CHOCOLATE CHIP APPLE CAKE
Apples add moistness to the spicy chocolate batter and chocolate chips further enhance the chocolate flavor.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour one 9 or 10 inch tube pan.
- In a large bowl cream the butter or margarine with the sugar. Beat in the eggs then add the water and the vanilla.
- Stir the flour, cocoa, baking soda, ground cinnamon and ground nutmeg together. Beat this mixture into the creamed mixture. Stir in the chopped apples and the semisweet chocolate chips. Pour the batter into the prepared pan.
- Bake at 325 degrees F (165 degrees C) for 1 hour and 15 minutes or until the cake tests done when a toothpick is inserted near the center. Transfer to a rack to cool. Makes about 16 servings.

- Cream together until fluffy the eggs, sugar, butter or margarine, and water.
- In another bowl, sift together the flour, cocoa, baking soda, and spices.
- Add dry ingredients to creamed mixture and mix well.

- Spoon into greased, floured 10 inch bundt or loose bottom tube pan.

- Place pie filling in a blender; cover and process until the apples are in 1/4-in. chunks. Pour into a large bowl; add cake mix and eggs. Beat on medium speed for 5 minutes. APPLE CHOCOLATE CAKE

- Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan and dust all sides with the crushed vanilla wafers; set aside. Sift the flour and baking powder together in a small bowl and set aside.
- Using a mixer fitted with the whisk attachment, whisk the eggs on high speed until pale and very thick, 8 to 10 minutes.
- Meanwhile, melt the butter in a medium saucepan and cook, scraping the sides and bottom of the pan to prevent burning, until the butter browns and smells nutty, 6 to 8 minutes.
- Add 3/4 cup of the granulated sugar to the eggs. Add one-third of the flour mixture, then half of the butter, another third of the flour, the remaining butter and the rest of flour, mixing between additions. Whisk until just barely combined. Using a spatula, gently fold the batter until the ingredients are combined. It is very important not to over-whisk or over-fold the batter or it will lose volume. Pour into the prepared pan.
- In a medium bowl, toss the apples, cinnamon, lemon zest and remaining 2 teaspoons granulated sugar and pour on top of the batter. Sprinkle on the chocolate chips and bake until the cake is golden brown and springs back to the touch, 40 to 50 minutes. Release the pan when cooled and sprinkle the cake with confectioners' sugar.
SUNNY'S EASY CHOCOLATE APPLE PIE CAKE

- For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
- Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
- In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
- Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.
- For the ganache: Pour the chocolate chips into a medium bowl. In a small pot on medium heat, add the heavy cream, rum and a pinch of salt and whisk until warm. Pour over the bowl of chips and allow to sit and soak in for 2 minutes. Whisk to melt the chocolate completely.
- Place the cake on a serving platter, pour the ganache in the center and spread gently outward over the edges. Sprinkle with the pecans and serve.

- Preheat oven 350 degrees, and grease and flour a 10 inch tube pan.
- In a medium bowl whisk the flour, soda, cocoa cinnamon, zest and salt.
- In your mixer bowl cream the butter and sugar at high speed until very very light and fluffy.
- Beat in each egg one at a time, making sure each is blended well.
- Lower the speed on your mixer and add 1/3 of the dry with 1/2 of the applesauce, beat only to combine.
- Add the next third of flour the last of the applesauce, blend and then the last of the flour mixture.
- Remembering to beat only to combine and don't over beat.
- Fold in the raisins and walnuts.
- Pour into prepared pan evenly.
- Bake 1 1/2 hours until it pulls away from side of pan, or tester comes away clean.
- This cake will only rise halfway up the pan.
- Cool in pan 20 minutes.
- Invert and cool completely on wire rack.
- Just a note:.
- Grandma greases the tube pan, places a piece of parchment on bottom then greases and flours it and the sides of the pan. That way it falls out of the pan all the time, and then she runs a knife around the edges, turns it onto the rack and removes the paper.
