- Preheat oven to 350 degrees. In a food processor, pulse wafers until finely ground. Add butter, sugar, and salt, and process until well combined. Press mixture firmly into bottom and up sides of a 9-inch pie plate. Bake until crust is firm, about 10 minutes. Let cool completely on a wire rack.

Made with instant vanilla pudding in a chocolate crust with crushed chocolate wafer cookies. For a special treat, drizzle the pie with chocolate syrup before serving.

- Whip cream and vanilla together until soft peaks form. Fold whipped cream into vanilla pudding mixture.

This pie is very easy to make. There is no pie crust to make. This pie can be made ahead and frozen without the whipped topping and chocolate shavings. Recipe is from Paula Deen magazine and was submitted by one of her readers.

Steps:
- Preheat oven to 325 degrees F.
- Spray a 9-inch pie dish with nonstick cooking spray.
- In a medium bowl, beat egg whites and salt at high speed with an electric mixer until foamy.
- Gradually add sugar, beating until stiff peaks form.
- Gently fold in chocolate wafer crumbs, pecans and vanilla.
- Spoon mixture into prepared pie dish, and bake for 30-35 minutes or until the center of pie is firm.
- Let cool completely on a wire rack.
- Spread whipped topping over pie before serving.
- Garnish with grated chocolate, if desired.

- In a medium bowl, whisk to combine the flour, cocoa powder, baking powder, and salt. Set this aside.
- With a hand mixer or a stand mixer, cream together the butter and sugar (you want to cream until the sugar granules are no longer visible, but if you rub the mixture with your fingertips you can still feel the sugar granules. This takes a few minutes). Mix in the milk and vanilla, then add in the dry ingredients. Mix together until combined, and note that the dough will be crumbly, but it should hold together when you press a clump between your fingertips.
- Shape the dough into a log, and wrap in wax paper or plastic wrap. Refrigerate for at least an hour to allow the butter to firm up.
- Preheat the oven to 350, then slice the log into 1/8inch thick wafers. Lay the dough circles on a silpat or parchment lined baking sheet, giving them an inch in between cookies to allow them to spread. Bake for 15 minutes until dry to the touch, then let them cool completely. They should crisp as they cool.

- Combine the chocolate wafers, sugar and butter in bowl of food processor fitted with the blade attachment and pulse until the cookies are finely crushed. Press the mixture firmly into a 9-inch pie pan (spread some of the crumbs up the sides first, making the crust just shy of 1/4-inch thick, then press the remaining crumbs onto the bottom; use a the bottom of a measuring cup or glass to even out, if you like). Bake for 10 minutes until crisp.
- Combine the sugar, cornstarch and salt in a heavy medium saucepan. Whisk gently until combined.
- In a bowl or large measuring cup, whisk together the milk and egg yolks. Add the milk mixture to the saucepan in a slow and steady stream, whisking until the mixture is smooth. Cook over medium-high heat, whisking frequently, until the mixture starts to bubble and thicken, 6-8 minutes. Immediately turn the heat down to a simmer and cook -- whisking constantly, especially around the edges -- for one more minute until thick. Off the heat, immediately add the chopped chocolate, butter and vanilla extract; whisk until evenly combined.
