SOUTHERN SWEET CORNBREAD



Southern Sweet Cornbread image

A delicious moist and sweet southern cornbread that is perfect with any side. It's one bowl and easy to make!

Number Of Ingredients 10

1 cup all-purpose flour
1 cup cornmeal
1 cup sugar
2 tsp salt
1 tbsp baking powder (Use aluminum free )
3 eggs
1 cup milk
2 tbsp sour cream
8 tbsp unsalted butter
2 tbsp vegetable oil

Steps:

  • Preheat oven to 350 F. Melt 7 tablespoons of butter. Once the oven has heated up, put the remaining 1 tablespoon of unmelted butter into a skillet and place it into the oven.
  • Add all the dry ingredients into a large bowl and mix until combined then make a well in the center of the bowl.
  • Pour all the ingredients except the melted butter and vegetable oil into the well. With a whisk, whisk until smooth and combined.
  • Pour the melted butter and vegetable oil into bowl. Mix well until the butter is mixed into the batter.
  • Carefully take the hot skillet out the oven and quickly pour the batter into the skillet. Place the skillet back into the oven. Bake for 25-30 minute or until done. Sharing is caring, so please share this recipe, so other people can enjoy it!

FRIED HOT WATER CORNBREAD CAKES



Fried Hot Water Cornbread Cakes image

Hot water cornbread is shaped into cakes and fried in hot fat in a skillet.

2 cups water
1/2 teaspoon salt
2 cups coarsely ground cornmeal
4 teaspoons bacon drippings
Optional: 1 teaspoon sugar
Shortening or bacon drippings for frying

Steps:

  • Gather the ingredients.
  • Place the water and salt in a medium saucepan and bring to a full boil over high heat.
  • Remove the water from the stove and add the cornmeal, bacon drippings or butter, and sugar, if using. Stir until a stiff dough is formed. Let the mixture stand just until it is cool enough to handle, or about 10 to 15 minutes.
  • Shape the dough into palm-sized cakes. Set aside.
  • Heat a heavy skillet, preferably cast iron , over medium heat. Add enough shortening or bacon drippings to coat the bottom of the pan.
  • When the fat is hot, place the cakes in the hot skillet. Fry until lightly browned on the bottom.
  • Turn the cakes over and fry until brown. Repeat the process with all the cakes. Serve hot.

1 cup all-purpose flour
1 cup stone-ground yellow cornmeal
1 cup heavy cream
2 eggs
1/2 stick butter, melted
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 cup dark brown sugar, firmly packed
1/2 stick butter
1 (15.5 ounce) can fruit cocktail, drained
1 (12-ounce) can maraschino cherries, drained
1/2 cup chopped walnuts
1/4 cup brandy
Whipped cream, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • In a large bowl, mix together flour, cornmeal, heavy cream, eggs, butter, brown sugar, baking powder and salt.
  • In the cast iron skillet over medium-high heat, add sugar and butter and let melt. When melted, remove from heat and add remaining ingredients. Be sure to place maraschino cherries evenly throughout. Pour in batter and smooth top with a spatula. Bake 25 minutes, until cornbread is golden and a toothpick comes out clean.
  • To serve: place a platter over skillet and invert cake. It should slide out easily. Slice into wedges and serve warm with whipped cream.

I love tuna and am always looking for new ways to fix it. This recipe uses the herb-and-garlic-flavored tuna chunks. It is from Southern Living and is credited to Sherry Little of Sherwood, AR. Haven't tried it yet, but it sounds yummy!

1 (6 ounce) package buttermilk cornbread mix (Martha White Buttermilk Cornbread Mix suggested)
2/3 cup milk
2 tablespoons mayonnaise
3 green onions, thinly sliced
3 large eggs, lightly beaten
2 tablespoons chopped fresh parsley
1 teaspoon Old Bay Seasoning
1 teaspoon Worcestershire sauce
2 (5 ounce) packages aluminum foil pouches herb and garlic flavored light chunk tuna (StarKist Tuna Creations suggested)
3 tablespoons butter
3 tablespoons vegetable oil

Steps:

  • Preheat oven to 425 degrees.
  • Stir together cornbread mix and 2/3 cup milk. Pour batter into a lightly greased 8-inch square pan.
  • Bake at 425 degrees for 15 minutes or until golden brown. Cool on a wire rack 5 minutes or just until warm.
  • Stir together mayonnaise and next 5 ingredients in a large bowl.
  • Crumble cornbread to equal 2 cups. Reserve remaining cornbread for another use. Fold cornbread crumbs and tuna chunks into mayonnaise mixture until well blended. Shape tuna mixture into 8 patties.
  • Melt 3 tablespoons butter with vegetable oil in a large skillet over medium-high heat. Add tuna patties, and cook in batches, 2-3 minutes on each side or until golden brown; drain on paper towels.

This citrus-scented cornmeal number is endlessly adaptable - use whatever fat you have on hand, dairy or light, bright flavoring you have on hand - and requires just one bowl. It's wonderful in slices, but extra nice toasted and buttered for breakfast.

1 cup/200 grams granulated sugar
An orange, lime or lemon (optional)
1/2 cup/120 milliliters liquid fat (olive oil, coconut oil, sunflower oil, melted butter, whatever you've got)
2 eggs
1/2 cup/120 milliliters plain yogurt, buttermilk, sour cream, or 1/2 cup whole milk mixed with 1 tablespoon lemon juice
A dash of vanilla or almond extract, or use brandy (optional)
1/4 teaspoon grated nutmeg (optional)
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/60 grams cornmeal
1 1/4 cup/160 grams all-purpose flour

Steps:

  • Heat oven to 350 degrees, and grease and flour a 9-inch loaf pan. (Or grease and line it with parchment.)
  • In a big bowl, add the sugar, and grate the zest from the orange, lemon or lime into the bowl. If you need a little aromatherapy, work the zest into the sugar with your fingers. (This technique is supposed to infuse the citrus into the sugar.)
  • Add the fat, eggs, and yogurt to the bowl, along with the extract and nutmeg, if you like.
  • Whisk in the salt, baking soda, baking powder and cornmeal. Once smooth, whisk in flour.
  • Scrape the batter into the prepared pan, and bake for 45 minutes to an hour. Let it (mostly) cool in the pan. Then slice off a thick piece, butter it and let yourself be soothed.

3 slices bacon, diced small
1 1/4 cups cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
2 eggs, lightly beaten
3/4 cup buttermilk
1/2 cup milk
3 tablespoons honey
1 tablespoon molasses
1/2 cup (about 2 ounces) thinly sliced dried apricots
Maple ice cream (see recipe)

Steps:

  • Preheat oven to 325 degrees. Butter and flour an 8-inch-square baking pan; set aside. In a large skillet, fry bacon until crisp. Drain on paper towels; reserve.
  • In a large bowl, combine the flour, cornmeal, baking powder, baking soda, salt and sugar. Whisk to blend, then mound and make a well in the center. Pour in eggs, buttermilk and milk; stir with a fork until lightly combined.
  • Add honey, molasses, apricots and bacon bits. Mix again until evenly combined. Pour into pan and bake until it has risen and center is firm and dry when a toothpick is inserted, about 35 minutes. Allow to cool, then cut into small squares and serve with a dollop of maple ice cream on top.

This isn't so much a recipe as a method of cooking cornbread in a hurry - especially in small batches. I first encountered these cornbread cakes in Tennessee at a food counter and saw these pancakes. So...I asked what pancakes were doing alongside chicken and gravy. Laughter followed and I was quickly told "well, that's cornbread." Oh really? I've been making them ever since and this recipe has a few of my own ingredients.

2 cups cornmeal mix, self-rising (I use Martha White)
1 1/3 cups milk or 1 1/3 cups buttermilk
1/4 cup oil
1 large egg, beaten
2 -3 tablespoons oil (for frying)
2 ounces green chilies, chopped
8 3/4 ounces whole kernel corn, drained

Steps:

  • Mix all ingredients together in a bowl.
  • Heat a skillet and add a little oil for frying.
  • Pour enough batter into the skillet to form 4 to 6 inch round cakes.
  • Fry until browned on the bottom and flip.
  • Fry until both sides are browned.
  • Serve hot with butter or with beans or stew.
