CHOPPED CAPRESE SALAD
Chopped Caprese salad. An easy way to toss together this delicious vegetarian appetizer and perfect for sharing - or for keeping the whole bowl to yourself. Basil gives this a fresh taste and the flavors meld together for a delicious, crowd pleasing dish.

Steps:
- In a medium bowl, toss together the cut up tomatoes, mozzarella, and basil leaves.
- Add olive oil to bowl, and lightly toss together.
- Drizzle the balsamic vinegar over the top of salad.
- Sprinkle salt as desired.

Steps:
- 1. Combine mozzarella, oil, shallot, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl. Coarsely shop half of basil leaves and add to mozzarella mixture; set aside while preparing tomatoes. Combine tomatoes and 1 teaspoon salt in separate bowl; transfer to colander set in sink and let drain for 15 minutes, stirring occasionally. (Tomatoes can be prepared up to an hour in advance).
- 2. Tear remaining basil leaves into 1/2-inch pieces. Gently toss tomatoes, romaine, olives, vinegar, mozzarella mixture, and basil together in large bowl. Season with salt and pepper to taste, serve.

- Add the tomatoes, iceberg, romaine, chickpeas, salami and mozzarella to a large salad bowl.
- Add the olive oil, Parmesan, vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a measuring cup or mason jar. Whisk to combine.
- Add the dressing to the salad and toss to combine. Serve immediately.
