CINDI'S BISCUITS
I am usually a pretty good cook...until it came time to make homemade biscuits, that is! It has taken me years to make a decent biscuit. I love this quick and simple recipe. Try it for yourself.

Steps:
- 1. Preheat oven to 450 degrees
- 2. In a large mixing bowl, add flour, butter and shortening and, using a pastry blender, cut in the butter and shortening until crumbly.
- 3. Add cold whole milk and stir with a wooden spoon until just combined.
- 4. Turn dough out onto a floured surface and knead the dough a few times and pat out till about 1/4 inch thick. Tri-fold the dough over itself a few times. Then, using a 2 inch biscuit cutter, cut out biscuits, do not twist the cutter. Place on an ungreased baking sheet and bake for about 14-15 minutes.
- 5. May brush melted butter the tops when done baking, if desired. Makes about 9 biscuits
BASIC BISCUITS
This is a basic biscuit recipe with baking powder used as the leavening. They're easy to make and go with almost any meal.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- In a large mixing bowl sift together flour, baking powder and salt. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs.
- Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft, moist and pulls away from the side of the bowl.
- Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch thick sheet and cut with a floured biscuit or cookie cutter. Press together unused dough and repeat rolling and cutting procedure.
- Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 10 minutes.

CINDY'S BISCUITS
Wonderfully simple and delicious! Good for breakfast with butter and honey or milk gravy, and as a quick fresh bread to go with a meal.

Steps:
- Mix flour and baking powder.
- Cut in butter with fork or pastry cutter (or hands :).
- Use a fork to beat in milk gradually to form a ball.
- On a lightly floured surface, flatten dough to 3/4 inch.
- Using a biscuit cutter or small rimmed glass dipped in flour, cut out biscuits.
- Place biscuits on cookie tray or baking stone and bake at 425 for approx 8-10min (top will golden slightly).

CINDI'S STUFFED MANICOTTI
A beef and cheese flavored manicotti, that's packed with a lot of flavor, and topped with a home-made tangy tomato sauce and grated parmesan cheese. This is "the best" stuffed manicotti I've ever had. It's a family "favorite" of ours. Just be sure to prepare a batch and a half of the tangy tomato sauce, when preparing this recipe.

Steps:
- Cook manicotti shells according to package directions; do not drain. Run cold water over cooked manicotti, until water in pan is cold; then drain.
- Meanwhile in a large bowl, combine the ground beef, egg, shredded mozzarella, bread, milk, and black pepper.
- Divide mixture to fill each shell.
- Place in a greased 13x9x2-inch baking pan.
- Or you can place in 2-(8x8-inch) square baking pans.
- Combine the Tangy Tomato Sauce ingredients in a saucepan, and simmer for 15 minutes before pouring sauce over the shells in pan. Please read *Note below!
- Cover with aluminum foil, and bake in a 350 degree oven for 50 minutes.
- Sprinkle desired amount of grated parmesan cheese over the manicotti before serving.
- Note: Prepare a batch and a half of the sauce. I always do! Also, "DO NOT COOK THE GROUND BEEF FIRST" and "NO, IT DOES GET GREASY"!
- (Prep time can range anywhere from 45-55 minutes).
