In this marvelous make-ahead dessert for two, airy chocolate mousse is layered with crushed store-bought spice cookies and topped with generous dollops of whipped cream.

2 large eggs
1/4 cup sugar
3 ounces semisweet chocolate, finely chopped (2/3 cup)
1 tablespoon Dutch-process cocoa powder
2 teaspoons instant espresso powder
1/4 teaspoon kosher salt
1 tablespoon unsalted butter
1/2 cup heavy cream, plus more, lightly whipped, for serving
4 Belgian spice cookies, such as Lotus Biscoff, lightly crushed, plus more for serving

Steps:

  • Whisk together eggs and sugar in a heatproof bowl set over (but not in) a pot of simmering water until doubled in volume and a thermometer registers 160 degrees (6 to 8 minutes). Remove from heat. Add chocolate, cocoa, espresso powder, and salt. Stir in butter until melted. Let cool slightly.
  • Meanwhile, whip cream to stiff peaks. Stir one-third of whipped cream into chocolate mixture until lightened, then fold in remaining whipped cream. Divide half of mousse between two glasses; sprinkle with crushed cookies. Top with remaining mousse and refrigerate until set, at least 1 hour and up to 1 day. To serve, top with lightly whipped cream and more cookie crumbs.

3 egg yolks
1/2 cup sugar
1/2 cup sifted cocoa
2 tablespoons Kahlua
1 1/2 cups whipping cream (35%)

Steps:

  • In a medium bowl beat with mixer egg yolks and sugar until thick and a pale lemon color.
  • Beat in cocoa.
  • Place bowl over saucepan of gently simmering water.
  • Beat 5-minutes or until mixture darkens and beaters leave a trail.
  • Remove from heat and stir in liqueur, set aside.
  • In a separate bowl whip cream until it holds stiff peaks.
  • Stir 1/2 cup of the whipped cream into cocoa mixture to lighten it.
  • Gently fold remaining whipped cream into cocoa mixture until well combined.
  • Divide among 6 small decorative ramekin dishes.
  • Chill 1-2 hours before serving.

Perfect for summer, these parfaits are light and refreshing. They can make an elegant finish to your meal. Instead of chocolate graham crackers you could use crushed Oreos, but I think the richness of the Oreo overwhelms the light mousse flavor. Cooking time is Chill time. Note: If you chose a smaller glass, such as a champagne glass, you will get 6 servings instead of 4 and will need to adjust the layering amounts accordingly.

1/2 cup 2% low-fat milk, very cold
1/4 cup Kahlua
1 (3 1/8 ounce) envelope instant chocolate mousse mix
1 tablespoon unsweetened cocoa powder
1 1/4 cups finely crushed chocolate graham crackers
1 1/2 cups Cool Whip, thawed
sugar wafers (optional) or Oreo cookies, etc, for garnish (optional)

Steps:

  • In a large mixing bowl, combine the milk, kahlua, mousee, and cocoa. Whip on low speed until well blended. Slowly increase the mixer to high, whipping for 4-5 minutes, or until fluffy.
  • In 4 clear glass dessert bowls (or wine/champagne glasses), layer 1/8 of the mousse, 2-3 tablespoons of graham crumbs, and 3 tablespoons of Cool Whip.
  • If choosing to garnish with cracker crumbs rather than cookies, reserve about 1/4 teaspoon of the cookie crumbs. Repeat the layering, using the remaining ingredients.
  • If garnishing with crumbs, sprinkle the remaining crumbs on top of each serving. If garnishing with cookies, leave the top of the parfait empty for now.
  • Refrigerate for at least 2 hours before serving. Before serving, garnish with cookies if desired.

Found this recipe on the back of a cross word puzzle from a Swedish "ladies magazine". The original recipe calls for Whiskey but I make it with Kahlua. You can use whatever kind of alcohol you like. Chilling time is not included.

2 egg yolks
3 tablespoons sugar
1 teaspoon cocoa powder
1/4 cup Kahlua
3/4 cup whipping cream, stiffly whipped

Steps:

  • Lightly whisk egg yolks and sugar in a glass bowl.
  • Put the bowl in a pan with simmering water.
  • Add cocoa and Kahlua.
  • Keep whisking until it thickens and doubles in size (about 10 minutes).
  • Take the bowl out of the pan and keep whisking until the cream has cooled off (about 5 minutes).
  • Gently mix the whipped cream with the eggcream.
  • Transfer to 4 individual small bowls.
  • Freeze several hours.
  • When serving, garnish with a little melted chocolate, berries or whatever you fancy.

1/2 cup nonfat milk
1 teaspoon instant coffee powder
1/3 cup Kahlua
2 cups fat-free whipped topping, defrosted divided
1/4 cup fat-free whipped topping, defrosted divided
1 cup crushed chocolate graham cracker crumbs (or chocolate wafer cookies)

Steps:

  • You will also need: 8 champagne flutes. In a large, microwave-safe glass bowl, mix the marshmallows with the milk and the coffee powder. Cover the bowl with a glass plate and microwave the mixture for 2 minutes on high or until there are no lumps remaining when it is stirred. Put the bowl in the refrigerator and allow the mixture to cool completely. It could take up to an hour.
  • Remove the marshmallow mixture from the refrigerator and beat in the Kahlua using the whisk attachment of an electric mixer. Then add 1 cup of the whipped topping and whisk it inches Next fold in another cup of the whipped topping using a spatula.
  • Spoon approximately 1 tablespoon of the crumbs into one of the flutes. Then spoon enough pie mixture into the flute so that it is approximately half-full (approximately 1/4 cup). Top that will another tablespoon of crumbs. Then add enough additional pie filling to almost fill the flute.
  • Top it with a dollop of remaining whipped topping and lightly sprinkle the top with additional crumbs.
  • Repeat the procedure until all 8 flutes are filled.
  • Refrigerate them until the filling sets, approximately 2 hours.

4 large egg yolks
3 tablespoons sugar
1/4 cup cold strong coffee
2 tablespoons Kahlua
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips

Steps:

  • In a 4 quart crockpot, stir together the cream, yolks, sugar, coffee, Kahlua and vanilla extract until well blended, but don't whip.
  • Stir in chocolate chips, cook on LOW for 1 hour, 45 minutes or until surface has small bubbles and chocolate is melted.

Had this at a retreat, and had to get the recipe. These are really good! I had to guess on the number of servings, since it really depends on how big the glasses are that you serve them in. Cooking time is approximate and includes time spent cooling in the refrigerator before finishing.

1 cup sour cream

Steps:
