- Combine wafer crumbs, pecans and butter. Press half of mixture into a 13x9-in. dish. Freeze for 30 minutes., Remove softened ice cream from package; spread over crust. Sprinkle with remaining crumb mixture. Freeze, covered, for at least 4 hours., For topping, combine sugar, cocoa and flour in a small saucepan; stir in milk until smooth. Bring to a boil, stirring constantly; cook and stir for 2 minutes. Stir in butter. Serve over dessert.

STRAWBERRY ICE CREAM DESSERT
Get out your springform pan! I found this wonderful recipe in a magazine--I think it was Taste of Home. This a great dessert for a get together and on a nice summer evening. It is so easy to make and so yummy. I was really happy with the way this turned out. The prep time includes the bake time (8 minutes) for the crust and the cook time is the freeze time all together.

- In a bowl, combine cracker crumbs and butter; set aside 2 tablespoons for garnish. Press remaining crumb mixture into the bottom of ungreased 10 inch springform pan. Place on a baking sheet. bake at 375°F for 8 minutes or until edges begin to brown. cool on a wire rack.
- In a large mixing bowl, combine the ice cream, milk, pudding mixes, and vanilla; beat until smooth. Fold in half of whipped topping. Pour over crust. Cover and freeze for 1 hour or until firm.
- Spread with remaining whipped topping; sprinkle with reserved crumb mixture. Freeze for at least 3 hours or until firm. Remove from freezer 15 minutes before serving. I garnish with strawberry halves.

This always bring's back chilhood memories. It's an old time dessert that my mom made quite frequently. You may also use CornFlakes or RiceChex instead of the Krispies.

- Mix all together. (omitting the icecream).
- Spread 1/2 the mixture in a buttered 9x13 inch baking pan.
- Slice icecream (softened) on top.
- Sprinkle with remaining crumbs over the top.
- Refreeze.
- It's already quite sweet, but if you're so inclined, drizzle with a little of your favorite ice-cream topping. Butterscotch, caramel, or hotfudge all work.

- Boil 2 cups hot water.
- Add to all of the jello powder combined.
- Mix well till dissolved.
- Add one cup cold water.
- Mix well.
- Put in fridge until the jello is partially set.
- Then take it out of the fridge, add one cup of vanilla ice-cream and beat until well blended.
- Set in fridge overnight.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat the bottom and sides of two 8-inch round cake pans.
- Blend cake mix, water, oil, and eggs in a large bowl until moistened. Beat with a mixer on medium speed for 2 minutes. Pour into the prepared cake pans.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 32 to 38 minutes.
- While the cake layers are baking, line a clean 8-inch round cake pan with plastic wrap, allowing the sides to hang over about 6 inches all the way around. Peel down the sides of the ice cream carton and slice off several big pieces; press them into the prepared cake pan. Wrap plastic over the top of the ice cream and continue to form until it's in an even layer. Freeze for 1 hour.
- Remove cakes from the oven and cool for 10 to 15 minutes in the pans. Transfer to a wire rack and let cool completely, about 30 minutes.
- Place one cake layer on a freezer-safe plate. Reserve remaining layer for another use (you can freeze it for up to 4 months.)
- Combine chopped cookies and chocolate topping in a medium bowl. Spread cookie "crunchies" evenly on top of the cake layer. Invert frozen ice cream layer on top of cookie layer with the bottom (smooth side) up. Return to the freezer for 1 hour.
- Add cream to bowl of a stand mixer fitted with a whisk attachment and whisk on medium speed. Gradually mix in powdered sugar until stiff peaks form. Spread icing evenly over cake and freeze for 1 more hour.
- Decorate cake with icing and sprinkles and return to the freezer for at least 30 minutes (or up to 1 week) before serving.
