This is a wonderful treat for people who love the combination of chocolate and orange. It brings back wonderful memories of me cooking in the kitchen with my mom, when I was a little girl.

1 (9 ounce) box vanilla wafer cookies
2 1/4 cups confectioners' sugar
1/4 cup unsweetened cocoa powder
1/3 cup orange juice concentrate
1/4 cup light corn syrup
1 1/2 cups pecan pieces

Steps:

  • In a food processor, combine the vanilla wafers, 2 cups of the confectioner's sugar, cocoa powder, orange juice concentrate, and corn syrup.
  • Process until the cookies are ground to crumbs and mixture is evenly blended.
  • Add the pecan pieces and pulse process until the nuts are finely chopped.
  • Transfer the mixture to a bowl and form into 1" balls.
  • Roll balls in 1/4 cup confectioner's sugar** to coat.
  • Store in an airtight container in refrigerator for up to 1 month.
  • **We always rolled our balls in regular granulated sugar. If we made them at Christmas time, we dyed some of the sugar green and some of the sugar red and rolled 1/2 the balls in the green sugar and 1/2 the balls in the red sugar.

1 package (11-1/2 ounces) milk chocolate chips
1 cup semisweet chocolate chips
3/4 cup heavy whipping cream
1 teaspoon grated orange zest
2-1/2 teaspoons orange extract
1-1/2 cups finely chopped toasted pecans
COATING:
1 cup milk chocolate chips
2 tablespoons shortening

Steps:

  • Place chocolate chips in a bowl; set aside. In a saucepan, bring cream and orange zest to a gentle boil; immediately pour over chips. Let stand for 1 minute; whisk until smooth. Add extract. Cover and chill for 35 minutes or until mixture begins to thicken. , Beat mixture for 10-15 seconds or just until it lightens in color (do not overbeat). Spoon rounded teaspoonfuls onto waxed paper-lined baking sheets. Cover and chill for 5 minutes. , Gently shape into balls; roll half in nuts. In a microwave; melt chocolate and shortening; stir until smooth. Dip remaining balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in the refrigerator.

No-bake orange balls are similar to bourbon balls with vanilla wafer crumbs. The orange juice concentrate gives them a burst of orange flavor.

12 ounces vanilla wafer cookies (finely crushed)
1 cup confectioners' sugar (plus more for coating)
1/4 cup butter (softened)
1/2 cup orange juice concentrate (thawed)
1/2 teaspoon vanilla extract
1 cup pecans (chopped)
1/2 sifted confectioners' sugar (or shredded coconut for coating)

Steps:

  • Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
  • Add the butter to the crumb mixture and blend in well.
  • Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
  • With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
  • Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. Relish this distinctive dessert - orange and rosemary flavored sandwich cookies with a decadent chocolate and whipped cream filling.

1 cup butter, softened
1/2 cup powdered sugar
1 tablespoon grated orange peel
1 tablespoon finely chopped fresh rosemary leaves
1/4 teaspoon salt
1 teaspoon vanilla
2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 cup coarse white decorator sugar crystals, if desired
1/2 cup dark chocolate chips
2 tablespoons whipping cream

Steps:

  • Heat oven to 400°F. In large bowl, beat butter, powdered sugar, orange peel, rosemary, salt and vanilla with electric mixer on low speed until mixed; beat on medium speed until creamy. On low speed, beat in flour and baking powder until dough forms.
  • In small bowl, place decorator sugar. Shape dough into 60 (1-inch) balls. Roll in sugar. On ungreased cookie sheets, place balls 2 inches apart. Press lightly with tines of fork to flatten slightly.
  • Bake 6 to 8 minutes or just until edges start to brown. Remove from cookie sheets to cooling racks; cool completely.
  • Meanwhile, in small microwavable bowl, microwave chocolate chips and whipping cream uncovered on High in 15-second intervals until chips can be stirred smooth. Refrigerate until cooled and mixture starts to set, about 10 minutes.
  • For each sandwich cookie, spread about 1/2 teaspoon filling on bottom of 1 cookie. Press bottom of second cookie over filling. Let stand until set.

100g pitted medjool dates
100g pecan nuts
50g pumpkin seeds
50g rolled oats
4 tbsp cacao powder or unsweetened cocoa
2 heaped tbsp almond butter
zest and juice 1 orange

Steps:

  • Place all the ingredients and 3 tbsp orange juice in a food processor. Blitz until chopped and starting to clump together. If it's a bit dry, add a drop more orange juice. Roll the mixture into walnut-sized balls with lightly oiled hands. Pop 2 or 3 into a lunchbox for a snack. Keeps in a sealed container for 2 weeks in the fridge.
