CHIPOTLE STEAK WITH COLLARD GREENS

1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
3 tablespoons vegetable oil
1 1/4 to 1 1/2 pounds beef tri-tip steak, fat trimmed
1 small onion, diced
2 cloves garlic, thinly sliced
1 pound frozen chopped collard greens, thawed and drained
1/4 cup apple cider vinegar
1/4 cup ketchup
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 tablespoon dijon mustard

Steps:

  • Preheat the oven to 400 degrees F. Mix the chile powder, 1/2 teaspoon salt and 1/4 teaspoon pepper; rub on the steak. Heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon vegetable oil, then add the steak; sear 3 minutes per side. Transfer the skillet to the oven and cook until a meat thermometer inserted sideways into the steak registers 135 degrees F for medium rare, 15 to 20 minutes. Transfer the steak to a cutting board.
  • Meanwhile, heat the remaining 2 tablespoons vegetable oil in a medium skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, 5 minutes. Add the collard greens and 1/2 cup water and cook, stirring occasionally, until warmed through, 10 minutes. Add 1 tablespoon vinegar, and salt and pepper to taste.
  • Whisk the ketchup, the remaining 3 tablespoons vinegar, the honey, Worcestershire sauce, mustard and 1/2 cup water in a bowl. Return the cast-iron skillet to medium-high heat; add the ketchup mixture and cook until thickened, 3 to 5 minutes. Slice the steak against the grain. Serve with the sauce and collard greens.

3/4 cup Spanish olive oil
Juice of 1 lime
3/4 cup parsley leaves, finely chopped
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
3 cloves garlic, finely chopped
1 shallot, minced

5 to 6 ounces skirt steak

1/4 bulb fennel, sliced
1 tomato, diced

Steps:

  • For the chimichurri: In a bowl, mix together the olive oil, lime juice, parsley, basil, oregano, thyme, garlic and shallots. Season with salt and pepper. Divide the chimichurri between two bowls--use half as the marinade and half as the dipping sauce.
  • For the steak: Place the steak in a large baking dish and pour over half of the chimichurri. Turn to coat; cover and marinate in the refrigerator for 2 hours.
  • Preheat a grill to high. Let the steak come to room temperature, then remove it from the marinade and sprinkle with salt and pepper. Grill for 4 to 5 minutes on one side, until browned. Turn, and grill another 4 to 5 minutes for medium-rare. Remove from the grill and let rest for 10 minutes before slicing thinly on the bias.
  • For the vegetables: Bring a small saute pan with salted water to a boil, and blanch green beans. Remove the beans to an ice bath.
  • Coat a medium saute pan with olive oil, and bring to high heat. Add the fennel, and sweat about 5 minutes. Add the garlic, and saute until aromatic. Add tomatoes and green beans, and cook until wilted.
  • Serve the steak and vegetables with the remaining half of the chimichurri sauce on the side.

Brown sugar, salt and pepper make up the super-simple rub that gives this grilled skirt steak its beautiful crust. A succotash-inspired salad of black-eyed peas, grilled corn and ripe tomatoes is the perfect foil.

1/4 cup dark brown sugar
Kosher salt and freshly ground black pepper
1 pound skirt steak, trimmed and cut into 4 portions
2 medium red tomatoes (about 1 pound), cut into 1/2-inch-thick wedges
1/2 cup sour cream
1/4 teaspoon cumin
Zest and juice of 1 lime
2 tablespoons olive oil, plus more for oiling the grill grates
4 ears yellow corn, shucked
1 large red onion (about 8 ounces), sliced into 1/2-inch rounds
One 15-ounce can black-eyed peas, drained and rinsed
1/2 cup roughly chopped fresh parsley or cilantro

Steps:

  • Prepare a grill or large grill pan for medium-high heat. Mix the brown sugar, 1 tablespoon salt and 2 teaspoons pepper together in a small bowl. Rub the mixture into the steaks and set aside for 15 minutes.
  • Put the tomatoes in a large mixing bowl. Sprinkle with salt and pepper and let sit at room temperature while you prepare the rest of the ingredients.
  • Whisk together the sour cream, cumin, lime zest and juice and a pinch of salt and pepper in a small bowl and set aside.
  • Meanwhile, lightly oil the grill grates. Brush the corn and onions liberally with the oil, sprinkle with salt and pepper and put on the grill. Grill the corn until lightly charred, turning the ears occasionally, and the onions until charred and tender, flipping as needed, 6 to 8 minutes for both. Transfer the vegetables to a cutting board to cool slightly.
  • Grill the steaks until crisp, about 4 minutes per side for medium rare. Set aside to rest for 5 minutes.
  • While the steaks rest, cut the corn away from the cobs and quarter the onion rounds. Add the corn, onions, black-eyed peas and half of the parsley to the bowl with the tomatoes and toss gently to combine. Season with salt and pepper.
  • Slice the steaks across the grain and divide among 4 plates. Divide the succotash among the plates, top with a dollop of the reserved sour cream mixture and garnish with the remaining parsley or cilantro. Serve immediately.
