These Cherry Chews have been baked in my family for generations. They are sure to be a family favorite of yours too!

Steps:
- Mix flour, oats, brown sugar, baking soda and salt in a large bowl. Cut in butter until mixture is crumbly. Press into greased 9 by 13 pan and bake at 350 degrees for 10 minutes.
- In a large bowl beat eggs, stir in brown sugar and almond extract
- Mix flour, baking powder and 1/2 tsp salt, and stir into eg mixture until combined.
- Fold in coconut and cherries.
- Spread mixture over prepared crust using an offset spatula
- Sprinkle with pecans
- Bake at 350 degrees for 25 minutes, until lightly browned
- Remove from oven and allow to cool while preparing frosting.
CHRISTMAS CHERRY CHEWS
We make these around Christmas time, because the red and green cherries make it so holiday looking....warning, these are addictive, they taste almost like a fruitcake with a crust

Steps:
- Set oven to 350 degrees.
- Grease a 9" x 13" baking pan.
- In a bowl, mix together the first 5 ingredients.
- Cut in the cold butter with a pastry blender until crumbly.
- Press mixture into the prepared baking pan.
- Bake for 8-9 minutes (don't overbake); remove and cool.
- Lower the oven temperature to 325 degrees.
- In a bowl, combine all topping ingredients; mix well.
- Spread topping over the cooled base.
- Sprinkle with pecan halves over top.
- Return to oven; bake for 30 minutes longer.
- Cool, cut into squares.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9x13 inch baking pan.
- Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking. In a medium bowl, beat eggs, almond extract, 1 cup of brown sugar, 1 tablespoon of flour, baking powder and 1/2 teaspoon of salt until smooth. Stir in the coconut, cherries and pecans. Spread over the pre-baked crust.
- Bake for 25 minutes in the preheated oven, until light brown. Let cool before icing.
- To make the icing, mix together the remaining 6 tablespoons butter, confectioners' sugar and vanilla until smooth. Gradually add the reserved cherry juice until the desired consistency is reached. Drizzle over cooled bars before cutting into squares.

DARK CHOCOLATE CHERRY CHEWS
Found this recipe on the web (A Pinch of Salt) while searching for something else. There were photos and the cookies looked absolutely amazing. The cooks notes: "These cookies are very flat and chewy, if you prefer a thicker, more cake-like chocolate chip cookie, this recipe might disappoint you. I used dark chocolate bars from Trader Joe's and chopped them up into small chunks, but you can use any kind of dark chocolate chips or chunks you wish. The reason I like to chop them myself is that you get lots of little flakes of chocolate that melt into the cookie dough. The cherries I used were Dried Pitted Tart Montmorency Cherries, also from Trader Joe's. I loved the tartness of these cherries with the sweet cookie, but feel free to use other dried cherries if you can't find that particular type. And finally, feel free to add extra chocolate and cherries if you wish!"

- In a medium bowl, whisk together flour, soda, and salt; set aside.
- Using an electric hand mixer or stand mixer, cream together the butter and sugars.

I make these attractive cherry coconut cookies every Christmas for family and friends. During that busy time of year, I appreciate the fact that they freeze well, so I can make them ahead.

- In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut and nuts if desired. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Place a cherry half in the center of each. - Dip measuring cup into mix and level off;allow to come to room temperature.
- Heat oven to 375°F.
- Grease cookie sheets.
- In a large bowl,combine cookie mix,1 cup coconut,almond extract and egg at low speed until well mixed and dough forms.
- In a small bowl,beat egg white and water until foamy.
- Shape dough into 1-inch balls.
- Dip in egg-white mixture;roll in coconut.
- Place 2 inches apart on greased cookie sheets.
- Place cherry in center,pressing down lightly.
- Bake at 375 F for 11-14 minutes or until edges are light golden brown.
- These overbake easily so keep an eye on them.

Steps:
- Heat oven to 350.
- Mix flour, rolled oats, 1 cup brown sugar, baking soda, and 1/4 teaspoon salt. Add 1/2 cup butter and mix until crumbly, first with a fork, then with fingers. Press mixture into a greased 9x13-inch pan. Bake for 10 minutes.
- Beat eggs, stir in remaining brown sugar and almond extract. Mix flour, baking powder, and 1/2 teaspoon salt together, then stir into egg mixture. Add coconut and cherries and stir to blend. Pour over first mixture and spread evenly. Sprinkle with pecans. Return to oven and bake 25 minutes, or until lightly browned.
- Cool and ice with Cherry-Almond Icing. Cut in 1 1/2 x 3" squares, or bars.
- Cherry Almond Icing:.
- Blend remaining 3 tablespoons butter and icing sugar. Add reserved cherry juice and 1/4 teaspoon almond extract, using enough juice to make the icing easy to spread. Stir until smooth.
CHERRY WINKS
Cookies are rolled in crushed corn flakes and topped with a quarter of a maraschino cherry.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
- Cream the shortening with the sugar. Blend in the eggs, milk and vanilla.
- Sift together the flour, baking powder, baking soda and salt. Add the flour mixture to the creamed mixture and mix well. Stir in the chopped pecans, chopped dates and 1/3 cup maraschino cherries.
- Shape teaspoonful sized chunks of dough into balls. Roll each ball in the crushed corn flakes. Place balls on the prepared baking sheets and top each cookie with 1/4 maraschino cherry.

- Heat oven to 350°F. In small bowl, mix flour, cocoa, baking powder and salt; set aside.
- In 2-quart saucepan, heat butter and 1 cup of the chocolate chips over low heat, stirring occasionally, until melted. Remove from heat; stir in sugar. Pour into large bowl. Beat in eggs one at a time until blended. Beat in vanilla. Stir in flour mixture until well blended. Stir in 1 cup of the chocolate chips and the cherries. Cover and refrigerate 30 minutes.

- Bake 7 to 9 minutes or until edges are set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes.
- In small microwavable bowl, microwave remaining 1/2 cup chocolate chips uncovered on High 30 to 60 seconds, stirring halfway through, until chips can be stirred smooth. Spoon into resealable food-storage plastic bag; partially seal bag. Cut small tip from corner of bag; drizzle chocolate over tops of cookies. Let stand about 2 hours or until chocolate is set. Store covered in airtight container.
