Not sure exactly where this recipe originated from, my mother, raised is the Mississippi Delta, passed it down to me - It has been a long standing tradition for Holidays, Pot Lucks and just about anytime a dessert was needed. You can make it in 2 large Pies or 22 individual pie shells - (These are a little harder to find these days)

3 cups sugar
6 tablespoons unsweetened cocoa
4 eggs
1/2 cup butter
10 ounces evaporated milk
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Mix Sugar and Cocoa together until blended.
  • add all other ingredients until well blended - Do not over mix.
  • Pour in pie shells.
  • Once cooled top with whip topping and shaved chocolate sprinkles.
  • I make 2 large pies or 22 tarts.

1 1/2 cups sugar
5 tablespoons cocoa powder
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/2 cup evaporated milk
3 large eggs, room temperature
1/3 cup unsalted butter, softened
1 teaspoon vanilla
1 partially 9-inch baked pie crust

Steps:

  • Preheat oven to 325F degrees.
  • Combine sugar, cocoa, flour, and salt.
  • Blend in milk.
  • Beat in eggs 1 at a time.
  • Add butter and vanilla, beat until smooth.
  • Pour into prebaked pie shell.
  • Bake in 325* oven for 55-60 minutes.

1 ½ cups white sugar
3 tablespoons unsweetened cocoa powder
2 eggs
1 (5 ounce) can evaporated milk
¼ cup melted butter
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sugar and cocoa together. Beat the eggs then add to the cocoa mixture. Beat in the milk, butter and vanilla.
  • Pour mixture into 9 inch unbaked pie shell and bake at 350 degrees F (175 degrees C) for 45 minutes or until set. Let cool before slicing.

2 (9 inch) unbaked pie crusts, in glass baking dishes
1 cup butter
6 ounces dark chocolate
3 cups sugar
2 tablespoons flour
6 eggs
2 teaspoons vanilla
12 ounces evaporated milk
whipped cream (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Bake both pie crusts blind for 8 minutes. Remove from oven to rack. Decrease oven temperature to 375 degrees.
  • In large saucepan on low melt butter and chocolate, stirring occasionally. In medium bowl, combine sugar and flour with wire whisk. In another bowl, whisk together eggs, vanilla and evaporated milk. Add a couple of tablespoonfuls of the melted chocolate mixture to the egg mixture and stir.
  • Add both sugar and egg mixtures to pan of melted chocolate. Stir to combine. Increase heat to medium and stir constantly for 10 minutes.
  • Evenly divide filling between the 2 pie pans. Bake for 30 minutes.
  • Makes 2 Pies. (One to share and one to eat?)
  • Serve with whipped cream.

The recipe makes approximately 60 tartlets, so these would be wonderful to serve at luncheons, bridal or baby showers, even large family get-togethers. From Southern Living April 2006.

1 1/2 cups sugar
3 tablespoons unsweetened cocoa
1 1/2 tablespoons cornmeal
1 tablespoon all-purpose flour
2 teaspoons white vinegar
1/2 cup butter, melted
1 dash salt
3 large eggs, lightly beaten
60 frozen miniature phyllo cups, thawed (5 packages)
frozen whipped topping, thawed for garnish

Steps:

  • Combine the sugar, cocoal, cornmeal, flour, vinegar, butter and salt; mix well.
  • Add the eggs; stir to combine.
  • Spoon 1 heaping teaspoon of the chocolate into each phyllo shell.
  • Place on ungreased baking sheets.
  • Bake at 350 degrees for 25 minutes, or until set.
  • Cool completely on wire racks.
  • Garnish with whipped topping.
  • Store in an airtight container for up to three days.

5 ounces evaporated milk
2 ounces unsweetened chocolate
1/4 cup butter or 1/4 cup margarine
2 large eggs
1 1/4 cups sugar
1 teaspoon vanilla extract
12 unbaked 3-inch tart shells (or homemade. I use petitfour's sweet tart dough recipe, posted on this site!)

Steps:

  • Combine first three ingredients in a small saucepan; cook over low heat, stirring frequently, until chocolate and butter melt.
  • Cool slightly.
  • Combine eggs and sugar in a large bowl; add chocolate mixture and vanilla, stirring until blended.
  • Pour into tart shells; place filled pies on a baking sheet.
  • Bake at 350 degrees for 30 minutes or until set.
  • Cool on a wire rack.

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup cold butter, cubed
1/4 cup shortening
3 to 4 tablespoons ice water
FILLING:
2 large eggs, room temperature
1 cup packed brown sugar
1/2 cup sugar
1-1/2 ounces unsweetened chocolate, melted and cooled
2 tablespoons 2% milk
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1/2 cup butter, melted

Steps:

  • Combine flour and salt; cut in butter and shortening until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape dough into a disk. Wrap and refrigerate 1 hour or overnight., On a floured surface, roll dough to fit a 9-in. pie plate. Trim and flute edge. Refrigerate 30 minutes. Preheat oven to 425°. Line unpricked crust with a double thickness of foil. Fill with pie weights. Bake on a lower oven rack until light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes. Cool on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk eggs, sugars, melted chocolate, milk, flour and vanilla. Gradually whisk in butter. Pour into crust. Cover edge with foil to prevent overbrowning., Bake at 325° until a knife inserted in the center comes out clean, 35-40 minutes. Remove foil. Cool on a wire rack. Refrigerate, covered, for 3 hours or until chilled.
