CHOCOLATE SUNDAE COOKIES
These chocolate sundae cookies are a unique, tasty addition to your cookie trays and holiday gatherings!

- In a large bowl, cream together brown sugar, shortening #1, egg, and vanilla #1. Melt unsweetened chocolate and mix into bowl. Stir in flour, baking soda, salt, milk, chopped cherries #1, cherry juice, and walnuts. Mix well. Drop by teaspoonfuls onto greased cookie sheets. Bake at 350 degrees for 12 minutes. Melt chocolate chips, shortening #2, and corn syrup together. Remove from heat, and stir in vanilla #2. As soon as the cookies are removed from the oven, press half a marshmallow into the center, and let cookies cool 5-10 minutes. Transfer to a wire rack, and spoon glaze over the marshmallow. Top with a whole cherry #2.

- 1. -Using your mixer, beat brown sugar and shortening until well blended. Add in your egg and beat till mixed. -In a medium bowl, sift together flour, baking soda and salt. -To your brown sugar mixture add the maraschino juice, milk and melted chocolate. -Slowly add in your flour mixture till all incorporated. Remove mixer. -Stir in your snipped cherries and chopped walnuts. -Preheat oven to 350F. -Using a small cookie scoop or by heaping teaspoonfuls, drop your cookies onto a parchment lined cookie sheet. -Bake for 13-15 minutes. -As soon as the cookies come out of the oven, immediately place a marshmallow halve on top of the warm cookie and press down just a little to ensure it sticks. Continue baking and topping the rest of the cookies. -Using your microwave in 20 second increments (or can use a double boiler), melt your chocolate chips with your shortening . -Drizzle chocolate over marshmallows and cookies. Let dry on wire rack. Store in airtight container. Don't forget to snag just a couple for yourself...

- Preheat oven to 350.
- Cookies:.
- Mix together flour, baking soda, and salt, set aside.
- With your mixer, mix brown sugar and shortening.
- Blend in egg. Beat well, then stir in 1/2 of the dry ingredients.
- Add Marachino juice and milk.
- Stir in the rest of dry ingredients, and mix well.
- Blend in melted unsweetened chocolate (you can use the kind that are already melted, or substitute 6 T. of cocoa and 2 T. oil), chopped cherries, and chopped walnuts.
- Drop by spoonfuls on an ungreased cookie sheet.
- Bake for 12-15 minutes.
- While cookies are baking cut large marshmallows in half.
- Place the cut side of the marshmallow down on hot cookies when they come out of the oven, so they will stick.
- Let cool.
- Frost cookies, then and put a nut on top.
- Buttercream Chocolate Frosting:
- Beat cocoa, margarine, milk and vanilla well. Add in confectionary sugar to desired consistency.

- Preheat oven to 350°.
- Stir together flour, baking soda, salt and cocoa.
- In a separate bowl, cream together shortening, vanilla, sugar and egg for about 2-3 minutes. Blend in dry ingredients and milk. Use cookie scoop to scoop onto prepared baking sheet.
- Bake for 8 minutes. While baking, blend all of the icing ingredients together until smooth.
- Remove cookies from oven, set 1 marshmallow half on each cookie and return to oven to bake for 1 more minute. Cool for 1-2 minutes, and then drop a spoonful of chocolate icing on each marshmallow topped cookie, letting it drizzle down the sides.
- Let the cookies set up for a few minutes and then transfer to a wire rack to cool completely.

- In a stand mixer fit with paddle attachment, cream the butter and sugars together until the mixture becomes light and airy, about 2 minutes. Scrape down the bowl and add in the egg and vanilla, beating until well combined.
- In another bowl, sift together the flour, cocoa powder, espresso powder, baking soda, and salt. Next, add the dry ingredients into the butter mixture, stirring until just combined. Gently fold in the chocolate chips, being careful not to over mix the dough.
- Spoon about 1/4 of the fluff into the batter and fold once or twice. You fluff will get marbled and incorporate into the dough when you scoop the cookies out, so you want to make sure not to over mix the fluff in. Use a large cookie scoop to scoop out about 1 inch cookie dough spheres around the areas of the dough that has fluff in it. Place the cookies on the prepared cookie sheet about 2 inches apart. Continue to add in the marshmallow fluff in increments every few cookies to make sure each cookie has a good amount of fluff without over incorporating the fluff. Bake for 10-12 minutes, being sure to keep an eye on the bake as every oven is different. The key is a soft center, but a firmer edge. Let cool on a rack for 10 minutes before serving. Devour.
