- In a saucepan, combine the cracker crumbs, sugars, butter and milk. Bring to a boil, stirring constantly; cook and stir 5 minutes longer., Place a single layer of crackers in a greased 13-in. x 9-in. dish; top with half of crumb mixture. Repeat layers. Top with remaining crackers., In a small saucepan, combine the butterscotch chips, chocolate chips and peanut butter. Cook and stir until smooth. Pour over crackers. Let stand until set.

CHOCOLATE PEANUT BUTTER CRISPY BARS
These chocolate peanut butter crispy bars are like modern-day scotcheroos! This recipe is easy to make with wholesome pantry ingredients, and it's naturally sweetened with honey instead of corn syrup. Keep in mind that these no-bake treats require 2 hours in the refrigerator to set. Recipe yields 16 small treats from one 8-inch square pan (or double the recipe to fill a 9 by 13-inch pan).

- Line an 8-inch square baking dish with a strip of parchment paper, cut to fit neatly across the base and up opposite sides. In a large mixing bowl, combine the brown rice crisps and 1 cup of the chopped pecans (reserve the rest for sprinkling on top). Set both aside.
- In a medium saucepan, combine the peanut butter and honey. Warm the mixture over medium-low heat, stirring often, until it's steaming or you catch a bubble or two forming on the bottom, about 5 minutes. (We don't want this mixture to come to a boil or the peanut butter could scorch.)
- Pour the warm mixture into the bowl of rice crisps. Using a rubber or silicone spatula, stir until the mixture is completely combined. Transfer it all to the lined baking dish. Press down with the spatula to spread it fairly evenly, then switch to a large, sturdy glass with a flat bottom (maybe a working jar or mason jar or what-have-you) and press down firmly all over, including the corners. You really want to pack it down (it's ok if you hear some crunching noises). Lastly, use your hands to ensure that it's evenly compacted.
- Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each one. Don't overdo it. The chocolate is done when it's about 90% melted-keep stirring off the heat and the pieces should completely dissolve. (Alternately, you can use melt it in a heat-proof bowl set over a saucepan of gently simmering water.)
- Pour the melted chocolate over the peanut butter-crispy mixture. Use a clean spatula to spread it evenly all over. Make some pretty chocolate swooshes if you'd like. Sprinkle the remaining pecans on top, followed by the salt.
- Place the baking dish in the refrigerator and chill for at least 2 hours, or up to a day. To slice, carefully grab both sides of the parchment paper and lift it out of the baking dish. Use a sharp chef's knife to make 4 even columns and 4 even rows-to minimize the risk of cracking the chocolate, carefully apply even pressure from above the knife to press straight down, rather than sawing from one edge across.
- These bars will keep well at room temperature for up to 1 week, or for several months in the freezer. Store in an air-tight container either way.

- Melt the butter in a large pan over medium-low heat. Once melted, add the marshmallows. Stir the mixture until the marshmallows are completely melted. Stir in the peanut butter and vanilla.
- Remove from heat, then immediately fold in the cereal. Make sure each piece of cereal is coated with the peanut butter/marshmallow mixture.
- Transfer mixture to 9 by 13-inch baking pan that has been lined with parchment paper and sprayed with nonstick spray. Gently press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands). Don't pack it in too hard.
- Put the chocolate chips in a medium-sized heatproof bowl. Microwave for 30-second intervals, stirring in between each interval. When they are almost melted, remove and stir until smooth. Pour the melted chocolate over the mixture and let cool to harden.
- Allow treats to set for about an hour at room temperature. Lift the Rice Krispie Treats out of the pan using the parchment paper. Cut into squares.
- Cover and store leftover treats at room temperature for up to 3 days. To store, place in layers between sheets of parchment or wax paper.

I love this recipe because there's very little cooking and kids can help make them. There are some major decisions to make before starting though-regular rice cereal or chocolate rice cereal, plus the really big decision - creamy or crunchy peanut butter. Marriages have nearly broken up over this one so choose wisely and consult the whole family before proceeding. - Place the cereal in a bowl. In a saucepan combine the brown sugar and corn syrup and bring to a boil. Boil for 1 minute then turn off the heat. Stir in the peanut butter then pour it over the cereal and stir immediately to combine and coat. Press into greased mini muffin tins (you'll probably need 3 tins) and let cool to set about 15 minutes. Pop out and store at room temperature.

- Line a 13 x 9 inch baking pan with foil. Lightly spray the foil with vegetable spray.
- Mix sugar and corn syrup in 3 quart sauce pan until mixture boils.
- Remove from heat. Stir in peanut butter; mix well until melted.
- Add Rice Krispies, stirring until all are coated.
- Add 1 cup of mini chocolate chips and stir to distribute throughout. (Don't worry if they melt).
- Press into pan. Sprinkle remaining cup of chocolate chips over the top and press down slightly.
- Cool. Lift foil out of pan and cut into squares.
- I have found a pizza cutter works great for cutting them.

- Prepare a 9 by 9 inch baking pan by lining it with parchment paper. In a large pan, melt butter over medium high heat. Add brown sugar and stir to dissolve. Stir in the heavy cream, and bring to a boil, stirring constantly. Boil for 1 minutes, then turn the heat down to medium low and add the peanut butter and marshmallows. Stir until the marshmallows are melted. Remove from the heat and add cereal. Stir until well coated.
- In a small microwave safe bowl, melt chocolate chips and peanut butter for 30 seconds. Stir and then microwave in 15 second intervals until the smooth.
- Spread the chocolate peanut butter mixture over the cereal bars in an even layer. Chill 30 minutes to set the chocolate, and then remove from the pan and cut into bars.
