CHRISTMAS MORNING EGG CASSEROLE

This was the casserole my mom made every year for Christmas morning.

cooking spray (such as Pam®)
2 cups diced cooked ham
2 tablespoons butter, or as needed
7 slices bread, crusts removed
½ pound American cheese, cubed
3 cups milk
6 eggs, beaten
¾ teaspoon dry mustard
¾ teaspoon salt

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray.
  • Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.
  • Whisk milk, eggs, mustard powder, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from casserole.
  • Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour.

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

So named because this is what we have for breakfast on Christmas morning. I make it on Christmas Eve and refrigerate it overnight. On Christmas morning, I pop it in the oven while we open our presents and we have a wonderful hot breakfast waiting for us when we're done.

1 lb sausage
6 eggs
2 cups milk
1/2 teaspoon salt
1 teaspoon dry mustard
1 (8 ounce) package refrigerated crescent dinner rolls
1 cup sharp cheddar cheese, grated

Steps:

  • Brown sausage and drain.
  • Mix eggs, milk, salt, and mustard.
  • Unroll crescent dough and press into the bottom of a 9 x 13 casserole dish making sure you press the seams closed.
  • Top dough with sausage then cheese.
  • Pour egg and milk mixture over sausage and cheese.
  • Cover and refrigerate overnight.
  • Next morning: Preheat oven to 350 and bake for 45 minutes or until cheese melts and eggs have set.

1 lb ground beef
4 cups broccoli florets
6 slices white bread
12 eggs
2 cups milk, low fat
2 cups cheddar cheese, low fat, shredded
salt
pepper

Steps:

  • Spray a 13x9 baking pan with cooking spray.
  • Brown the ground beef and steam the broccoli.
  • Line the baking pan with the slices of bread.
  • Whisk together the eggs and milk.
  • Crumble the cooked beef over the bread. Add the broccoli and the shredded cheese.
  • Pour the egg/milk mixture over all.
  • Place in the refrigerator for 12 hours.
  • Preheat the oven to 325°F Bake for 1 hour, or until eggs are set and the top of the casserole is light brown.

  • Butter a 9-by-13-inch baking dish. In a large skillet, heat the olive oil. Add the pepperoni and cook over moderate heat until the fat is rendered, about 3 minutes. Add the shiitake and cook until lightly browned and tender, about 5 minutes. Add the onion, bell pepper and a generous pinch of salt and cook, stirring occasionally, until softened and browned, about 7 minutes; let cool completely.
  • In a large bowl, beat the eggs with the milk, mustard, soy sauce, pepper and 2 teaspoons of salt. Add the cooled vegetable mixture, challah, ham, both cheeses and the chopped scallions and mix well. Scrape the mixture into the prepared baking dish, cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350°. Uncover the casserole and bake for about 50 minutes, until it’s just set and the top is browned. Let stand for 10 minutes, then top with thinly sliced scallions and serve with hot sauce.
