Mini chocolate chips are a sweet contrast to the tangy sour cream in a luscious yellow cake.

1/2 box Betty Crocker™ Super Moist™ yellow cake mix (about 1 2/3 cups)
1/3 cup water
1/4 cup sour cream
3 tablespoons butter or margarine, melted
1 egg
1 1/4 cups miniature semisweet chocolate chips
1/2 teaspoon vegetable oil

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom and sides of 9- or 8-inch square pan with baking spray with flour.
  • In large bowl, beat cake mix, water, sour cream, butter and egg with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in 1/2 cup of the chocolate chips. Spread in pan.
  • Bake 9-inch pan 22 to 28 minutes, 8-inch pan 27 to 33 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small microwavable bowl, microwave 1/2 cup of the chocolate chips and the oil uncovered on High 45 seconds, stirring every 15 seconds, until melted. Place in small resealable food-storage plastic bag; cut off tiny corner of bag. Drizzle over top of cake. Sprinkle with remaining 1/4 cup chocolate chips. Store loosely covered.

My mom has used this recipe for 40 years now and it is the best chocolate chip cookie recipe I have ever had. The cookie is crisp around the edges and yet chewy at the same time. I will occasionally omit the nuts due to food allergies for those I'm feeding. I get alot of people questioning how all my cookies are the same size, I'm old school and will still use a teaspoon or tablespoon and my fingers to slide the cookie dough off the spoon. No need for fancy ice cream scoops if you don't want to. :) This will surely become a favorite of yours once you give it a try....

2/3 cup shortening
2/3 cup butter or 2/3 cup margarine, softened
1 cup granulated sugar
1 cup brown sugar (packed)
2 eggs
2 teaspoons vanilla
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (walnuts or pecans recommended)
1 (12 ounce) package semi-sweet chocolate chips

Steps:

  • Heat oven to 375 degrees.
  • Mix thorougly shortening, butter, sugars, eggs, and vanilla.
  • Stir in remaining ingredients.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.
  • Bake 8 to 10 minutes or until light brown.
  • Cool slightly before removing from baking sheet.
  • *If using self-rising flour, omit baking soda and salt.

1 box Betty Crocker™ Super Moist™ white cake mix
1 1/4 cups milk
1/3 cup butter, melted
3 whole eggs
1/2 cup shaved semisweet chocolate baking bar
1 jar (7 oz) Kraft Jet Puffed marshmallow crème (1 1/2 cups)
1 cup butter, softened
1/2 teaspoon vanilla
1 to 2 tablespoons milk
2 1/4 cups powdered sugar
1/4 cup shaved semisweet chocolate baking bar
3 tablespoons shaved semisweet chocolate baking bar

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of 2 (8-inch) round cake pans with cooking spray.
  • In large bowl, beat cake mix, 1 1/4 cups milk, 1/3 cup melted butter and the whole eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in 1/2 cup shaved chocolate until just blended. Divide evenly between pans.
  • Bake 28 to 32 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run metal spatula around edge of pans to loosen cakes. Remove from pans to cooling rack. Cool completely, about 1 hour.
  • In large bowl, beat marshmallow creme, 1 cup softened butter, the vanilla and 1 tablespoon of the milk with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. If necessary, beat in more milk, a few drops at a time, until thin enough to spread. Stir in 1/4 cup shaved chocolate until just blended.
  • Place one cake layer on serving plate. Spread 3/4 cup frosting on top layer; top with second cake layer. Frost side and top of cake with remaining frosting. Sprinkle on top of cake, and press up side of cake the remaining 3 tablespoons shaved chocolate.
  • Store loosely covered in refrigerator.

2 cups all-purpose flour*
1 cup dark brown sugar (packed)
1/2 cup granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup shortening
1-1/4 cups milk
3 eggs (1/2 to 2/3 cup)
1/2 cup semisweet chocolate pieces, finely chopped
1 1/2 teaspoons vanilla
Butterscotch Filling (see recipe below)
1/4 cup finely chopped walnuts
Chocolate Chip Glaze (see recipe below)
Heat oven to 350 degrees F. Grease and flour two round layer pans, 8-inch or 9x1-1/2 inches.
Measure all ingredients except filling, walnuts and glaze into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed, scraping bowl occasionally. Pour into pans.
Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool.
Fill layers with Butterscotch Filling, sprinkling nuts over filling. Spread Chocolate Chip Glaze over top of cake.
*If using self-rising flour, omit baking powder, salt and soda.
BUTTERSCOTCH FILLING
1/2 cup light brown sugar (packed)
1/4 cup cornstarch
1/4 teaspoon salt
1/2 cup water
1 tablespoon butter
Stir together sugar, cornstarch and salt. Stir in water. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Blend in butter. Cool.
CHOCOLATE CHIP GLAZE
1/2 cup semisweet chocolate pieces
2 tablespoons butter
1 tablespoon light corn syrup
Heat all ingredients over low heat, stirring constantly, until chocolate is melted. Cool slightly.

  • Bake and cool cake as directed on box for 13x9-inch pan--except sprinkle chocolate chip mixture on batter in pan before baking.
  • Store tightly covered.

1 cup caramel topping
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • In large bowl, beat cake mix, buttermilk, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Sprinkle with chocolate chips; press gently into batter.
  • Bake 35 to 43 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. Spray meat fork or other long-tined fork with cooking spray. Poke warm cake every inch with fork tines. Pour caramel topping over cake. Cool completely, about 1 hour.
  • In medium microwavable bowl, microwave frosting 15 to 30 seconds; stir until very soft. Spoon frosting into 1-quart resealable food-storage plastic bag. Cut tip off 1 corner of bag. Drizzle frosting across top of cake. For easy cutting, dip knife in hot water. Store covered.
