PERFECTLY PUFFY CHOCOLATE CHIP COOKIES



Perfectly Puffy Chocolate Chip Cookies image

A perfectly puffy chocolate chip recipe that has been modified to work at high altitude.

Number Of Ingredients 9

8 tablespoons salted butter (one stick)
1/2 cup white sugar
1/4 cup packed light brown sugar
2 teaspoons pure vanilla extract
1 large egg
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon table salt
2/3 cup your favorite chocolate chips (I like semi-sweet)

Steps:

  • Preheat the oven to 350F degrees.
  • In a small bowl, combine flour, baking soda and salt; set aside.
  • In a glass bowl, microwave the butter for about 40 seconds to just barely melt it. It shouldn't be hot - but it should well on it's way to liquid form; remove from microwave.
  • Using a stand mixer, beat the melted butter with both sugars until creamy about 3 minutes. Add the vanilla and the egg; beat on low speed until just incorporated.
  • Add the flour mixture and mix on low speed until a soft dough forms. Stir in the chocolate chips by hand with a large wooden or similar sturdy spoon.
  • Roll the dough into 16 largish balls and divide between two cookie sheets that have been lined with parchment or a silicone baking mat.
  • Bake for 9-11 minutes until the cookies look puffy and just barely golden. Take care not to over bake the cookies as they'll continue to bake as they cool on the pan. Let the cookies cool completely on the baking sheet before removing.
  • Store cookies in an airtight container on the counter or in the fridge- they're my favorite when just chilled! The cookies also freeze beautifully.

1 cup butter, softened
1 cup confectioners' sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
FILLING:
3 ounces cream cheese, softened
1 cup confectioners' sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 cup finely chopped pecans
1/2 cup sweetened shredded coconut
TOPPING:
1/2 cup semisweet chocolate chips
2 tablespoons butter
2 tablespoons water
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. , Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Make a deep indentation in the center of each cookie. Bake at 350° until the edges just start to brown, 10-12 minutes. Remove to wire racks to cool completely. , For the filling, in a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add pecans and coconut. Spoon 1/2 teaspoon into each cookie. , For topping, in a microwave-safe bowl, melt chocolate chips and butter with water; stir until smooth. Stir in sugar. Drizzle over cookies.

CHOCOLATE MOUNTAIN COOKIES

This recipe came from my MIL been making them for years. Two ways to make them with Marshmallows on top (for the kids) and frosting drizzled over. Or no marshmallows (for adults) and just choc. frosting with coconut sprinkled on top. Either way they are like little cakes.

pre-heat oven 350 degrees
have ready 24 marshmallows cut in half

Steps:

  • 1. SIFT TOGETHER: 1 3/4 sifted flour 1 C sugar 1/2 C Cocoa 1/2 teaspoon baking soda 1/2 teaspoon salt ADD: 1/2 C soft shortening 1/2 C evaporated milk 2 Tablespoons water 1 egg 1 teaspoon vanilla extract Beat three minutes w/ electric mixer at low speed or by hand. Stir in 1/2 cup nuts (if desired) (I Never put them in) Drop mixture by teaspoonfuls about 2" apart onto greased cookie sheet.
  • 2. Bake near center of oven 10 min. Cookies will be slightly soft in center. Take from oven and quickly place a marshmallow half, cut-side-down, on top of each hot cookie. Let stand until cool. Spoon 1- 2 teaspoons of choc. frosting over each cookie.
  • 3. FROSTING: Stir over low heat: 1 Cup of semi-sweet chocolate pieces until chocolate melts. Add 1/2 cup evaporated milk. Take off heat and stir in until smooth 2 1/2 cups sifted confectioners sugar. I omit marshmallows and put frosting on top then sprinkle coconut on top. Used to use the marshmallow when my kids were small. Either way they are good.

1 cup water
1/2-1 cup butter
1 teaspoon vanilla
4 cups quick oats
1/2 cup cocoa
1 1/2 cups peanut butter
1 cup coconut

  • Butter 11 x 7 baking pan.
  • Mix first 5 ingredients in saucepan.
  • Bring to a boil.
  • Remove from heat and add remaining ingredients.
  • Pour into buttered pan.
  • Smooth with back of a spoon.
  • Chill for at least 4 hours.
  • Cut into bars.

1-1/4 cups butter, softened
1 cup sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 package (10 ounces) miniature semisweet chocolate chips
1 cup finely chopped walnuts, optional
1 package (10 to 12 ounces) white baking chips
White nonpareils

Steps:

  • Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Add chocolate chips and, if desired, walnuts; mix well. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 325°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-in. triangle-shaped cookie cutter. Place 2 in. apart on ungreased baking sheets. Bake until edges begin to brown, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., Meanwhile, in a microwave, melt white baking chips; stir until smooth. Dip cookie tops in melted chips; sprinkle with nonpareils. Let stand until set.
