoon salt
3-3/4 to 4 cups all-purpose flour
FILLING:
3/4 cup sugar
1 teaspoon ground cinnamon
6 tablespoons butter, melted, divided
2/3 cup apricot preserves
3/4 cup finely chopped walnuts

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, eggs and salt; mix well. Add 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , For filling, combine the sugar and cinnamon in a shallow bowl; set aside. Punch dough down; cover and let rest for 10 minutes. Pour 2 tablespoons melted butter into bottom of greased 10-in. fluted tube pan., On a lightly floured surface, divide dough into 20 pieces and form into balls. Dip each ball into remaining melted butter, then roll in cinnamon-sugar. Place 10 balls into prepared pan. Spoon half the apricot preserves between the balls; sprinkle with half the walnuts. Repeat. Cover and let rise until doubled, about 45 minutes. , Bake at 350° until browned, 30-35 minutes. Cool for 5 minutes before inverting onto a serving plate. Serve warm.

This coffee cake is a favorite of mine. It's attractive, delicious and cuts like a dream. Sometimes I use convenient canned pie filling when I want a different flavor and I'm pressed for time. -Dot Christiansen Bettendorf, Iowa

Number Of Ingredients 18

4-1/4 cups all-purpose flour
1/4 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup 2% milk
1/4 cup water
1/4 cup butter, cubed
2 large eggs
FILLING:
12 ounces dried apricots, diced
2 cups water
6 tablespoons brown sugar
4 teaspoons orange juice
1/2 cup chopped pecans
GLAZE:
1 cup confectioners' sugar
2 to 3 tablespoons 2% milk

Steps:

  • In a large bowl, combine the flour, sugar, yeast, salt and nutmeg. In a small saucepan, heat the milk, water and butter to 120°-130°. Add to dry ingredients; beat until moistened. Beat in eggs until smooth. Cover and refrigerate overnight., In a large saucepan, combine apricots and water. Cook over medium heat for 30 minutes or until the water is absorbed and apricots are tender. Remove from the heat; stir in the brown sugar, juice and nuts. Cool., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll one portion into an 18x12-in. rectangle. Spread half of filling over rectangle to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal., Place seam side down on a greased baking sheet; pinch ends together to form a ring. Repeat for second ring. With scissors, cut each from outside edge two-thirds toward center of ring at 1 in. intervals. Separate strips slightly: twist so filling shows, slightly overlapping with previous piece. Cover; let rise in a warm place until doubled, about 1 hour., Bake at 375° for 25-28 minutes or until golden brown. Remove from pans to wire racks to cool. , In a small bowl, combine confectioner's sugar and enough milk to achieve desired consistency; drizzle over warm tea rings.

I submitted this pretty bread to a 4-H competition more than 12 years ago and was named Grand Champion. Since then, it's earned honors for my Grandma Catherine and six of my cousins. We consider this a true family recipe!

Yield 1 ring loaf.

Number Of Ingredients 16

3-1/2 cups all-purpose flour
2 tablespoons sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
3/4 cup milk
1/4 cup butter
2 eggs
FILLING:
2 tablespoons butter, melted
1/4 cup sugar
2 teaspoons ground cinnamon
1 egg yolk
2 tablespoons water
1/2 cup apricot preserves
Vanilla Glaze
Slivered almonds, toasted

Steps:

  • In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. In a saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat until moistened. Add eggs; beat on low speed for 30 seconds. Beat on high for 3 minutes. Stir in remaining flour; beat well. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. On a lightly floured surface, roll into a 16-in. circle; place on a greased baking sheet (circle with be larger than the baking sheet). Place a glass in the center of dough. Brush dough with melted butter. Combine the sugar and cinnamon; sprinkle over butter. Cut from the glass to the outside edge, forming 16 wedges. Remove glass. , Place one slice over the top of the next slice, cinnamon-sugar sides together; pinch edges to seal. Continue around circle until there are eight strips. Twist each strip four to five times. Loop to the center to make daisy petals. Cut off one roll to place in the center. Cover and let rise until doubled, about 1 hour. , Beat egg yolk and water; brush over ring. Bake at 375° for 15-20 minutes. Remove from pan to a wire rack to cool. Top with preserves. Drizzle with Vanilla Glaze. Sprinkle with almonds.

This is a hand-shaped, filled yeast bread that my 2-year-old daughter loves to help prepare. The dough can be made ahead and refrigerated, then baked in the morning. Sprinkle chopped, toasted almonds over the ring if you wish. Nuts can also be added to the filling along with the raisins.

1 cup milk
1 egg, beaten
1 tablespoon butter, room temperature
3 tablespoons white sugar
½ teaspoon salt
3 ¼ cups bread flour
¾ teaspoon active dry yeast
2 tablespoons butter, softened
2 teaspoons ground cinnamon
¾ cup packed brown sugar
½ cup raisins
1 cup confectioners' sugar, sifted
½ teaspoon almond extract
1 tablespoon milk, or as needed

Steps:

  • In a bread machine, put milk, egg, butter, sugar, salt, bread flour, and yeast in the order suggested by the manufacturer. Select the Dough cycle and press Start. When dough is mixed, transfer to a greased bowl; cover with plastic wrap and let rise until doubled, about 1 to 1 1/2 hours.
  • Grease 2 baking sheets or line them with parchment paper; set aside.
  • Divide dough in half. Roll each piece out into rectangles about 12x16 inches. Spread each dough rectangle with 1 tablespoon softened butter. In a small bowl, combine 2 teaspoons ground cinnamon, 3/4 cup light brown sugar, and 1/2 cup raisins.
  • Sprinkle cinnamon mixture onto buttered dough. Roll them up jelly-roll fashion, along long side. Pinch edges to seal. Stretch and twist into rings, pinching ends to seal. Place them seam-side down onto prepared baking sheets. Using clean scissors, cut 2/3 way of the way through the loaf at about 1-inch intervals. Spread each cut slightly. you wish to

2 packages (1/4 ounce each) active dry yeast
1/3 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1 cup butter, melted

1/2 cup sugar
1 teaspoon salt
5-1/2 to 6-1/4 cups all-purpose flour
FILLING:
1 cup butter, softened
1/2 cup packed brown sugar
1 tablespoon ground cinnamon
1-1/2 cups chopped pecans
ICING:
1-1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
2 to 3 tablespoons milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, butter, eggs, sugar, salt and 3 cups flour; beat until smooth. APRICOT ALMOND CINNAMON JAM



Apricot Almond Cinnamon Jam image

I just made this up. I wanted something different than the usual apricot jam so I added some almond extract and cinnamon. When you open the jar you can smell the almond but it isn't overpowering. They both are mostly a background taste. It is a softer jam but not syrupy. Great on bread with peanut butter. UPDATE: It did jell up after about a month.

5 cups apricots, chopped
1 (57 g) box Certo, pectin crystals
5 cups sugar
2 teaspoons almond extract
1/8 teaspoon cinnamon
1/4 teaspoon butter or 1/4 teaspoon margarine

Steps:

  • Pit, do not peel ripe apricots. Finely chop or pulse in food processor.
  • In a large saucepan stir together prepared fruit and Certo Crystals.
  • Bring to a boil over high heat.
  • Add all the sugar, almond extract, cinnamon and butter.
  • Return to a hard boil for 1 minute.
  • Remove from heat. Stir and skim any foam to prevent floating fruit. Pour into warm sterilized jars to 1/4 inch from rim. Cover with lids and screw rings on tightly.
  • Notes: I process my jam in a boiling water bath, for 5 minutes, to ensure the seals. One year I didn't and had to throw out a lot of jam because the seals failed.
  • To sterilize I wash and rinse jars, lids and rings. I put the jars and rings on a cake pan in a 225°F oven before I start. I simmer the lids in water.
  • Times are a estimate; it took about 1/2 hour from start to finish.
