Pepper Jelly is easy to make, versatile, and makes a perfect and pretty home crafted gift.

Number Of Ingredients 4

1.5 cups sweet peppers (preferably three colours, finely diced)
3 cups sugar
3/4 cups apple cider vinegar
1 pouch liquid pectin (85 ml)

Steps:

  • In a large stainless steel or enamel pot, combine diced peppers, sugar and vinegar
  • Over high heat, bring to a boil, stirring constantly, and boil for one full minute
  • Stir in liquid pectin, bring back to a boil, and boil hard for one full minute.
  • Remove from heat and ladle into hot, sterilized jars.
  • Put on lids and twist screw bands just finger tight
  • Process in boiling water bath 10 minutes
  • Allow to cool, in which time you should hear the pop of the sealing jars, and your jelly will thicken

This spicy-sweet jelly is colored for Christmas...and flavored right for year-round use. Our test kitchen staff recommends spreading it on crackers with cream cheese for a snack or serving it as an accompaniment to pork roast.-Taste of Home Test Kitchen

Yield about 6 half-pints.

Number Of Ingredients 8

1 jalapeno pepper, seeded and chopped
7 medium green peppers, cut into 1-inch pieces
1-1/2 cups white vinegar
1-1/2 cups apple juice
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon canning salt
5 cups sugar
About 8 drops green food coloring, optional

Steps:

  • Place the jalapeno, half of the green peppers and half of the vinegar in a blender or food processor; puree. Pour into a large bowl. Puree remaining green peppers and vinegar; add to the bowl. Add apple juice; mix well. Cover and chill overnight. Strain through several layers of damp cheesecloth. Measure 4 cups juice into a Dutch oven (add water if needed to make 4 cups). Stir in pectin and salt; bring to a rolling boil over high heat, stirring constantly. Add sugar; return to a rolling boil. Boil for 1 minute, stirring constantly. , Remove from the heat; skim off foam. Add food coloring if desired. Carefully ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

This is a beautiful jelly of red bell peppers and green jalapenos. It's a perfect relish to many holiday favorites, or serve it with cream cheese on a cracker.

1 cup chopped red bell pepper
½ cup chopped jalapeno pepper
5 cups white sugar
1 ½ cups apple cider vinegar
1 (6 fluid ounce) container liquid pectin

Steps:

  • Remove stems, veins and most of the seeds of the bell and jalapeno peppers. Mince peppers in a food processor.
  • In a 5-quart pot over high heat, combine bell peppers, jalapenos, sugar and vinegar. Bring to a rolling boil; boil for 3 minutes. Remove from heat and cool for 5 minutes.
  • Stirring constantly, add the pectin and let mixture continue to cool for 2 minutes more. Now stir for 1 minute.
  • Pour into hot, sterilized jars and top with sterilized lids. Secure lids with bands and allow jars to cool slowly, creating a vacuum seal.

Easy Red Pepper Jelly image

This Easy Red Pepper Jelly makes an amazing holiday appetizer! Serve this jelly over cream cheese and serve on your favorite crackers.

Number Of Ingredients 9

3 red bell peppers (seeded and minced)
1 green bell pepper (seeded and minced)
1 jalapeño pepper (seeded and minced)
1 cup apple cider vinegar
1 (1.75 ounce) pkg. powdered Pectin
5 cups sugar
6 (8 ounce) canning jars
1 (8 ounce) pkg. cream cheese (softened to room temperature)
Ritz crackers

Steps:

  • Sterilize canning jars and set aside.
  • Prepare all peppers by seeding and mincing.
  • Place peppers in a large saucepan over medium-high heat.
  • Add apple cider vinegar and powdered Pectin.
  • Bring heat to high and stir constantly until you reach a rolling boil. Remove from heat once you reach a rolling boil.
  • Mix in sugar and return to pan to high heat.
  • Return to a rolling boil and let boil for 1 minute.
  • Fill jars with jelly until it reaches 1/4" from the top of the jar.
  • Screw lids on jars and place in a large pot filled with hot water. Be sure jars are completely submerged.
  • Heat water with jars over high heat until it reaches a rolling boil, then boil for 5 minutes.
  • Remove from heat and let jars sit in water until cool.
  • Check seals by pressing down on the center of the lid when cool. If the lid pops when pushed, it can be stored at room temperature, otherwise store in the refrigerator.
  • Pour jelly over cream cheese and serve with crackers.

2 ½ cups finely chopped red bell peppers
1 ¼ cups finely chopped green bell peppers
¼ cup finely chopped jalapeno peppers
1 cup apple cider vinegar
1 (1.75 ounce) package powdered pectin
5 cups white sugar

Steps:

  • Sterilize 6 (8 ounce) canning jars and lids according to manufacturer's instructions. Heat water in a hot water canner.
  • Place red bell peppers, green bell peppers, and jalapeno peppers in a large saucepan over high heat. Mix in vinegar and fruit pectin. Stirring constantly, bring mixture to a full rolling boil. Quickly stir in sugar. Return to full rolling boil, and boil exactly 1 minute, stirring constantly. Remove from heat, and skim off any foam.
  • Quickly ladle jelly into sterile jars, filling to within 1/4 inch of the tops. Cover with flat lids, and screw on bands tightly.
  • Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 5 minutes.

JALAPENO CRANBERRY JELLY (CHRISTMAS JELLY)



Jalapeno Cranberry Jelly (Christmas Jelly) image

This is one that will have your tastebuds begging for more. Note: When cutting hot peppers, disposable gloves are recommended and avoid touching your face. I saw the cutest idea. Place one very small whole pepper or one whole cranberry in each sterilized half-pint jar pouring over the liquid jelly and processing as recommended. This recipe halves easily. Also, I used cranberry juice cocktail in place of pure cranberry juice.

3 cups cranberry juice (not light)
1 cup chopped red jalapeno chile (with or without seeds for desired level of heat and can use green)
1 cup white vinegar
7 cups sugar
2 (3 ounce) envelopes liquid fruit pectin (6 ounces total)
10 drops red food coloring (optional)

Steps:

  • Place cranberry juice and jalapenos in a blender; cover and process until peppers are fully chopped. Strain through a seive pressing with the back of a spoon to remove all liquid. This can also be strained through a double-thickness of cheesecloth.
  • Pour the strained juice into a Dutch oven; add vinegar. Stir in sugar. Bring to a full rolling boil, stirring constantly. Stir in pectin; return to a full rolling boil that cannot be stirred down. Boil for 1 minute (no longer), stirring constantly.
  • Remove from the heat; skim off foam with a metal spoon. Add food coloring if desired. Carefully ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

1 package (40 ounces) frozen unsweetened strawberries, thawed or 2-1/2 quarts fresh strawberries, hulled
1 pound fresh or frozen cranberries, thawed
5 pounds sugar
2 pouches (3 ounces each) liquid fruit pectin

Steps:

  • Grind strawberries and cranberries in a food processor or grinder; place in a Dutch oven. Add sugar. Bring to a full rolling boil; boil for 1 minute. Remove from the heat; stir in pectin and return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat. , Cool for 5 minutes; skim off foam. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

Thsi a recipe from Bernardin, but it's so good!!!! I make it every year, to have over the Holiday season, and enjoy it all year round also!!

Yield 6 125 ml jars

Number Of Ingredients 7

1/3 cup dried apricot, finely sliced
3/4 cup vinegar (white or white wine)
1/4 cup red onion, finely diced
1/4 cup sweet red pepper, finely diced, seeded
1/4 cup green chili pepper, finely diced, including seeds (hot or sweet)
3 cups granulated sugar
1 (85 ml) envelope bernardin liquid pectin

Steps:

  • Place 6 clean 125ml mason jars on a rack in a boiling water canner, cover jars with water and heat to a simmer. Set screw bands aside. Heat snap lid sealing discs in hot water, not boiling. Keep jars and sealing discs hot until nearly ready to use.
  • With scissors or knife, cut apricots into 1/8 inch slices. Measure into a large deep stainless steel saucepan with vinegar; let stand 4 hours. Add diced red onion and green peppers to to apricots. Stir in sugar.
  • Over high heat, bring mixture to a full rolling boil that cannot be stirred down. Add liquid pectin squeezing entire contents from pouch. Boil hard for 1 minute, stirring constantly. Remove from heat and quickly skim off foam, if necessary.
  • Quickly pour jelly into a hot jar, dividing solids equally among jars and filling to within 1/4 inch of top of the jar headspace. Wipe jar rim removing any food residue. Center hot sealing disc on clean jar rim. Screw band down tight until resistance is met, then increase to fingertip tightness. Return filled jar to rack in canner. Repeat for remaining jelly.
