SPICY CHIPOTLE TURKEY BURGERS
With a chipotle chile pepper, mozzarella cheese and other seasonings, you will absolutely love this spicy, yet flavorful, burger!

- Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
- Cook the hamburgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready. Serve on the toasted buns.

TEX-MEX TURKEY BURGERS WITH CHIPOTLE MAYO
Ground turkey has it rough in the reputation department. It's notoriously dry and flavorless, especially in burger form, and it's usually only preferred to beef when healthiness is a factor. But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

- Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
- Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
- Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
- Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.
CHIPOTLE TURKEY BURGER
I stumbled across this combination when I was trying to do something with ground turkey my DH would eat. This was a winner!! He also said that chopped pickled jalapeno slices would also taste just as good. It's pretty easy to throw together and tastes even better on the BBQ grill. The only ingredient that is exact is the turkey since it comes in 3 lb. packages where I buy it. This recipe is very versatile as you could use various cheeses, seasonings, etc.

Steps:
- Put tukey in big bowl.
- Chop chipotle peppers into small pieces and add them to the bowl of turkey.
- Dump in remaining ingredients.
- Here's the sticky part, I usually mix it by hand, but mix it all together however works best for you.
- Score the meat into 6-8 sections.
- Shape into burger patties.
- Cook on hot skillet. (Depending on your preference you could spray with non-stick cooking spray or brush with oil. If you use a grill, spraying before putting on the grill rack seems to work best.).
- Takes about 3 minutes for each side.
- Make sure turkey is well done.
- Serve with your preference of Hamburger buns (or none if low-carbing it) and fixin's. Here's where my husband and I differ. I like a little mayo on my burger. You could also top the burger with another slice of cheese.

- Place turkey, garlic, chipotle, oregano, mustard, chili powder, cumin and cayenne, if using, in a bowl. Using your hands, mix until ingredients are evenly incorporated. Divide mixture into 4 balls of equal size. Form each into a patty 3/4 to 1-inch thick. Handle as little as possible.
- Prepare a grill to medium-high. Brush grill grate with oil.
- Sprinkle both sides of burgers with salt and pepper. Place on grate and grill until well seared on both sides, about 5 minutes for medium-rare or 6 minutes for medium.
- If cooking indoors, place a cast-iron skillet over high heat. Add burgers pan coated with cooking spray. Cook until well seared on both sides, 8 to 10 minutes for medium-rare or 10 to 12 minutes for medium.
- When the burgers are almost done grilling, place a slice of cheese on top of each patty. Also, place the buns, cut sides down, on the grill to toast; remove when lightly browned.
- Serve the grilled patties and toasted buns along with the remaining fixings.

- I recommend assembling the burgers the night before so all the ingredients really get a chance to meld. The extra time spent the night before ensures not only better flavor, but once assembled and placed back in the fridge it ensures the burgers stay together better.

- Use a small, highly accurate thermometer such as a Thermopop to verify the internal temp. Do not trust the look of the patties, you must cook them until they reach 165 to avoid any issues. Just before the patties are removed from the grill, top with the cheese and serve. If you are looking to keep all the carbs out of the dish, skip the bun and eat like a hamburger steak with sautéed onions and mushrooms.
