When our kids have friends sleep over, I like to surprise them with this chocolate treat. Our favorite dippers include fruit, marshmallows, cookies and pound cake. —Suzanne McKinley, Lyons, Georgia

1/2 cup half-and-half cream
2 tablespoons honey
9 ounces semisweet chocolate, broken into small pieces
1/4 cup finely chopped pecans
1 teaspoon vanilla extract
Fresh fruit and shortbread cookies

Steps:

  • In a heavy saucepan over low heat, combine cream and honey; heat until warm. Add chocolate; stir until melted. Stir in pecans and vanilla. , Transfer to a fondue pot or a 1-1/2-qt. slow cooker and keep warm. Serve with fruit and cookies.

3/4 pound unsalted butter, room temperature
1 cup sugar
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
1 1/2 cups small diced pecans

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla and almond extracts. In a medium bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/2-inch thick and cut into 2 1/2-inch squares with a plain or fluted cutter (or cut into any shape you like). Place the cookies on an ungreased baking sheet.
  • Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature and serve.

HONEY BUTTERSCOTCH FONDUE WITH SALTED PECAN COOKIES

1 cup pecans
3/4 cup sugar
1 1/4 cups flour
1/2 teaspoon kosher salt
1 stick (8 tablespoons) butter, softened
2 tablespoons cold water
Flaky sea salt
3 cups sugar
1 cup water
1/4 cup honey
2 cups heavy cream
1/2 cup Scotch whisky
2 tablespoons butter
1/2 teaspoon kosher salt
1 teaspoon vanilla extract

Steps:

  • For the shortbread: Preheat the oven to 350 degrees F. Line two baking sheets with parchment.
  • In a food processor, pulse together the pecans and sugar just until sandy--do not overpulse, as you don't want a paste. Add the flour and salt; pulse until combined. Cut butter into small cubes and add to the food processor. Pulse until the mixture resembles coarse crumbs. Add the water and pulse quickly, until a rough dough forms.
  • Turn out onto a lightly floured work surface and press into a cohesive dough. Roll to a 1/4-inch thickness. Using a knife or a rectangular cookie cutter, cut into 1-by-3-inch rectangles, about 24 total; re-roll scraps if necessary.
  • Sprinkle the tops of the cookies lightly with sea salt. Transfer to the prepared baking sheets and refrigerate for 30 minutes.
  • Bake until golden brown at the edges, 14 to 17 minutes.
  • Let the cookies cool to room temperature.
  • For the fondue: Combine the sugar, water and honey in a large saucepan and bring to a boil. Cook until the mixture is a deep-amber caramel color, 8 to 10 minutes.
  • Carefully pour in the cream--stand back as the mixture will bubble and splatter. Once the bubbling subsides, turn off the heat and whisk the caramel until smooth.
  • Whisk in the whiskey, butter, salt and vanilla.
  • Pour the sauce into the fondue pots and keep warm.
  • Serve the fondue with the cookies.

GOOEY CHOCOLATE PECAN SHORTBREAD

4 pounds butter, softened
6 cups granulated sugar
3 tablespoons salt
5 cups all-purpose flour
3 cups chopped pecans
2 bags chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line a 10 by 14 1/2-inch sheet pan (with sides) with parchment or waxed paper.
  • In a stand mixer, or using a hand-held mixer, cream together the butter and sugar. Add the salt and gradually blend in the flour until it forms a dough. Press into a sheet pan, and bake in the center of the oven for 15 minutes. After 15 minutes, rotate the pan and knock it once against the oven rack, to ensure even cooking and a flat surface. Bake 10 to 15 minutes more, until very lightly browned. Immediately sprinkle the pecans and chocolate chips over the shortbread while it's warm. Let cool 10 minutes, then cut into desired size. Let cool completely in the pan, then store in an airtight container.

175g butter , softened
85g golden caster sugar
200g plain flour
2 tbsp cocoa powder
100g chocolate chips , milk or dark

Steps:

  • Mix the butter and sugar together with a wooden spoon. Stir in the flour and cocoa, followed by the chocolate chips - you'll probably need to mix it together with your hands at this stage. Halve the dough and roll each piece into a log about 5cm thick. Wrap in cling film and chill for 1 hr or for several days. Can be frozen for up to 1 month.
  • Heat oven to 180C/160C fan/gas 4. Slice logs into 1cm-thick rounds, transfer to a baking tray lined with baking parchment and bake for 10-12 mins. Cool on the tray.
