I first made this chocolate fudge cake in my junior high home economics class. I've changed the recipe through the years to make the cake a little richer, and the icing is my own invention. -Katarina Greer, Victoria, British Columbia

1/2 cup butter, softened
1-1/4 cups packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
6 tablespoons baking cocoa
1-1/2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water
1/2 cup milk
FROSTING:
1/2 cup butter, softened
1 cup confectioners' sugar
1/4 cup baking cocoa
1 to 2 tablespoons milk
1 can (16 ounces) vanilla frosting

Steps:

  • Grease a 13x9-in. baking pan; line with parchment. Grease the paper; set aside. In a large bowl, cream butter and brown sugar. Beat in egg and vanilla. Combine the flour, cocoa, cream of tartar, baking soda, baking powder and salt; add to creamed mixture alternately with water and milk, beating well after each addition., Pour into prepared pan. Bake at 350° for 22-27 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a wire rack. Discard parchment. Cool cake completely., For frosting, in a large bowl, beat the butter, confectioners' sugar and cocoa until smooth. Beat in enough milk to achieve spreading consistency. Transfer cake to a serving platter. Spread with chocolate frosting; decorate with vanilla frosting.

30 oz full-fat coconut milk, 2 cans
3 cups dairy-free chocolate chunk
¼ cup coconut oil, melted
2 cups powdered sugar
3 cups whole wheat flour
1 ½ cups dark cocoa powder
1 cup sugar
1 tablespoon baking soda
1 ½ teaspoons baking powder
1 pinch salt
3 cups almond milk
1 cup coconut oil, melted
1 ½ cups applesauce
1 ½ cups maple syrup
1 tablespoon apple cider vinegar
1 tablespoon vanilla extract
berry, of choice, for garnish

Steps:

  • In a microwave-safe measuring cup, or in a small pot on the stove, heat the coconut milk until hot, but not boiling (about 2 minutes in the microwave).
  • Place the dairy-free chocolate in a large bowl and pour the hot coconut milk over it, allowing the milk to melt the chocolate. Mix well to combine.
  • Once the chocolate is melted, add the coconut oil and powdered sugar. Beat with a hand mixer or whisk until smooth.
  • Cover and refrigerate overnight.
  • Preheat the oven to 350°F (180°C). Grease 3 separate 8-inch (20-cm) round cake pans and set aside.
  • In a large bowl, add the whole wheat flour, dark cocoa powder, sugar, baking soda, baking powder, and salt. Whisk to combine and set aside.
  • In a separate large bowl, add the almond milk, coconut oil, applesauce, maple syrup, apple cider vinegar, and vanilla extract. Whisk to combine.
  • In two batches, add the dry mixture to the wet mixture, folding with a spatula until combined. Some clumps are okay.
  • Divide the batter evenly between the 3 pre-greased cake pans and bake for 35-45 minutes, or until a toothpick comes out almost entirely clean. Cool completely.
  • Remove the frosting from the fridge and mix it up well.
  • Choose which cake will be your bottom layer and cover evenly with about 1 cup (115 G) of frosting. Top with the second layer, frosting evenly again. Add the final layer and frost the top and the sides of the cake generously, topping with berries of choice for garnish.

1 cup dutch processed cocoa powder
1 teaspoon salt
1 ½ teaspoons baking soda

1 ½ cups stout
1 tablespoon vanilla extract
1 tablespoon espresso powder
1 cup butter
1 ½ cups sugar
3 eggs
½ cup mayonnaise
4 oz dark chocolate, chopped
1 ½ cups butter, softened

Steps:

  • Grease and line three 8-inch (20 cm) cake tins with parchment paper.
  • In a large bowl, sift together the flour, cocoa powder, salt, baking soda, and baking powder. Set aside.
  • In a large glass measuring cup, combine the stout, vanilla, and espresso powder. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until it is light and fluffy, about 5 minutes, scraping down the sides occasionally to ensure all the ingredients are being evenly creamed together.
  • Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
  • Add the mayonnaise and beat until the mixture is smooth and creamy.
  • Preheat oven to 325˚F (160˚C).
  • Alternate adding the prepared dry and wet ingredients to the batter. Starting with about ⅓ of the dry ingredients, beat until incorporated. Then add ⅓ of the liquid ingredients, mixing until the batter comes together. Continue until all the wet and dry ingredients have been incorporated.
  • Using a rubber scraper, fold the dark chocolate chunks into the batter.
  • Distribute the batter evenly between the 3 prepared cake tins.
  • Bake for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Place the cakes on a cooling rack and leave to cool for about 10-15 minutes, until the outside of the pan is cool enough to touch.
  • Once the cakes have cooled, loosen the edges using a butter knife. Then place a large plate over the tin and invert to release the cake from the pan. Remove the parchment paper from the bottom of the cake and slide the cake back onto the cooling rack to cool completely. Repeat for the remaining two layers.
  • While your cakes are cooling, prepare the buttercream.
  • In a large bowl, beat together the butter and vanilla.
  • Gradually add in the cocoa powder, powdered sugar, and milk, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
  • Frost and decorate to your liking.
  • Slice and serve.

½ package brownie mix
1 cup heavy whipping cream
2 bars dark chocolate, broken into small pieces, we used 72%
3 egg yolks
3 egg whites, beaten
¼ cup granulated sugar
½ bar white chocolate
1 toothpick, or skewer

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a large bowl, combine brownie mix, egg, oil, and water until creamy.
  • Pour the brownie batter into a parchment-lined springform pan.
  • Bake for 25-30 minutes, until center no longer wobbles.
  • Leave the brownie base in the pan to cool completely.
  • Whip the heavy cream until it makes soft peaks. Set aside.
  • Pour water into a saucepan about half-full, and bring to a gentle simmer. Place a heat-safe bowl over the pot.
  • NOTE: The bowl should be bigger than the saucepan so that the bottom of the bowl doesn't come in contact with the simmering water.
  • Add the chocolate pieces to the bowl and stir frequently until smooth. Set aside. (Be careful - the bowl may be hot.)
  • NOTE: make sure the water isn't boiling, or you can burn the chocolate.
  • Separate the eggs and beat the egg whites until blended.
  • In a second heat-safe bowl, whisk the egg yolks until blended.
  • Just like with the chocolate, place the bowl with the egg mixture on top of the gently simmering water, whisking heavily for about 2 minutes until it has a lighter color and a creamy texture. Set aside.
  • Whisk granulated sugar into the egg mixture. Slowly stir in the melted chocolate.
  • Carefully fold in the egg whites and the whipped cream until blended.
  • Spread the chocolate mousse over the cooled brownie base in the springform pan.
  • In a glass bowl, microwave the white chocolate in 15-second increments and stir until melted.
  • Pour the white chocolate into a plastic bag. Cut off the tip of one of the bag's corners.
  • Drizzle white chocolate all over the cake.
  • Using a toothpick or skewer, swirl white chocolate into the mousse in small circular motions to make a marbled pattern.
  • Freeze overnight, or at least 6-8 hours.
  • Enjoy!

150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

24 oz cream cheese
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract
1 lb semi-sweet chocolate chips
2 cups heavy cream

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Prepare the brownie batter and pour into greased springform pan.
  • Bake until set, about 20-25 minutes.
  • Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
  • Remove brownies and lower oven temperature to 325˚F (165˚C).
  • Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
  • Remove cheesecake and refrigerate for 4 hours, or overnight.
  • Heat or microwave whipping cream to just before boiling and pour over chocolate chips. Stir continuously until the chocolate is melted and smooth.
  • Allow the ganache to sit for 10-15 minutes.
  • Transfer cheesecake to a baking pan with a wire rack. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
  • Allow ganache to cool and set for 30 minutes.
  • Enjoy!
