1 lb boneless, skinless chicken breast, cubed
1 tablespoon olive oil
1 yellow onion, diced
2 poblano peppers, chopped
2 cloves garlic cloves, minced
2 ½ cups low-sodium chicken broth
1 lime, juiced
14 ½ oz canned cooked black beans, rinsed and drained
2 diced tomatoes
1 ½ cups jasmine rice, uncooked, rinsed
½ teaspoon salt
¼ teaspoon pepper
3 tablespoons cilantro, chopped

Steps:

  • In a skillet, heat a small amount of oil on medium-high heat. Add chicken and season with salt and pepper.
  • Cook the chicken thoroughly, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  • Add remaining olive oil to the skillet. Add onion and peppers and sauté for 5-7 minutes.
  • Add garlic and cook for an additional minute.
  • Add the chicken broth, lime juice, black beans, tomatoes, rice, salt, and pepper and stir to combine.
  • Reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked through.
  • Add chicken back to the pot. Add cilantro and combine.
  • Serve immediately.
  • Enjoy!

Though diced fresh onion could season the rice, onion powder is a savory bedrock with its concentration of umami, especially once bloomed in oil. This aromatic dish plays to the strengths of the cilantro plant: The stems cook with the rice, lending their peppery brightness, and the tender leaves confetti the dish for a final viridescent flourish.

Number Of Ingredients 8

1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 tablespoon onion powder
1 bunch cilantro, stems and leaves separated, both finely chopped
1 cup long-grain white rice, such as jasmine or basmati
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste
1 large jalapeño, thinly sliced
Juice of 1/2 lime, plus more to taste

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the oil, then stir in the onion powder and cilantro stems until fragrant, about 30 seconds. Add the rice and stir until oil-slicked, just a few seconds.
  • Add 1 1/2 cups water, raise the heat to high and bring to a simmer. Reduce the heat to low, cover the saucepan and cook until all of the water is absorbed, 17 to 20 minutes. Remove from the heat and let the rice sit, covered, to steam for 10 more minutes.
  • Fold in the salt, cilantro leaves, jalapeño and lime juice. Taste for seasoning, adding more salt and lime juice as desired.

3 1/2 cups packed cilantro leaves (about 3 ounces)
3 medium garlic cloves
1 medium serrano chile, halved lengthwise and seeded
3 1/3 cups low-sodium chicken broth
1 tablespoon vegetable oil
1/2 cup minced yellow onion
2 cups long-grain white rice
1 tablespoon kosher salt

Steps:

  • Combine cilantro, garlic, chile, and 2 cups broth in a blender and process until smooth; set aside.
  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onion and cook until softened, about 2 minutes. Add rice and salt stir to coat in oil and cook until rice becomes opaque, about 2 minutes. Carefully pour the cilantro mixture and the remaining 1 1/3 cups broth into the rice and stir to combine. Bring mixture to a boil then reduce heat to low so rice is at a simmer. Cover and cook until rice is tender, about 15 minutes. Turn off heat and let rice rest covered for 5 minutes. Fluff with fork and serve.

Number Of Ingredients 8

1 1/2 cups (280 grams) long grain white rice
1 tablespoon olive oil or butter, plus more for serving
1/2 cup (70 grams) finely minced onion (1 small)
2 teaspoons minced garlic (2 medium cloves)
2 1/4 cups (530 ml) water, vegetable stock or chicken stock
1/4 teaspoon fine sea salt or to taste, see notes
3 tablespoons fresh squeezed lime juice
1 cup (30 grams) roughly chopped fresh cilantro leaves and tender stems

Steps:

  • Rinse the rice with cold water until the water runs clear. Drain well in a fine-mesh sieve and set aside. This removes excess starch and helps the rice cook up fluffy and light.
  • Heat a medium saucepan with a tight-fitting lid, over medium heat. Add the oil or butter. When hot, add the rinsed rice and onion. Cook, stirring often, until the rice turns from translucent to a brighter white and the onion is soft, 3 to 4 minutes. Add the garlic and cook, stirring it around the pan until fragrant, but not browned, about 30 seconds.
  • Pour in the warm water or stock and stir, knocking any grains of rice that are stuck to the sides of the pan. Season with salt, reduce the heat to the lowest setting and cover with a lid. Cook, covered for 15 minutes.
  • Remove the pan from the heat and leave alone (still covered) for 10 minutes. Uncover and test a grain of rice. If the rice is still a little hard, place the lid back onto the rice and place over low heat for another 5 minutes. If the rice looks too dry, scatter a tablespoon or two of extra water over the rice before placing back onto the heat.
  • When the rice is done, scatter the lime juice and cilantro on top. Use a fork to gently fluff the rice and incorporate the lime juice and cilantro into the rice. Serve.

1 lb boneless, skinless chicken breast, cubed
salt, to taste
pepper, to taste
1 lime, juiced
⅓ cup fresh cilantro, minced
1 red bell pepper, diced
½ red onion, diced
2 cloves garlic, minced
1 bag riced cauliflower
1 cup corn, steamed
½ teaspoon chili powder, optional
1 can black beans, rinsed and drained, optional
lime, cut into wedges, optional

Steps:

  • Heat preferred cooking oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until cooked through and no longer pink.
  • Add lime juice and cilantro. Stir to combine. Remove chicken from pan, place on a plate, and set aside.
  • Add a little more oil to pan if needed, then add red onion, bell pepper, and garlic. Stir to combine. Allow to cook until onion begins to turn transparent, stirring occasionally.
  • Add riced cauliflower, corn, and chili powder. Cook until cauliflower is soft and remove from heat.
  • Distribute black beans, chicken, and cauliflower mixture evenly between 4 containers. Top with a wedge of lime.
  • This meal prep can be refrigerated for up to 4 days.

1 small onion, chopped
1 large jalapeno, seeded and minced
2 cloves garlic, minced
2 cups white rice (Japanese best)
1 (14 1/2 ounce) can reduced-sodium fat-free chicken broth
1 (4 ounce) can diced green chilies (mild)
1/2 teaspoon salt
3/4 cup lightly packed chopped cilantro

  • In a large heavy saucepan, heat oil over medium high heat.
