1 1/2 lbs pork sausage
9 eggs
3 cups milk
1 1/2 teaspoons dry mustard
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
day old challah (5 oz.)
1 1/2 cups shredded sharp cheddar cheese

Steps:

  • In a large skillet, cook the sausage over medium heat for about 15 minutes.
  • Stir often to crumble the meat.
  • Remove the sausage and drain on paper towels.
  • While the sausage is cooking, whisk the eggs in a large mixing bowl.
  • Add the milk, mustard, salt, and pepper.
  • Cut the bread into 1-inch cubes.
  • You should have 4 1/2 cups of cubes.
  • Stir the bread cubes into the egg mixture.
  • Add the sausage and cheese and stir well.
  • Lightly spray a 13 x 9 inch baking dish with nonstick cooking spray.
  • Pour the egg mixture into the prepared dish.
  • Cover and chill overnight.
  • Uncover and bake at 350° for 1 hour.

My mom has always made this for us on Christmas morning, and since we only have it once a year it makes it even more good. It is so delicious, and everyone enjoys it! When I double the recipe I use 1 pound regular sausage and 1 pound sage sausage.

1 pound ground pork sausage
1 teaspoon mustard powder
½ teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 ounces mild Cheddar cheese, shredded

Steps:

  • Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
  • In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.

This is a wonderful breakfast souffle that you can easily switch out the bacon for sausage or ham. It is nice because it can be made the night before so your not rushing around in the morning. Great for breakfast buffets!

1/2 lb grated cheddar cheese
1/2 lb grated swiss cheese
2 lbs cooked crisp bacon, crumbled
1/4 cup onion, chopped
1 dozen egg
2 cups milk
4 slices bread
salt & pepper

Steps:

  • Preheat over to 350 degrees.
  • Mix eggs and milk.
  • Put slices of bread on the bottom of greased 9 X 13 pan.
  • Put cheese over bread.
  • Put bacon on next and then onion.
  • Pour egg mix over and refridgerate overnight.
  • Bake 45 minutes - 1 hour.
  • You can serve this with bagels, fresh fruit, etc.

7 slices white bread, crusts removed and cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

Turn leftover fruitcake or Christmas pudding into these individual hot desserts, served with warm caramel sauce to pour into each pot

butter , for greasing
1 tbsp golden caster sugar , plus extra for dusting
4 medium egg whites
150ml ready-made custard
85g fruitcake , Christmas cake or pudding, finely crumbled
caramel sauce , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4 and put in a baking tray to heat up. Grease 4 x 150ml ramekins, then add some sugar to each and shake to coat before tipping out the excess.
  • Whisk the egg whites until stiff peaks form, then add the sugar and continue whisking until stiff again. In a big mixing bowl, stir together the custard and crumbled cake. Stir in a quarter of the egg whites, and very gently fold in the rest using a big metal spoon until the mixture isn't too streaky.
  • Divide the mixture between the ramekins, running your finger around the top inside of each to leave a 'gap' between the mixture and the ramekin just at the very top. Bake for 12-15 mins until risen and golden. Meanwhile, warm the caramel sauce.
  • Serve the hot soufflés immediately, with jugs of warm caramel sauce for people to pour into theirs.
