1 package active dry yeast
1/4 cup warm water (110 degrees F.)
1/2 cup (1/4 pound) butter or margarine
1/2 cup half-and-half (light cream) or milk
3 tablespoons sugar (omit if using savory filling)
3 eggs
4 to 4 1/4 cups all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon salt
Sweet or savory filling (recipe follow)
1 egg beaten with 1 tablespoon water

Steps:

  • Mix the yeast with the warm water and let set for five minutes, heat the butter and the milk and let cool, add to the yeast, add the sugar and salt, beat in the eggs and nutmeg, mix to combine thoroughly. Add the flour until you can not stir with a spoon or mixer. Turn the dough out onto a board and knead in the rest of the flour. Continue kneading for 10 minutes. Place the dough in a greased bowl and set aside in a warm place to rise until doubled, about 1 1/2 hours. Punch down and knead a few times. Wrap airtight and place in refrigerator. The dough needs to be cold in order to roll and form, so refrigerate it overnight. Fillings: Sweet cheese filling: Beat together 2 large packages (8 ounces) cream cheese, at room temperature; 1/2 cup powered sugar; 1 egg; 2 teaspoons grated orange peel; and 1/4 teaspoon almond extract. Stir in 1 cup raisins and 1 cup chopped candied orange peel. Savory cheese filling: Beat together 1 large packages (8 ounce) cream cheese, at room temperature; 8 ounces feta cheese, crumbled; 1 egg; and 1 cup finely chopped green onion. If the filling is not going to be used the day it is made, cover and refrigerated overnight. When you are ready to form the bundles, knead the dough a few times to get the air out. Divide dough into 16 equal pieces, keep the remaining pieces cold while you roll one portion at a time into a 6"to 6 1/2"-inch circle. Place equal portions (2 to 2 1/2 tablespoons) of filling in center. Draw dough up around filling, and pleat; pinch firmly just above filling, letting dough top flare loosely. As you finish each bundle, place 2 inches apart on greased 10 by 15-inch baking sheet. Cover bundles loosely with plastic wrap and place in warm place to rise until puffy, about 30 minutes. Uncover and pinch under pleats to seal. Brush bundles with a mixture of 1 egg beaten with 1 tablespoon of water. Bake at 350 degrees fahrenheit until golden brown, about 25 minutes. Serve warm or at room temperature. To store, cool completely. The finished bread bundles can be refrigerated for a few days or frozen up to six months, if they aren't eaten before that.

1-1/4 cups warm whole milk (70° to 80°)
1/2 teaspoon lemon juice
2 tablespoons butter, softened
2 tablespoons sugar
1-1/2 teaspoons salt
3 cups bread flour
2 teaspoons active dry yeast
3/4 cup golden raisins
3/4 cup raisins
1/2 cup dried currants
1-1/2 teaspoons grated lemon zest
GLAZE:
1/2 cup confectioners' sugar
1-1/2 teaspoons 2% milk
1 teaspoon butter, melted
1/4 teaspoon vanilla extract

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your bread machine may audibly signal this), add the raisins, currants and lemon zest. In a small bowl, combine glaze ingredients; drizzle over cooled bread.

This festive bread can be made ahead and frozen and makes a lovely treat for breakfast on Christmas morning

450g strong white bread flour , plus extra for kneading
¾ tsp salt
2 tsp ground cinnamon
85g light muscovado sugar
2 tsp easy-blend yeast
200ml full-fat milk
50g unsalted butter , plus extra for greasing
2 medium eggs , beaten
50g walnut pieces, lightly toasted
85g raisins
1 egg yolk , to glaze
butter and jam, to serve

Steps:

  • Sift the flour, salt and cinnamon into a bowl. Stir in the sugar and yeast, then make a well in the centre. Pour the milk into a small pan, add the butter and warm gently until the butter has melted. Pour into the well, then add the beaten eggs. Gradually mix to make a soft, slightly sticky dough.
  • Turn the dough out on to a lightly floured surface and knead vigorously for 5 minutes until smooth. Put the dough into a clean bowl, cover with oiled cling film and leave somewhere warm for 11⁄2 hours or until the dough has doubled in size. Lightly butter a 900g loaf tin.
  • Punch the air out of the dough and turn it out on to a lightly floured surface again. Knead once more until smooth, then knead in the walnuts and raisins. Divide the dough into three and shape each piece into an oval ball. Drop each ball side by side into the prepared tin and cover loosely with oiled cling film. Leave somewhere warm for 30 minutes until the dough has reached the top of the tin. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6.
  • Mix the egg yolk with 1 tbsp of water and brush over the top of the risen loaf. Bake for 20 minutes, covering loosely with a double sheet of foil once it's nicely browned. Then, lower the temperature to fan 160C/conventional 180C/gas 4 and bake for a further 20 minutes. Turn the loaf out of its tin and tap the base - it will sound hollow if the loaf is done. If it doesn't, return it to the oven out of its tin and bake for another 5-10 minutes. Cool the loaf on a wire rack. (The loaf can be sealed in a plastic bag and frozen for up to 1 month. If you slice it before freezing you can toast the slices straight from the freezer, otherwise you need to remove the whole loaf from the freezer the night before.) Serve lightly toasted, with butter and jam.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
3/4 cup evaporated milk
1/3 cup sugar
1/3 cup shortening
1/2 teaspoon salt
2 eggs
4 to 4-1/2 cups all-purpose flour, divided
1 cup chopped mixed candied fruit
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 tablespoons milk
Additional candied fruit, optional

Steps:

  • In a large bowl, dissolve yeast in water. Add the evaporated milk, sugar, shortening, salt, eggs and 2 cups of flour; beat until smooth. Stir in mixed candied fruit and enough remaining flour to form a soft dough (do not knead). , Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. Turn onto a floured surface; knead 3-4 minutes. Pat evenly into a greased 10-in. tube pan. Cover and let rise in a warm place until nearly doubled, about 45 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pan to cool on a wire rack. , Combine the confectioners' sugar, vanilla and enough milk to reach desired consistency; drizzle over bread. Garnish with additional candied fruit if desired.

This bread was given to me by my best friend, Sharon, that is no longer with us. Everytime I fix this she is with me. Everyone just loves this bread and you can add anything you like.

1 loaf frozen bread dough, completely thawed
1/2 lb ground sausage, browned and drained
1/2 lb ground beef, browned and drained
12 ounces sharp cheddar cheese, shredded
1 onion, chopped
1 -2 jalapeno pepper
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

  • Let bread thaw and rise according to package.
  • If in a hurry, just let thaw.
  • Preheat oven 375 degrees.
  • Brown and drain meat, onions and seasonings.
  • Roll 1/2 dough out on a floured surface.
  • Spoon meat mixture down the middle.
  • Top with cheese and jalepeno peppers.
  • Roll in a loaf.
  • Repeat with other half of bread dough.
  • Place in bread pan and bake for 25 or 30 minutes or until bread is brown.
  • Let cool for about 10 minutes, slice and enjoy.
