Use to make the Coffee Cream Pie from "Martha Stewart's New Pies & Tarts." Martha made this recipe on episode 507 of Martha Bakes.

Yield Makes one 9-inch crust

Number Of Ingredients 4

25 chocolate wafers (6 ounces), broken into pieces, or 1 1/2 cups wafer-cookie crumbs
5 tablespoons unsalted butter, melted
3 tablespoons sugar
Pinch of salt

Steps:

  • Preheat oven to 350 degrees. In a food processor, pulse wafers until finely ground. Add butter, sugar, and salt, and process until well combined. Press mixture firmly into bottom and up sides of a 9-inch pie plate. Bake until crust is firm, about 10 minutes. Let cool completely on a wire rack.

VANILLA CREAM AND CHOCOLATE WAFER PIE

Made with instant vanilla pudding in a chocolate crust with crushed chocolate wafer cookies. For a special treat, drizzle the pie with chocolate syrup before serving.

½ cup heavy whipping cream
2 ½ teaspoons vanilla extract
1 (9 inch) prepared chocolate cookie crumb crust
3 cups prepared vanilla pudding
1 ¾ cups chocolate cookie crumbs
¼ cup chocolate syrup

Steps:

  • Whip cream and vanilla together until soft peaks form. Fold whipped cream into vanilla pudding mixture.
  • Mix in crushed chocolate wafers. Pour mixture into prepared pie shell. Chill for 1 hour. Just before serving, drizzle with chocolate syrup, if desired.

This pie is very easy to make. There is no pie crust to make. This pie can be made ahead and frozen without the whipped topping and chocolate shavings. Recipe is from Paula Deen magazine and was submitted by one of her readers.

3 egg whites
1/8 teaspoon salt
3/4 cup granulated sugar
3/4 cup chocolate wafer crumbs, finely ground
1/2 cup pecans, chopped
1/2 teaspoon vanilla extract
1 (8 ounce) container frozen non-dairy topping, thawed
grated chocolate (optional)

Steps:

  • Preheat oven to 325 degrees F.
  • Spray a 9-inch pie dish with nonstick cooking spray.
  • In a medium bowl, beat egg whites and salt at high speed with an electric mixer until foamy.
  • Gradually add sugar, beating until stiff peaks form.
  • Gently fold in chocolate wafer crumbs, pecans and vanilla.
  • Spoon mixture into prepared pie dish, and bake for 30-35 minutes or until the center of pie is firm.
  • Let cool completely on a wire rack.
  • Spread whipped topping over pie before serving.
  • Garnish with grated chocolate, if desired.

2 ounces (4 tablespoons) unsalted butter, melted
2 tablespoons sugar

Steps:

  • Preheat oven to 350 degrees. Pulse ground chocolate wafers, butter, sugar, and a pinch of salt in a food processor until well combined.
  • Pat mixture into a 9-inch pie dish, pressing firmly into bottom and up sides. Bake until crust is fragrant and darkens slightly, about 10 minutes. Let cool completely on a wire rack.

  • In a medium bowl, whisk to combine the flour, cocoa powder, baking powder, and salt. Set this aside.
  • With a hand mixer or a stand mixer, cream together the butter and sugar (you want to cream until the sugar granules are no longer visible, but if you rub the mixture with your fingertips you can still feel the sugar granules. This takes a few minutes). Mix in the milk and vanilla, then add in the dry ingredients. Mix together until combined, and note that the dough will be crumbly, but it should hold together when you press a clump between your fingertips.
  • Shape the dough into a log, and wrap in wax paper or plastic wrap. Refrigerate for at least an hour to allow the butter to firm up.
  • Preheat the oven to 350, then slice the log into 1/8inch thick wafers. Lay the dough circles on a silpat or parchment lined baking sheet, giving them an inch in between cookies to allow them to spread. Bake for 15 minutes until dry to the touch, then let them cool completely. They should crisp as they cool.

Cook over medium-high heat, whisking frequently, until the mixture starts to bubble and thicken, 6-8 minutes. Immediately turn the heat down to a simmer and cook -- whisking constantly, especially around the edges -- for one more minute until thick. (The constant stirring and low heat prevents the eggs from scrambling. Be sure to scrape the whisk against the bottom and edges of the pan where the mixture is more likely to overheat.) Off the heat, immediately add the chopped chocolate, butter and vanilla extract; whisk until evenly combined.
