I thank my mom for stirring my interest in cooking and baking. Of all her treasured recipe cards I have, this is an all-time favorite.

Number Of Ingredients 14

1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1 large egg plus 1 large egg yolk
2 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
TOPPING:
1 large egg white
1 cup semisweet chocolate chips
1/2 cup chopped walnuts
1/3 cup sugar
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream the butter, shortening and sugar until light and fluffy. Beat in egg and yolk. Combine flour, cinnamon, baking powder and salt; gradually add to creamed mixture and mix well. , Spread into a greased 15x10x1-in. baking pan. Beat egg white until foamy; brush over dough. Combine the chocolate chips, nuts, sugar and cinnamon; sprinkle over dough. , Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares.

1 teaspoon baking powder
1 cup sugar
1 tablespoon cinnamon
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup shortening
1 egg, slightly beaten
1 egg, separated
1/3 cup sugar
1 teaspoon cinnamon
6 ounces semi-sweet chocolate chips
1/2 cup pecans, chopped

Steps:

  • Combine first 4 ingredients in a large bowl.
  • Add butter, shortening, egg, and egg yolk, mixing well. Press evenly into a lightly
  • greased 15x10x1-inch jellyroll pan.
  • Beat egg white slightly, and brush over mixture.
  • Combine remaining ingredients; sprinkle over bottom layer.
  • Bake at 350~ for 25 minutes. Cool and cut into bars.

1/2 cup butter
1/2 cup margarine
1 cup sugar
1 egg, separated
2 cups sifted all-purpose flour
1 1/2 tablespoons cinnamon
1 teaspoon salt
1 1/2 cups nuts, chopped (I use almonds)

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a 15 1/2 x 10 1/2 x 1-inch pan.
  • Cream the butter, margarine, and sugar.
  • Add the egg yolk and dry ingredients.
  • Press the batter into prepared pan.
  • Beat the egg white until foamy and spread sparingly over batter.
  • Press on the nuts.
  • Bake at 325 degrees for 30 minutes.
  • Cut into squares.

I LOVE cinnamon, so I will try any recipe with that as an ingredient. I especially love when it is used with an uncommon ingredient so the taste is unexpected. That's definitely the case with these, absolutely delicious and lower in fat and calories!

2 cups flour
3/4 cup light butter, softened
1/3 cup Splenda granular, sugar substitute
3/4 teaspoon baking powder
3/4 teaspoon cinnamon
1 cup semi-sweet chocolate chips
1/4 cup light butter, cut into pieces
1 1/4 cups light brown sugar
3 egg whites
1 teaspoon vanilla
powdered sugar (optional)

Steps:

  • For Cookie Crust: Beat flour, butter, sugar, and cinnamon until crumbly. Press into bottom of ungreased 13x9-inch baking pan. Bake at 350°F for 15-18 minutes.
  • For Chocolate Layer: Melt chips and butter in saucepan over low heat until smooth. Remove from heat and stir in brown sugar, egg whites, and vanilla. Pour over hot crust.
  • Bake at 350°F for 20-25 minutes. Cool and sprinkle with powdered sugar (if you'd like). Cut into bars.

CRUMBLY CINNAMON & CHOCOLATE SQUARES



Crumbly Cinnamon & Chocolate Squares image

These are simple squares with a crunchy cinnamon, chocolate and nut topping. You may want to roast your nuts in a frying pan (without oil or butter) before chopping them to enhance their flavour. I couldn't get golden caster sugar and muscovado sugar in Switzerland (recipe source is the English 'Good Food' magazine), so I used normal caster sugar and brown sugar. If you do have access to muscovado sugar, please use it. I loooooooove muscovado sugar and will check if there is a supplier in Switzerland. However, normal supermarkets don't store it :(. The squares can easily be frozen. I like to wrap them individually and take them with me for lunch or break time at work and university.

175 g butter, at room temperature cubed (6oz)
200 g golden caster sugar (8oz)
175 g plain flour (6oz)
3 large eggs
3 tablespoons milk
1 teaspoon baking powder
100 g dark chocolate, roughly chopped (4oz)
1 teaspoon ground cinnamon
100 g light muscovado sugar (4oz)
85 g mixed nuts, roughly chopped (3oz)

Steps:

  • Heat oven to conventional 180°C (350°F) / fan 160°C (320°F) / gas 4. Line the base of a 18x27cm (7x10inches) tray-bake tin with greaseproof paper.
  • Put cake ingredients into a large large mixing bowl, then beat with an electric hand mixer until well-blended and creamy.
  • Tip into cake tin, spread evenly right into the corners, then scatter chocolate on top.
  • Mix the remaining topping ingredients and scatter over the top of the chocolate. Lightly press to compact the mixture, then bake for 40 minutes until risen and firm to the touch.
  • Cool in the tin before cutting into squares.
  • STORING:.
  • It will keep for four days in a tin or wrapped in foil.
  • It may also be frozen. I freeze them individually (wrapped in foil) and take one out of the freezer in the morning for lunch or break at university or work. No need to defrost the night before.
