This tangy, sweet lime glaze with cilantro is a delicious topping for fish and seafood. Try it on mahi-mahi, salmon, shrimp, or scallops for a tasty treat.

1/4 cup lime juice
1/2 cup water
3 Tablespoons sugar
1 teaspoon cornstarch
1/2 teaspoon rice vinegar
1/2 teaspoon soy sauce
A few drops of Sriracha sauce

Steps:

  • Add the water, lime juice, and sugar, to a saucepan.
  • Heat these ingredients on medium heat until they are boiling.
  • Lower the heat and stir in the cornstarch.
  • Using a whisk, stir the ingredients until the cornstarch has dissolved the mixture has thickened.
  • Remove the saucepan from the stove-top.
  • Mix in the rice vinegar, soy sauce, and sriracha.
  • Brush the glaze on the fish or seafood.
  • Chop the cilantro or use herb scissors.
  • Sprinkle the cilantro pieces on top of the fish or seafood.

After having a delicious TGI Friday's grilled chicken salad, I was determined to figure out the cilantro-lime salad dressing served with it. This is what I came up with. Delicious for a quick summery dinner. Grilled boneless chicken breasts served over a hearty green salad, and this dressing, voila!

1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic
¾ teaspoon minced fresh ginger root
¼ cup lime juice
⅓ cup honey
2 teaspoons balsamic vinegar
½ teaspoon salt, or to taste
¼ cup packed cilantro leaves
½ cup extra-virgin olive oil

Steps:

  • Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend. Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.

Our recipe for this Cilantro Lime Glaze uses fresh cilantro, honey, mustard, and fresh lime juice. Baste the glaze on chicken or pork or just use it as a sauce to pour over cooked meat.

Yield 1 1/4 Cup Glaze

Number Of Ingredients 5

1/2 cup honey
1/2 cup lime Juice
2 tablespoon mustard
2 tablespoons cilantro (roughly chopped in a food processor)
1/4 teaspoon rib rub (or any premix spice mixture with chiles, pepper, thyme, etc)

Steps:

  • Assemble The Sauce Blend the honey, lime juice and mustard together until the mixture is smooth and the ingredients are well incorporated. Now add the chopped cilantro and rib rub. Stir the mixture again. Serve at room temperature.

2 cups fresh limes
1 cup red wine vinegar
2 cups sugar
1 cup packed cilantro, leaves- plus extra as a garnish
salt
fresh ground pepper
16 medium shrimp, peeled and deveined
6 inches wooden skewers, soaked in water for 30 minutes
olive oil

Steps:

  • 1. Combine the lime juice, vinegar, and sugar in a medium saucepan (not aluminum or cast-iron) and bring it to a boil. Boil until reduced to one cup. Let cool slightly, transfer to a blender, add cilantro, and blend until smooth. Season to taste with salt and pepper. ( The Glaze can be made a few days in advance, covered, and kept in the refrigerated. Bring to room temperature before serving.).
  • 2. Heat the grill to high. Set aside a few teaspoons of the glaze to use after cooking.
  • 3. Spear one shrimp onto each skewer, pushing the skewer through booth ends of the shrimp to help it lie flat on the grill. Brush the shrimp with oil and season with salt and pepper.
  • 4. Grill the shrimp, brushing often with the glaze, until pink, opaque, and just cooked through, 1 1/2 to 2 minutes on each side. Remove the shrimp to a platter and brush with the reserved glaze. Sprinkle with cilantro and serve immediately.
