CHOCK FULL O' GOODNESS MUFFINS
You'd be surprised at how many yummy things you can fit into a muffin! I modeled this recipe after Panera's (St. Louis Bread Co) "Morning Glory" muffins. A great way to sneak healthy things into your kids and husband!

Steps:
- Preheat oven to 400°F.
- Spray muffin tins (6 jumbo, 12 regular, 24 mini) with baking spray, or grease and flour.
- Combine dry ingredients in large bowl. Combine wet ingredients, and pour into dry ingredients.
- Gently stir and fold, just until all ingredients are incorporated into the batter.
- Fill muffin tins 2/3 full with batter.
- Bake for 16 minutes for jumbo (12 and 10 for regular and mini, respectively.).
- Crack open oven door and turn oven to broil.
- Broil for three minutes or until the tops of the muffins are browned.
- Let tins sit on wire rack for a couple minutes, then flip out muffins and let them cool on rack, or split open and enjoy warm with a gob of butter!
- FOR FREEZING:.
- Put muffins into sandwich or storage bags, according to servings needed. Put those bags into freezer bag and seal tightly. Let thaw overnight or slowly in microwave or oven.

CHOCK FULL OF VEGGIES MEATLOAF
This is a filling and flavorful low calorie meatloaf that is made more healthy with the addition of veggies. Serve with riced potatoes and a salad for a nutritious meal.

Steps:
- Saute onions, peppers, garlic, carrots and celery and beef bullion packet in a pan sprayed with non stick spray until soft.
- Mix sauted vegetables with remaining ingredients. Shape into a loaf and bake 40-60 minutes in a 350 degree oven in a pan sprayed with non-stick spray. Serve topped with a dash of chili sauce or catsup.

MORNING GLORY KITCHEN SINK MUFFINS
A little different from the other Morning Glory Muffins because it uses apple butter. This is a weight watchers recipe. Each muffin is 3 points.

Steps:
- Preheat oven to 350.
- Combine flour, brown sugar, baking soda, cinnamon, and salt in large bowl.
- Stir in carrot and next 5 ingredients. Make a well in center of mixture.
- Combine oil and next 4 ingredients; stir with a whisk.
- Add oil mixture to flour mixture, stirring just until moist.
- Spoon batter evenly into muffin cups coated with cooking spray.
- Bake at 350 for 25 - 30 minutes or until muffins spring back when touched lightly in center.
- Remove muffins from pan immediately; let cool on a wire rack.
