1 (10 inch) deep dish pie shells
1 pint ricotta cheese
4 ounces cream cheese
2 eggs
1/4 cup light cream
1/4 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 cup honey
6 bananas

Steps:

  • Brown pie shell to lightly brown. Remove from oven.
  • Puree 3 bananas and place in mixing bowl with the ricotta cheese, cream cheese, eggs, light cream, ground cinnamon, ginger, and honey. Mix and blend well.
  • Slice 3 bananas into thin rounds and place slices into pie crust and pour banana and cheese filling over sliced bananas.
  • Preheat oven to 350. Bake for 45 minutes or until browned. Shut oven off, leave pie in oven with door open for 5 to 10 minutes to settle.
  • Serve warm or chilled with whipped cream topping.
  • Variation: Add 1/2 cup chopped walnuts to top of pie before baking. Press walnuts into pie. Bake till golden.

1 pkg 6 serving jell-o brand vanilla flavor instant pudding and pie filling
2 1/4 c milk
1 baked 9-inch pie shell, cooled
2 chiquita bananas
1/2 c prepared dream whip whipped topping

Steps:

  • 1. Prepare pie filling mix with 2 1/4c milk as directed on package for pie. Measure 1 cup filling; set aside. Pour a thin layer of the remaining filling into pie shell. Set aside half of 1 banana. Slice 1 1/2 bananas and arrange slices on filling in shell. Top with remaining filling. Fold whipped topping into measured filling; spead carefully over filling in shell. Chill 3 hours. Garnish with additional whipped topping and reserved banana sliced.

1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 cup mashed ripe bananas (2 to 3 medium)
1 teaspoon lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
STRAWBERRY TOPPING:
2 tablespoons sugar
1 teaspoon cornstarch
1-1/4 cups sliced fresh strawberries
5 drops red food coloring, optional

Steps:

  • In a large bowl, beat cream cheese and sugar until smooth. Combine bananas and lemon juice; stir into cream cheese mixture. Fold in whipped topping. Pour into crust. Cover and refrigerate for 1 hour or until set. , In a large saucepan, combine sugar and cornstarch. Stir in strawberries and food coloring if desired. Let stand for 5 minutes. Bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Cool. Drizzle some over pie. Cut into wedges; serve with remaining topping.

  • For the pie dough, sift the wheat flour on a clean work surface. Make a well in the middle add the cubed cold butter and rub the flour and butter between your fingers to incorporate. Add the water, knead everything in a ball and then flaten it into a disc. Wrap in cling film and refrigerate for 30min.
  • Scatter some flour on your work surface and roll out the dough to fit and line your pie mold. Blind bake, with parchment with some dry beans for 15min at 350ºF/180ºC. Remove the parchment and bake for another 5minutes. Remove and set aside.
  • Melt the white chocolate in bain marie. Brush the par-cooked pie crust with some of the white chocolate.
  • In a pot, heat the milk with the 1/4C 2Tbsp (75g) sugar and vanilla extract to a simmer. In a bowl whisk the egg yolks with the cornstarch. Pour some of the hot milk over the eggs and mix. Repeat this 2 times to prevent the eggs form curdling. Pour the mix back in the pot and sowly bring the heat up until the mixture starts to thicken. Remove and let cool slightly. Add the butter and white chocolate and incorporate.
