PINEAPPLE MAPLE GLAZED HAM RECIPE BY TASTY

Here's what you need: gammon joint, onions, pineapple juice, dijon mustard, pineapple juice, maple syrup, cloves

3 ¾ lb gammon joint
2 onions, quartered
3 qt pineapple juice
2 teaspoons dijon mustard
½ cup pineapple juice
½ cup maple syrup
25 cloves

Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
  • Score the fat in a diamond pattern and push a clove into each cross section.
  • Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
  • Roast the gammon joint for 40 minutes, glazing again halfway through.
  • Carve and serve.

Beautifully finished with a sticky mulled wine-inspired glaze, this is Christmas ham at its finest. Fragrant and full of flavour, it makes the perfect festive centrepiece. Plus, it'll give you a stash of beyond-delicious leftovers.

Number Of Ingredients 19

1 x 2.5 kg (approx) higher-welfare unsmoked middle-cut gammon, with knuckle
a few sprigs of woody herbs, such as rosemary, thyme
3 fresh bay leaves
2 sticks of celery
2 carrots
1 onion
2 cloves of garlic
½ a fresh red chilli
1 tablespoon whole black peppercorns
olive oil
GLAZE
1 x 454 g jar of orange marmalade, (no-peel)
175 ml full-bodied red wine, such as Rioja
1 star anise
a few cloves, plus extra for the pineapple
½ a stick of cinnamon, or 1 pinch of ground cinnamon
1 fresh bay leaf
1 clementine
1 x 435 g tin of pineapple rings in juice

Steps:

  • Take your meat out of the fridge and bring it up to room temperature before you cook it.
  • Place the gammon in your largest pot, then strip in the woody herbs and add the bay. Roughly chop the celery and carrots, peel and quarter the onion, and squash the garlic cloves, then add it all to the pot with the chilli and peppercorns.
  • Cover with water, bring to the boil, then pop the lid on and simmer gently for 2 hours, or until the meat is tender, turning it halfway, topping up with water occasionally and skimming away any excess fat.
  • Preheat the oven to 180°C/350°F/gas 4. Transfer the gammon to a large roasting tray (save a little of the stock for later), then carefully remove the skin and discard, keeping the fat on the meat. Score the fat in a criss-cross fashion, then drizzle with 1 tablespoon of oil. Roast the gammon for 20 to 30 minutes, or until lightly golden.
  • To make the glaze, spoon the marmalade into a non-stick frying pan on a medium heat, pour in the red wine and bring to a simmer, stirring occasionally.
  • Add the spices and bay, strip in the clementine zest using a speed-peeler, then pour in the pineapple juice, saving the fruit for later. Allow to bubble away and reduce by half, then switch off - it should be thick and syrupy.
  • When the roasting time's up, take the tray out of the oven, then arrange pineapple rings over the gammon, securing them with a few cloves. Arrange the rest of the pineapple in and around the tray, then pour the glaze over the meat.
  • Spoon ½ a ladleful of the gammon stock into the pan you used to make the glaze, scrape up all the sticky bits from the bottom and pour into the tray, ensuring all the gammon and pineapple is coated. Roast for a further 20 minutes, or until beautifully glazed, basting with the glaze every 5 minutes.
  • Remove the glazed ham to a serving platter, ready to slice hot, cold or at room temperature. Pour any remaining glaze from the tray all over the ham, and arrange the pineapple slices around it.

Adapted this this one from another of my Gran's (Dads mother) recipes. It's sweet & sticky & oh so mmmmmm. Leave gammon in water overnight to remove excess salt. Rinse well the next day. I'm not too keen on cloves so I left them out. We have this with boiled new potatoes, winter salad & crusty French bread. The cooking time for the gammon is 20 minutes per 450kg/1lb so for this size joint it's 1 hour 20 mins.

4 lbs gammon ham
1/4 pint unsweetened pineapple juice
3 tablespoons golden syrup or 3 tablespoons clear honey, if you prefer
1 (7 ounce) can pineapple rings, drained & cut into chunks (or use ready diced)
20 -25 whole cloves
the tip of a teaspoon cinnamon

Steps:

  • 1: Put the gammon/ham into large saucepan & cover with cold water. Boil for 10 minutes, then taste the water, if it's still very salty, change the water. Bring back to the boil then simmer for 30 minutes.
  • 2: preheat oven to 180c/350f/gas4.
  • 3: Remove gammon from the water. Leave to cool slightly.
  • 4: Using a sharp knife, remove the skin, leaving as much of the fat as possible. Score the exposed fat in a diamond pattern.
  • 5: Put the gammon in a roasting tin & bake in the oven for 20 minutes.
  • 6: In the meantime, mix the pineapple juice, cinnamon & golden syrup/honey in a pan & warm over a low heat until syrup becomes runny.
  • 7: Remove the gammon from oven & increase the temperature to 220c/425f/gas7. Pour warm syrup mixture over the whole gammon.
  • 8: Attach pineapple pieces to the scored fat, securing each with a clove if using. If not using cloves, secure pineapple pieces with cocktail sticks, but be careful.
  • 9: Return gammon to the oven for 20 minutes, basting twice, until gammon is tender.
  • 10: Remove from oven & allow to rest for about 5-10 minutes. Carve & serve hot or cold.

FESTIVE GAMMON

A traditional ham recipe that's perfect for any celebration, especially at Christmas. The gammon needs brining overnight, but the results are well worth it

1 unsmoked boneless gammon , weighing about 5kg
2 tbsp coriander seeds
2 tbsp fennel seeds
2 tbsp cloves
2 star anise
8 juniper berries
750g demerara sugar
300g sea salt flakes
250g Dijon mustard
6 carrots , peeled
2 heads celery , broken into sticks
3 onions , halved
2 leeks
1 head garlic , unpeeled and halved
5 bay leaves
1 bunch parsley
100ml white wine vinegar

Steps:

  • For the brining, take all the spices for the glaze and toast them in a frying pan until they begin to release their fragrance. Grind using a pestle and mortar, then tip into a food processor with the sugar and blitz everything together to make a spice mix. Tip two-thirds of the mix (reserving the rest in a sealed plastic container) into a large pan with the salt and 5 litres of water and bring to the boil, then turn off the heat. When the mix has cooled, pour it over the ham and leave in the fridge to brine for 24 hrs.
  • After 24 hrs, wash off the brine. Place the ham in a large pan with the stock veg, herbs and vinegar. Cover with water and bring to the boil. Lower the heat to a gentle simmer and cook, uncovered, for 3 hrs, topping up with water as necessary. Turn off the heat and leave the ham to cool in the stock.
  • Heat oven to 220C/fan 200C/gas 7. Remove the ham from the stock and cut away the top layer of fat and skin. Score the fat in a criss-cross and brush with the mustard, then pack on the reserved spiced sugar. Roast for 35-40 mins until the glaze has completely caramelised and become sticky. Allow the ham to rest for at least 10 mins before carving.

1.6kg dry-cured boneless smoked gammon joint
300ml pineapple juice
1 red chilli , finely chopped
3cm piece ginger , peeled and finely grated
1 tsp garlic granules
200ml tomato ketchup
3 tbsp red wine vinegar
3 tbsp Worcestershire sauce
3 tbsp dark brown soft sugar
1 tbsp soy sauce
1 tsp cayenne pepper

Steps:

  • Put the gammon in a large pan and cover with water. Bring to the boil and skim any foam from the surface, then reduce to a simmer, cover and cook for 2 hrs. Leave to cool in the liquid in the pan for 30 mins.
  • Meanwhile, make the glaze. Tip all the ingredients into a pan and bring to the boil. Reduce to a simmer and bubble for 10-12 mins, or until just syrupy. Drain the gammon (you can reserve the liquid for stock). The gammon and glaze can be prepared and chilled up to one day ahead.
  • Heat the oven to 200C/180C fan/gas 6. Sit the gammon on a board and, using a sharp knife, cut away the skin, making sure you leave a good layer of fat. Score lines all over the fat. Transfer to a roasting tin and roast for 10 mins, then pour over some glaze. Continue to roast, basting with more glaze every 5-10 mins, until the gammon is sticky, about 40 mins. Don't worry if the ends get a little dark, as this adds flavour.
  • Remove from the oven and rest for 15 mins. Carve and serve.

GAMMON WITH PINEAPPLE SALSA

A family favourite, updated with a Thai-style pineapple salsa

1 large gammon steak, rind on (about 350g12oz; 1cm/½in thick)
a little oil , for brushing
1 tsp clear honey
100g fresh pineapple , finely chopped
1 large red chilli , seeded and finely chopped
1 tsp soft brown sugar
1 tsp soy sauce
1 tbsp chopped fresh coriander

Steps:

  • First, make the salsa. Mix together all of the ingredients (use 1⁄2 a chilli for a milder flavour, all of it for a pungent one). Set aside while you cook the gammon.
  • Heat the grill for 3 mins. Use a thin-bladed knife to slice the gammon into 2 steaks, then snip the rind every 2-3cm. Lightly brush with oil. Grill for about 3 mins each side until just firm, then brush over the honey on one side and cook for 1 min more. Remove and leave to stand for 2-3 mins.
  • Serve the gammon with the salsa spooned over the top. Good with a chicory salad or green beans and chunky-cut chips.
