CHOCOLATE-PEANUT BUTTER CAKE MIX COOKIE BARS
It is so easy to make cookie bars with cake mix. These Chocolate-Peanut Butter Cake Mix Cookie Bars are oh-so decadent and incredibly simple to make!

Steps:
- 1. Preheat oven to 325 degrees. Set aside an ungreased 9X13 inch metal pan.
- 2. Stir and combine cake mix, melted butter, peanut butter, and eggs in a large bowl using an electric mixer or a wooden spoon. The batter will be thick. Press this into the pan, reserving 1 1/2 cup of the mixture to crumble on top.
- 3. In a small pot, melt chocolate chips, sweetened condensed milk, and butter. Remove from heat and stir in the vanilla.
- 4. Spread chocolate mixture over the cookie crust in the pan, and then crumble the 1 1/2 cups of reserved cake mixture on top evenly.
- 5. Bake for 20-25 minutes. Cool completely before cutting into bars.
- These cookie bars are amazing when eaten warm, but are just as good cooled. Serve with a tall glass of milk, and enjoy. You know you want one!

- Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
- In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press in pan. Bake 12 to 15 minutes or until edges are light golden brown. Cool 5 minutes.
- In small microwavable bowl, microwave chocolate and butterscotch chips on High 1 to 1 1/2 minutes; stir until smooth. Spread over bars. Refrigerate about 30 minutes or until chocolate is set.

- Preheat oven to 350°.
- In a large bowl, add melted butter, peanut butter and eggs to the cake mix. Mix with an electric mixer until well blended.
- Use a cookie scoop to scoop out tablespoon sized balls and then roll between your hands for a perfect round shape.
- Place the cookie dough balls on a prepared cookie sheet and press each ball lightly with the back of a fork twice - making a criss-cross pattern.
- Bake for 8 minutes and then let the cookies cool on the cookie sheet for several minutes before transferring to a wire rack to cool completely.

- Grease, lightly spray or line 2 cookie sheets with parchment paper.set aside.
- Mix all ingredients at low speed -- except peanut butter pieces --.
- Stir in Reese's peanut butter pieces (candy coated).
- Drop by small scoop onto prepared sheets.

- Grease a 9x13-inch pan.
- Mix first four ingredients.
- Spread mixture into pan.

- Heat oven to 350°F
- Coat a 9x13" baking pan lightly with non-stick cooking spray.
- Beat cake mix, oil and egg in large mixing bowl, on medium speed until somewhat crumbly. Add peanuts and stir. Measure out and set aside 1 1/2 cups of the cake crumb peanut mixture to be used later. Pour remaining mixture into prepared pan and press out to evenly cover the bottom of the pan.
- Beat sweetened condensed milk and peanut butter in a medium bowl until smooth (hint: use the same bowl you used for cake crumbs). Spread this over the prepared cake crust. This will be a bit challenging. Be careful but don't worry if you struggle with the cake layer a bit.
- After spreading the mixture sprinkle about 4 oz of semi sweet chocolate chips evenly over the peanut butter mixture.
- Pour reserved cake crumb mixture over the top and spread evenly, pressing down gently.
- Bake 25 - 30 minutes until set. Remove from oven. Turn oven off. Top with Remaining about 6 oz more of chocolate chips. Return to oven for 1 minute and then remove from oven. Use a spatula to spread the chocolate evenly over the top of the bars. Cool and store in covered container. Enjoy.
- Note: You can be creative with this recipe. The cake flavor may be changed. Other flavor chips may be substituted for chocolate. Other nuts may be substituted or combined for/with peanuts. Other nut butters may be substituted for peanut butter. This one basic recipe can produce many bar variations.
