- Heat oven to 450. Meanwhile, add oil, onion, and pepper to large skillet. Sautee on medium-high until vegetables are soft, about 7-10 minutes.
- Add beef and Worcestershire sauce, sautéing for an additional 2 to 3 minutes.
- Place hoagie rolls on baking sheet. Divide meat mixture evenly among rolls. Top with cheese. Bake until cheese has melted, about 5 minutes. Serve immediately.

- Brown ground beef with the diced onion.
- Place first 3 items in a large oven roaster (I use an Enamelware roaster).
- To this, add the 3 cans of beans; do not drain beans.

HOT AND TASTY ROAST BEEF HOAGIES
My mom made these for us for lunch while we were on vacation at the beach, and they are delicious and so easy to make! I hope you enjoy then as much as we do!

- 1. Put sliced roast beef, french onion soup, and Worcestershire sauce in a sauce pot and heat until steamy.
- 2. While meat is heating, cut hoagies in half and slice each half along length. Toast on broil in the oven, with the outside of the bread down and the soft part up.
- 3. Once meat is nice and hot, place 3 slices on a half of hoagie roll using a slotted spoon. Top with a slice of provolone and a little "gravy" from the cooked meat if you want.
- 4. Serve with pickle slices. My mom also likes to add banana peppers to her sandwich. Sometimes just a half is enough for me, and sometimes I can't eat just one. Either way, I am super satisfied with this tasty sandwich!

Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

- In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
- Drain fat.
- In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
- Meanwhile, dissolve bouillon cubes in boiling water.
- Add bouillon to meat mixture with the remaining ingredients and mix well.
- Cover and bake 1 hour and 15 minutes in a 375 degree oven until hot and bubbly.
- Crumble bacon over beans and serve.
- This makes a LOT of beans. I usually halve the recipe.
CHUCKWAGON BEEF HOAGIES

- In a large skillet over medium heat, melt butter. Sauté onion rings for 3 to 4 minutes or until crisp-tender. Stir in tomato sauce and barbecue sauce. Simmer for 3 to 4 minutes. Add roast beef and simmer for 2 to 3 minutes or until heated through.Butter and toast rolls if desired. Spoon meat onto rolls and serve.To Microwave: Cook onion Stir in tomato sauce and barbecue sauce. Cover with waxed paper. Microwave at 100% power for 2 to 3 minutes or until boiling. Stir in meat. Cover with foil and let stand for 3 to 4 minutes or until meat is warm.
