I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
  • Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat together margarine and sugars until creamy. Add eggs, milk and vanilla; beat well. Add combined flour, baking soda and salt; mix well. Stir in oats, chocolate chips and nuts; mix well.
  • Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 9-10 minutes. Cool for 1 minute on cookie sheet; remove to wire rack.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled (old-fashioned) oats
1/2 cup coarsely chopped pecans
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/4 cup maple syrup
1/2 teaspoon vanilla extract
3/4 cup semisweet chocolate chips

Steps:

  • Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
  • In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.
  • Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.

On a flight to Hawaii, they served minty oatmeal cookies. I'm not a big chocolate fan, but I love oatmeal cookies, so I had to come home and try some for myself. I think they turned out well on the first try, but I would love to hear what others think. Just make sure your friends and family know there is mint in them or they will get something other than what they expect and they may be disappointed.

1 3/4 cups flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter or 1 cup margarine, softened
1 1/2 cups brown sugar
1/4 cup sugar
2 large eggs
2 1/2 teaspoons vanilla
2 1/2 teaspoons peppermint extract
1 1/2 cups semisweet chocolate morsels or 1 1/2 cups chopped semisweet chocolate
3 1/2 cups old fashioned oats

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together flour baking soda, baking powder, and salt.
  • Set aside.
  • Beat together butter, sugars, and eggs until well blended.
  • Add vanilla and peppermint.
  • Stir the flour mixture into the butter mixture until smooth.
  • Stir in chocolate and oats.
  • Drop the dough by heaping teaspoonfuls (or tablespoonfuls for bigger cookies) onto greased cookie sheets spacing evenly.

1 t. salt
1 t. baking soda
1/2 lb. butter (2 sticks) at room temp.
2 eggs
1 cup brown sugar
1 t. vanilla
1/2 t. water
2 c. chocolate chips (1 large package)
1 c. old-fashioned oats

Steps:

  • • Set out your butter before you start making the cookies so it has a chance to warm up and soften. • Preheat oven to 375 degrees. • Measure flour, salt and baking soda in a small bowl, whisk and set aside. - . In a mixer blend butter and sugars on medium speed for 2-3-minutes till light and fluffy. • Add eggs, vanilla and water and mix till blended well being sure to scrap the sides of the bowl. • Add dry ingredients and beat slowly till just combined. • Add chocolate chips and oatmeal and fold in slowly till just combined. Do not overstir. • Drop by scoopful on cookies sheet. (if it is a warm day you can pop the cookie sheet in the refrigerator for a few minutes to keep cookies from spreading out too much). • Bake for 8-10 minutes at 375 degrees. • Allow cookies to cool for a few minutes before transferring them to a cooling rack.
