This was an attempt to please a picky eater. I took a few recipes from this site and mixed them all up. She loved it!

- Preheat a waffle iron according to manufacturer's instructions.
- Mix flour, oats, sugar, cocoa powder, baking powder, cinnamon, and salt in a large bowl. Whisk milk, eggs, and butter in another bowl; stir into flour mixture until batter is just combined.
- Pour batter into preheated waffle iron. Cook until golden brown, about 5 minutes per waffle.

- In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

Steps:
- Spray electric waffle iron with cooking spray. Heat iron to medium heat.
- Microwave chocolate and butter in small microwaveable bowl on HIGH on 1 to 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended.
- Combine flour, oats, sugar, baking powder, cinnamon and salt in large bowl. Add milk, sour cream, eggs and 1 Tbsp. maple syrup; mix well. Stir in chocolate mixture.
- Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, lift waffles off grid with fork. Repeat with remaining batter.
- Serve topped with remaining maple syrup and strawberries.

CHOCOLATE WAFFLE

- Preheat waffle iron according to manufacturer's directions.
- In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl beat together the eggs and melted butter and vanilla, and then add the buttermilk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.
- Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
CHOCOLATE OATMEAL

Steps:
- Heat milk and a pinch of salt in a small saucepan over medium heat until begining to simmer.
- Reduce heat and add oats, cocoa and sugar.
- Simmer over low heat, stirring occasionally until thickened.
- If you want your oatmeal thick or watery, this is where you determine the consistency- don't stop until it's pretty much at the consistency you would like.
- Cover and let sit for about 5 minutes (this cooks the oatmeal more thoroughly).
- Remove cover, stir and serve.
- Garnish with chocolate chips, nuts, and/or fruit if desired.

- In a large bowl, mix the first six ingredients. In another bowl, whisk the milk, eggs and butter. Stir into dry ingredients just until moistened. Fold in pecans., Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with syrup.

- Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs and butter until mixture is smooth.
- To make hard sauce: stir together softened butter, confectioners' sugar, vanilla extract and milk. Sauce should be fairly stiff.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with hard sauce.
