MOTHER'S CINNAMON APPLE RINGS

This is my mother-in-law' Janice Williams' recipe. These are a festive side for holiday meals. We make them at Christmas and Valentines. The kids love them.

4 apples, peeled and cored
1/4 c sugar
2 c water
1/2 c red cinnamon candies (red hots)

Steps:

  • 1. In a large skillet, combine sugar, water and candies.
  • 2. Stir over medium heat until sugar and candies dissolve.
  • 3. Cut apples into 1/2 inch thick rings. Add apple to the syrup in skillet.
  • 4. Simmer gently until transparent but not soft, turning occasionally. about 20 minutes
  • 5. Cool in syrup.

SPICED APPLE RINGS

Nostalgic for some tasty, old-fashioned treats? Start with spiced, candied apple rings.

5 pounds of 2 ½ inch diameter apples
8 cups of water and 2 Tbsp of vinegar
4 ½ cups of sugar
2 ¼ cups water
⅓ cup red hot cinnamon candies
½ cup cider vinegar
1 lemon, sliced
1 Tbsp whole cloves
1 Tbsp whole allspice berries
½ Tbsp ground mace

Steps:

  • Peel and core the apples. Slice into ½ inch rings. Add apple rings to a large pot filled with the 8 cups of water and 2 Tbsp vinegar to prevent the apples from browning.
  • In another large pot combine the remaining ingredients.
  • Bring to a boil over medium heat. Be sure to stir almost constantly so the sugar doesn't burn. Reduce heat and let simmer 3-5 minutes (the candy should be dissolved by this point).
  • Drain the apple rings and add to the syrup. Gently stir the apple rings into the syrup and simmer for 5 minutes.
  • Fill 4-5 clean, hot, pint canning jars with the apple rings. Remove the lemon slices from the syrup.
  • Pour the syrup over the rings leaving ½ inch headspace. Wipe the jar lips with a moist paper towel, add lids, and process in a water bath canner for 10 minutes.

12 large cucumbers - peeled, seeded, and quartered lengthwise
1 cup pickling lime (calcium hydroxide)
1 gallon water
1 gallon cold water, or as needed to cover
1 ¾ cups white vinegar, divided
1 ¼ cups water, divided
12 ½ ounces cinnamon red hot candies
1 ½ teaspoons red food coloring
½ teaspoon alum
1 ¼ cups white sugar
4 (4 inch) cinnamon sticks
6 pint-sized canning jars with rings and lids:

Steps:

  • Put cucumber spears in a large container. Stir pickling lime into 1 gallon water in a large pitcher until the lime is dissolved; pour over the cucumbers. Refrigerate for 24 hours.
  • Drain cucumbers and rinse well; return to large container. Pour enough cold water over the drained cucumbers to cover. Soak at least 3 hours; drain. Transfer cucumbers to a large pot.
  • Stir 1 1/4 cup vinegar and 1 1/4 cup water together in a bowl; add cinnamon red hot candies. Set aside to soak, stirring occasionally.
  • Stir 1/2 cup vinegar, red food coloring, and alum together in a bowl until alum is dissolved; pour over the cucumbers. Put a lid on the pot, place the pot over medium heat, and bring the water to a boil. Reduce heat to low and simmer for 2 hours; drain and return cucumbers to the pot.
  • Pour cinnamon candy mixture into a saucepan; add sugar and cinnamon sticks. Bring the mixture to a boil; cook and stir until the candies and sugar are dissolved completely into a syrupy liquid. Pour the liquid over the drained cucumbers. Refrigerate 8 hours to overnight.
  • Drain liquid from the cucumbers into a heavy saucepan; bring to a boil and pour again over the cucumbers. Refrigerate 24 hours.
  • Drain liquid again from the cucumbers into a heavy saucepan; bring to a boil and pour again over the cucumbers. Refrigerate another 24 hours.
  • Heat cucumbers and syrup to a boil.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack cucumbers into the hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings. Refrigerate until chilled before serving.

I gave a couple of jars of these to a friend from India. She loved them, but couldn't figure out what they were. The color is distinct and pickling really changes the texture of the cucumber. A very colorful addition to the pickle platter.

7 lb cucumbers, halved, peeled, seeded and sliced into 1/2-inch slices
1 c pickling lime
STEP 2
1 vinegar
1 large bottle red food coloring
1 tsp alum
water to cover
STEP 3
2 c vinegar
7 c sugar
8 stick cinnamon
1 small package cinnamon red hots (candy)

Steps:

  • 1. Soak prepared cucumbers in lime mixed with 1 gallon of water for 24 hours. Drain and rinse with ice water. Cover and let stand for 3 hours draining on an old sheet.
  • 2. Mix 1 cup vinegar, food coloring, alum and enough water to cover and simmer for 2 hours. Drain and throw away.
  • 3. Mix 2 cups vinegar and 2 cups water, sugar, cinnamon sticks, and red hots. Pour over cucumbers and let stand for 24 hours.
  • 4. Drain and save liquid. Bring liquid to a rolling boil. Pack cucumbers in jars and fill with boiling liquid. Seal jars and process in hot water bath for 15 minutes.

5 cooking apples (medium to large)
2 cups sugar
2 cups water
1/2 teaspoon red food coloring (optional)
2 -3 sticks cinnamon, about 3 inches long

Steps:

  • Wash, and peel apples (peeling them is optional).
  • Cut each apple into 1/2-inch thick rings.
  • Use an apple corer to remove cores or remove seeds and cores after cutting into rings.
  • Combine sugar, water, food coloring (if using) and cinnamon sticks in a large skillet.
  • Stir over moderately low heat until sugar is dissolved.
  • Cook 10 minutes over medium heat.
  • Arrange apple rings in syrup.
  • Cook, basting frequently with syrup in skillet, until apples are tender, about 6 to 10 minutes.
  • Remove apples from syrup and use as garnish or serve in syrup as a side dish.
  • Makes 16 apple rings, serving size is two-apple ring.

Declicious sweet, spicy pickles. Made with cucumber, but tastes like cinnamon apples. You will need canning jars and lids for preserving these.

2 gallons cucumbers, peeled, cored and cut into 1/2-inch rings
2 cups pickling lime
8 1/2 quarts water
1 cup vinegar
1 ounce red food coloring
1 tablespoon alum
3 1/2 cups water
3 1/2 cups vinegar
11 cups sugar, divided
12 ounces red-hot candies
8 cinnamon sticks

Steps:

  • Day 1:.
  • Combine cucumbers, pickling lime, and 8 1/2 quarts of water in a large, non-aluminium pot. Let soak for 24 hours.
  • Day 2:.
  • Remove pickles from lime water. Rinse 3-4 times until water runs clear. Put pickles in ice water and soak 3 hours. Drain. Combine vinegar, food coloring, and alum and simmer in a large pot. Add pickles and enough water to cover. Simmer for 2 hours. Do not boil. Drain pickles and discard mixture. Combine remaining ingredients less one cup sugar and bring to a boil. Pour over pickles. Let stand 24 hours.
  • Day 3:.
  • Drain mixture, but do not discard. Add remaining cup of sugar and bring to a boil. Pout over pickles. Let stand 24 hours.
  • Day 4:
  • Drain mixture, but do not discard. Bring to a boil. Pack pickles in jars. Pour mixture over pickles and seal jars.

2 gallons prepared cucumbers, peeled,ends removed,cored and cut into rings or sticks (measure after slicing)
8 1/2 quarts water
2 cups pickling lime
1 tablespoon alum
2 cups vinegar
2 cups water
1 1/2 ounces red food coloring
10 cups sugar
6 cinnamon sticks
8 -10 ounces red cinnamon candies

Steps:

  • Prepare the cucumbers: peel, removed ends, core, and cut into rings or sticks.
  • Combine water and lime.
  • Soak prepared cucumbers in lime-water for 24 hours.
  • Drain and wash 3 times in cold water.
  • Cover with cold water and let sit for 3 hours.
  • Combine alum, vinegar, 2 cups water, food coloring, sugar, cinnamon and red hots to make a syrup.
  • Add drained cucumbers and simmer, covered, for 2 hours.
  • Let stand overnight.
  • Drain off syrup, reheat and pour over pickles daily for 3 days.
  • Pack in hot jars and seal.

EASY PICKLED APPLES

1/2 cup water
1/2 cup honey
1/2 cup white wine vinegar
3 whole star anise
3 cardamom pods

1 to 2 bay leaves
1 teaspoon whole peppercorns

  • With a mandoline or vegetable peeler, cut apples into very thin slices. Place apples in a 1-quart jar. In a large saucepan, bring remaining ingredients to a boil. Carefully ladle hot liquid over apples. Cover and refrigerate overnight.

2 cups water, or amount to cover
1 cup pickling lime (calcium hydroxide)
4 cups zucchini, sliced
1 cup distilled white vinegar
¾ teaspoon alum
1 fluid ounce bottle of red food coloring
2 cups water, or amount to cover
1 cup distilled white vinegar
3 cups water, or amount to cover
5 cups white sugar
4 cinnamon sticks
½ cup cinnamon red hot candies
8 half-pint canning jars with lids and rings

Steps:

  • Mix 2 cups water (or amount needed to cover the zucchini) and pickling lime together in a nonreactive bowl. Place the zucchini slices in a large (at least 1-gallon) glass jar or large crock, and pour the lime mixture over the zucchini. The solution should completely cover the zucchini. Cover the jar with plastic wrap, and allow to stand for 24 hours. Drain the zucchini slices in a colander in the sink; thoroughly wash the glass jar. Rinse the zucchini slices very well under running water to rinse away all the lime, and place the slices back into the jar. Cover with fresh cool water, allow to stand for 2 to 3 hours, and drain away the water. Rinse again.
  • Place the zucchini slices into a large pot, and stir in 1 cup vinegar, the alum, food coloring, and 2 more cups water (or enough water to cover the zucchini slices). Bring to a boil over medium heat, reduce heat to low, and simmer the zucchini slices for 2 hours. Drain the zucchini slices, and discard the liquid.
  • Place the zucchini slices back into the glass jar. Mix together 1 cup of vinegar, 3 more cups of water, the sugar, cinnamon sticks, and red hot candies in a saucepan over medium heat. Bring to a boil, and stir until the sugar and candies dissolve. Pour the syrup over the zucchini slices. Allow the zucchini to stand covered for 24 hours. Drain, and reserve the syrup. Bring the syrup to a full rolling boil in a saucepan over medium heat.
  • Sterilize the canning jars and lids in boiling water for at least 5 minutes. Pack the zucchini slices into the hot, sterilized jars, and pour the hot syrup into the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 20 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

These are the best! If you like sweet pickles, move over kosher! These are incredible (and addictive). Sweet and crunchy. The only problem is I can never make enough. everyone wants a jar! Perfect! So worth the time and effort!

2 gallons cucumbers, sliced (best to use overripe cucumbers that have gotten large and yellowed at the end of the season...the la)
2 cups pickling lime (calcium hydroxide)
1 tablespoon alum
1 ounce red food coloring
3 cups apple cider vinegar
8 cinnamon sticks
14 1/2 cups sugar
1 cup red-hot candies

Steps:

  • Peel cucumbers and slice about 1/4"-1/2" thick.
  • Remove the seeds by cutting a circle out of the middle.
  • They will be donut shaped.
  • Soak in 8 1/2 quarts of water and 2 cups of pickling lime for 24 hours.
  • Wash and drain slices very well.
  • Cover with cold water and soak for 3 hours.
  • Place cukes, alum, food coloring, 1 cup vinegar, and enough water to cover the cukes in a large pot.
  • Simmer for 2 hours.
  • Drain and throw away solution.
  • Melt red hots in 2 cups water.
  • Mix red hot solution, 2 c vinegar 8 cinnamon sticks, and sugar and heat until hot; bring to a near boil.
  • Pour mixture over cucumbers.
  • Let sit until next day.
  • For 2 mornings, remove cucumbers and heat solution. DO NOT THROW AWAY SOLUTION.
  • Pour hot solution back over cucumbers.
  • Sit until next morning.
  • On third morning, heat solution with cucumbers included.
  • Do not boil!
  • Place cucumbers in jars while hot and seal!
  • Refrigerate after jars reach room temperature.
  • Serve cold.
